The Best Enchilada Sauce

Four reasons to love this recipe:

  • This sauce is full of authentic Mexican flavor. It comes from a combination of dried spices, which are sautéed in oil to bring out their best, and umami-rich tomato paste.
  • The cinnamon is optional since some people just dont like it in savory applications, but just a pinch adds some lovely warmth and complexity.
  • The final kicker is a tiny splash of vinegar, which really amps up the flavor.
  • Unlike canned enchiladas sauces, this homemade sauce is free of unnecessary processed ingredients and MSG .

I love this sauce and Im confident you will, too, since its gotten rave reviews on my spinach artichoke enchiladas and veggie black bean enchiladas.

How To Roll The Enchiladas In Corn Tortillas

Old El Paso Enchilada Sauce 340g from Ocado

If you’re using a 6-inch corn tortilla, spoon about 1 1/2 tablespoons of the filling across the bottom half of a softened tortilla. Top with about 2 teaspoons of shredded cheese .

Flatten the filling a bit, and close the tortilla by rolling it away from yourself until closed. Place the filled tortilla into the greased pan, seam side down.

Repeat with the remaining tortillas, placing them side by side in the baking dish. Pack them in tight, so they don’t open.

Pour 2 to 3 cups of the remaining enchilada sauce on top of all the enchiladas. Sprinkle with another 3 to 4 ounces of shredded cheese.

How To Make Dairy Free Enchilada Sauce

This enchilada sauce recipe calls for butter, to create the roux that helps thicken the sauce. For a dairy-free version, you can use vegan butter in its place.

You can also just use extra virgin olive oil in place of butter. I don’t recommend using a neutral oil, like canola, since you want a fat that adds some flavor to the sauce.

There’s also optional cream that can be added to the sauce at the end. Just omit that without a replacement.

Homemade Red Enchilada Sauce Ingredients:

To make this easy enchilada sauce recipe, you will need the following ingredients:

  • Oil and flour: These will form the roux to thicken the sauce. Youre welcome to use any type of neutral-flavored oil that you prefer. And while I typically use all-purpose flour, you are welcome to sub in a 1-for-1 GF flour blend instead to make this recipe gluten-free.
  • Chili powder: For all of our international readers, please note that this recipe calls for American-style chili powder, which is actually a blend of various chilis and seasonings, including a typically small percentage of cayenne. I recommend investing in a good-quality brand of chili powder for this recipe, since it is the primary seasoning for this sauce. But keep in mind that chili powder blends vary from brand to brand, so its worth experimenting with a few to find the one that you love best!
  • Garlic powder, ground cumin, dried oregano: These are the other dried seasonings that we will use in the sauce. Feel free to increase the amount of any one of these once you have tasted the sauce, if you would like.
  • Veggie or chicken stock: I also recommend using some good-quality stock in this recipe, which will add a delicious depth of flavor to the sauce.
  • Fine sea salt: And finally, dont forget to season the sauce! I typically add in about 1/2 teaspoon, but the amount needed will likely depend significantly on the brand and saltiness of the stock that you use.

How To Make Gluten Free Enchiladas

About half the time I make this authentic-tasting sauce, I use it to make enchiladas. Once you have the sauce prepared, making the enchiladas is really just about assembly.

Just warm 10 to 12 of your tortillas of choice until they’re soft and pliable, either in the microwave or in a hot, dry cast iron skillet or pan. Grease a 9-inch x 13-inch baking dish, and set it aside.

How Long Does Homemade Enchilada Sauce Keep

Enchilada sauce, like all sauces, will keep as long as its most perishable ingredient. In this recipe, that’s probably the butter and/or the touch of cream.

You can cut the recipe in half, and use it all within a couple of days. I usually make a full recipe and store it in sealed glass jars in the refrigerator for a week.

For longer storage, freeze flat in gallon-sized zip-top bags. Defrost by running the frozen bags under warm water before heating and serving.

A true red enchilada sauce starts with a little puréed tomato and broth thats heavily seasoned with finely chopped garlic, onion, oregano, basil, cumin and lots of ground red ancho powder. Green enchilada sauce is all about roasted green chiles and tomatillos and is generally much hotter.
  • tip 2 Create a toppings buffet for these easy ground beef enchiladas with a bowl of spicy green salsa verde and a smoky tomato salsa, lots of torn fresh cilantro, chopped tomatoes, green onions and chopped avocado.

  • tip 4 Keep this recipe interesting by switching up your protein and making ground chicken or turkey enchiladas instead of beef enchiladas.

How To Make Gluten Free Enchilada Sauce: Ingredients You’ll Need

The sauce begins with a simple gluten free roux, made of melted butter to which you add my simplest flour blend, which is an easy mix of white rice flour, potato starch and tapioca starch/flour. Simply whisk in the flour and cook briefly.

You can also use superfine white rice flour alone to thicken the roux. I recommend against using cornstarch, as sauces thickened with cornstarch tend to separate and leak moisture as they cool.

Next, whisk in the chicken stock, and cook until it thickens. Then add the spices and tomato puree, and stir to combine. That’s all there is to it.

    How To Thicken The Sauce:

Creamy Green Chicken Enchiladas Recipe | Old El Paso

You can make this as thick or thin as you like. I prefer a thin sauce, but if you want to thicken it, add a slurry of flour at the end.

Use a flour-based slurry to thicken it.

Pour one cup of warm water into a measuring cup add 2-3 tablespoons of all-purpose flour whisk until there are no lumps add to sauce and allow to cook for a few minutes.
