Serves 6 to 8

1 pound|450 grams elbow macaroni, cooked 2 green bell peppers, thinly sliced 2 red bell peppers, thinly sliced 1 large yellow onion, sliced 2 tablespoons olive oil 1 ½ pounds|680 grams sirloin steak, thinly sliced

for the flourless cheese sauce: 2 cups|500 ml whole milk 8 ounces|225 grams cream cheese, cut into 1-inch cubes 3 tablespoons unsalted butter 12 ounces|340 grams shredded provolone

DIRECTIONS

  • Sauté the peppers and onion with the olive oil over medium heat for 10 to 12 minutes, until caramelized. Add the steak and cook for like 5 minutes.
  • Make the flourless cheese sauce: Warm ya milk in a saucepan over medium heat, then add the cream cheese cubes and whisk till smooth. Next, add the butter, salt, and garlic powder and put it on low to medium heat. Once that mixture comes to a simmer, drop that heat back to low and add in ya grated cheese. Let that shit sit about 3 to 5 minutes until its slightly melted and whisk like crazy until its smooth, or just get yourself a stick blender. Cook until the mixture is a thick sauce. Make sure you keep that heat on low, cuz if you turn the heat up too high, itll fuck up your cheese. You dont want that, cuz. Stir in the macaroni and fold in the sliced steak mixture.     What Goes Into A Great Cheesesteak

    A friend of mine recently traveled to Philadelphia and asked everyone from the local butcher to cab drivers and a few soccer moms what’s the first thing they look for in this classic sandwich.

    The answer was almost unanimous.

    Soft hoagie rolls like Philadelphia’s own Amoroso rolls are pretty much the most important ingredient for making a great cheesesteak.

    My personal preference is to use a toasted bun like a hoagie bun where I melt butter on the Blackstone griddle or in a large skillet and let it cook over medium-low heat until it gets slightly golden brown and I know it can stand up to the melted cheese.

    Since an East coast style roll is hard to come by here on the west coast of Montana, I will sometimes substitute ciabatta rolls which hold up well to cheese whiz or sauteed onions.

    The choice of beef that I used for these Cheese Steaks was a Sirloin Tip Roast weighing at about 3 pounds. Some other cuts of beef to choose from when selecting the choice of beef at the meat section are rib eye or top round. I prefer slabs of beef since I like to thinly slice my beef with a mandoline However, steaks can work too.

    Philadelphias beloved cheesesteak is iconic and a cultural obsession. Most argue the cheesesteak is rarely duplicated successfully outside of Philadelphia. What they do agree on is that the cheesesteak consists of a crusty hoagie roll filled with thinly sliced sautéed beef and melted cheese.

    I am not a cheesesteak aficionado but I did create a darn good version here. This starts with sautéed tri-color of bell peppers, onions and mushrooms. Add to that thinly sliced marinated sirlion laid out on a hoagie bun with melted provolone cheese, broiled to perfection and slathered with a garlic cream cheese sauce. Oh yahthis sounds A LOT like game day food to me.

    Tip: Freeze sirloin for 30-45 minutes before slicing. Its much easier to get thin slices this way.

Plus the authentic Pats Philly Cheese Steak is made with it, when you order you say with wiz so if you change the cheese, just be aware it wont taste quite as authentically Pats.

    And I mean look at that drippy melty cheese? A note if you are admiring the photos and notice the beef is slightly thicker. I used a sharp chefs knife and sliced as thinly as I could for my sandwich and left my husbands a little thicker. Then I photograpphed HIS. Totally want to scream even typing that. The only difference was the beef was slightly thinner to begin with.
