How To Make Vegan Alfredo Pasta
To make the recipe, start by gathering all of your ingredients.
In a saucepan, whisk the cornstarch into the milk or creamer until its completely dissolved, with no lumps.
Whisk in the salt and oil or vegan butter spread. If desired, also add 2 tsp minced garlic.
Over low-medium heat, slowly bring this mixture to a boil. Stir occasionally at first, then constantly once it begins to thicken. The whole process should take under 10 minutes.
Once thick, turn off the heat and whisk in the nutritional yeast or vegan Parmesan until it melts. Taste the sauce, and season with salt and pepper as desired.

- Saute Garlic – In a pan with medium heat, pour olive oil, and add garlic. Saute the garlic until it turns aromatic

Blend up the cannellini
To start with, lets make our cannellini cream! It really couldnt be simpler! Its just a tin of cannellini beans, some water, olive oil and some nooch. Throw it all in the blender until its super smooth and hey presto! A cannellini cream for all your pasta sauce needs!
If youre making a different kind of sauce and want to make it creamy you can follow this part of the recipe exactly and add the cannellini cream to that sauce instead. Its very versatile!
Boil the pasta
Im assuming you know how to do this but just make sure your pasta water is nice and salted. The old saying is that your pasta water should be as salty as the mediterranean.
Once boiled, strain out your pasta but reserve the water. Its an essential part of the sauce recipe. I like to keep my pasta from overcooking by plunging it into cold water until Im ready to use it.
Cook the sauce
The sauce itself is deceptively simple! First fry up your onions and garlic before adding some white wine to deglaze the pan. Let the wine reduce and add some miso paste. The miso is a flavour bomb ingredient which will really wake the sauce right up, so dont skip this bit!
Add the pasta
Lets get those nuddy little tubes of pasta DRESSED shall we?? Add a good pinch of salt and ground pepper to the sauce before adding your pasta. Stir it up good to make sure its nicely coated.

How To Cook Dried Pasta Properly
Cooking dried pasta is easy, but its not as simple as just dumping it in pot and waiting 10 minutes. For the best results, keep these tips in mind.
Wait for a rolling boil. If you drop the pasta in before the water gets to a rolling boil, you may find yourself with mushy noodles that stick together.
Dont go easy on the salt. Adding salt to the water is an important step to make sure the pasta itself has flavor. For 4 quarts of water, I recommend 2 tablespoons of Diamond Kosher Salt . If using sea salt, use half the amount. Keep in mind that most of the salt you add remains in the water, so dont worry about adding too much.
Check the pasta early. I like to taste the pasta a minute or two before the stated cook time on the package has elapsed. If your noodles will be cooked again after boiling , youll want to take them out of the water just before they turn al dente.
Save some pasta water for later. For most recipes, its a good idea to save a cup of pasta water before you drain it. Pasta water is high in starch and is a great way to thicken pasta sauces and help them better stick to the noodles.
