How Can You Tell If Hot Sauce Is Bad

Use your senses! Namely, use sight, smell, and taste to tell if your hot sauce is still safe to consume.

Well start with sight. If your older bottle of hot sauce is darker than a fresh bottle, thats completely safe and normal. Chili peppers tend to darken as they age, as does garlic .

What youre looking for to tell if theres spoilage are little black dots that werent there before. Normal black dots could be something as simple as pepper, but if theyre new to you, they might be mold. This mold isnt incredibly bad for you, but you want to take off the lid and dump the bottle. We dont recommend just tossing the bottle in the trash, because mold growth can create gas that can cause the bottle to pop.

If it passes the sight test, give it a sniff. But what are you smelling for? Anything that makes you go blurg. Just trust your instincts here humans evolved to be put off of smells that might make them sick if they consume the source of the stink.

Lastly, take a little taste! At this point, its pretty unlikely that your hot sauce has spoiled, so youre checking to see if you still dig the flavor.

And truthfully, if youre eating hot sauce thats too old, all youre typically consuming is a little bad yeast or mold. You certainly dont WANT to consume that, and it could give you an upset stomach, but its most likely to just cause an imperfect taste with no long-term damage.

Surprisingly, Gaffigan wasn’t choking down milk and wiping sweat from his face like one might expect from a person who admits defeat from a Scoville onslaught. However, he made it as far as his body allowed, and he still left with his dignity intact .

And were back again very quickly with another hot sauce review. Just like my previous review, this sauce came from my monthly subscription box from Heatonist. However, unlike that sauce, this one doesnt come from the Hot Ones show or, at least, the regular YouTube show. No, Hot Ones is getting a TruTV game show and this is one of the sauces featured there. Its apparently a quiz show where everyday people eat ridiculously hot wings and try and answer pop culture questions. Considering how I know nothing about pop culture, I wouldnt do well on that show even without the sauces being involved. But while I cant answer questions about the latest pop idols and movie stars, I can try this sauce. So, lets get into it.

Opening the bottle, Im already worried. Capsaicin has a smell. Im sure of it. It has a very distinct aroma that says, to me, This is hot. And when I open the bottle, I definitely get that smell. Its that smell with a bit of vinegar. And thats as well, since this sauces only ingredients are Carolina Reaper peppers, Scotch Bonnet peppers, vinegar, lime juice, and salt. Theres no disputing where the heat comes from.

To me, it tasted like sour/bitter and then my mouth was on fire. I didnt find it enjoyable at all.

But yeaaaaaah this isnt a sauce for me. There are those out there wholl love it, Im sure, but Im not one of them.

Gordon Ramsay Actually Praised One Of The Sauces

Inviting Gordon Ramsay onto a show highlighting food naturally causes anxiety in everyone involved. Onboarding a man known for completely eviscerating the quality of meals he eats likely spells trouble, but Hot Ones knew they needed to sit down with the sultan of slurs to test his tolerance.

Running a successful kitchen, like Ramsay does, involves meticulous preparation, and boy, he arrives prepared. While most guests settle for the water and milk provided, Ramsay brings doughnuts, lemon and lime juice, and antacid. Hes ready to rumble.

Of course, going an entire episode without some kind insult just isnt Ramsays style. At one point, he claims the wings are getting f***ing smaller and smaller, and one even looks like my grandads f***ing big toe. But, he puts his disdain aside for one sauce in particular: the Hot Ones Los Calientes sauce. About 10 minutes into the interview, he actually praises the sauce, saying, Thats quite nice. I like that. Its quite zesty.

Well done, Hot Ones. You pleased the unpleasable.

It’s hard to know if a show’s concept will work until a team breathes life into it. Countless examples of failed projects exist, proving hours of hard work, sleepless nights, and big dreams don’t always equal success. When Hot Ones gambled on the idea of burning up celebrity mouths while answering questions, they had no clue if they were onto something special or joining the ranks of the failed. That is, until rapper Machine Gun Kelly took the hot seat.

Evans was still new to the Hot Ones experience when the rapper accepted the invite to sit down and chat. The interview flowed smoothly for a while, but at one point, Kelly completely lost his composure, and Evans instantly knew Hot Ones had something special sitting in its lap. Kelly paced around while screaming, sweating profusely, and spitting into garbage cans as Evans grinned with excitement. Hot Ones arrived with a bang, and it was here to stay.

In a world inundated with boring cookie-cutter celebrity interviews, this is good television.

In a culinary world constantly striving to cater to those with allergies and dietary restrictions, a massive push to create “meatless” meat grows larger every day. Once upon a time, eating a burger consisting entirely of vegetables and grains sounded unappealing to even a strict herbivore. For example, Natalie Portman sat down with Evans to promote a new film discussing the alarming state of America’s factory farming, and no way in hell would the vegan eat plump wings of meat. So, Hot Ones happily provided her vegan wings . They did the same thing for Russell Brand and Ricky Gervais, as well. And Evans, although clearly a meat connoisseur, sacrificed his love of animal and ate the vegan wings with them. What a guy.

Use any fresh chili pepper you like or a blend of different peppers . To temper, the heat, feel free to add a similarly colored bell pepper . For example- add a golden bell pepper to habaneros to temper the heat. Or a green bellpeper to serano chilies.

Keep in mind, you will be blending the sauce, so stick with the same color palate to make a vibrant colored sauce. For example, mixing red and green peppers will yeild a brown hot sauce- not the prettiest, but up to you.

Also, keep in mind, fermentation will mellow out the heat of the peppers over time.

I am hearing that frozen peppers can be fermented , but have not personally tried this.

But My Hot Sauce Is Way Too Hot

Dont be too alarmed if your hot sauce tastes overly hot when you first go to store it. A week or two in the fridge and the gradual slow fermenting will mellow out the heat substantially! Its actually quite surprising. Many a time Ive made a hot sauce and tried it thinking there is no way we would be able to eat it because of the heat level. But after a week or two it really does calm down the heat. Fermenting the hot sauce gives it another layer of flavor, adding more and more complexity. This will keep indefinitely in the fridge.

How To Make Fermented Hot Sauce:

Step one: Fill a 2-quart jar with any type of fresh hot chili, onions, garlic and thinly sliced carrot. You can use bell peppers to temper the hot chilis if you want a milder version. Just stick with the same color palette so your fermented hot sauce stays colorful and vibrant.

In this recipe, I used Padrone Peppers, a Spanish variety that had turned red, which I found at our farmers market. But feel free to use any kind you want or a blend. Youll need about 1 pound in total.

Step two: Make a saltwater brine, using 1 1/4 teaspoons fine sea salt, per cup of warm water.

You Better Believe There’s No Easy Way To Eat The Wings

When faced with a near-impossible task, human nature tells us to find the easiest approach. Many times, some kind of shortcut or wiggle room presents itself, allowing for an easier experience. Unfortunately, for Evans’ guests, Hot Ones is well aware of this urge, so they make sure the word “easy” doesn’t exist in the show’s vocabulary.

When dressing the wings, 20 plastic bowls are filled with the sauces . Each wing takes a full-force bath in its sauce, ensuring every millimeter of meat wears it proudly. Plus, the last wing always receives an extra dash, known intimidatingly as “The Last Dab.” Staring anxiously at each wing, the natural tendency is to seek out an area less coated than the rest, but after a few seconds of inspection, the truth hits: There’s no hope, plain and simple.

Evans also admits the crew ignores blatant warnings on the bottles such as, “Just one drop!” or “Dilute with water.” Those who dare to dabble better just put their adult pants on and leap off the cliff. At the bottom of that cliff lies either spice-laden pride or the Reaper waiting to claim its next victim.
