Stir fries, noodles, and dumplings are great uses of the Lao Gan Ma products, but the chili crisp trend has inspired a lot of interesting flavor fusions on the internet. From chili oil on pineapple, to broccoli, to fried rice, and even on vanilla ice cream.

Some of the interesting mashups include:

1. Drizzled over Vanilla Ice cream

There has been controversial uproar on the internet over topping an ice cream sundae with spicy chili crisp oil. If you are a fan of sweet and salty dessert combinations, definitely give this a try.

This trend hit the US for good reason. People on TikTok have been adding chili crisp to their McDonalds soft serve cones and McFlurries. The adventurous dessert is an amazing combo thanks to the sweetness of the cold and creamy icecream mixed with the heat and spice of the chili crisp.

2. Whipped Into Mayonnaise

Mix mayonnaise with chili crisp for an interesting twist on a classic condiment. It makes a great addition for a more flavorful chicken, egg, or tuna salad. You can even use it as dip for french fries, chicken, nuggets, or as sandwich spread. It’s also a suitable condiment for those who are on a keto diet.

3. Drizzle It On Noodles

Serve some warm noodles with a generous scoop of chili crisp, tahini, soy sauce, and a dash of Chinese black vinegar. Top your noodles with sliced scallions and some sesame seeds. One of my favorite lazy meals!

The Best Chiles For Chili Crisp And How To Prep Them

Beyond the crunch, I opt for a triple threat of heat from árbol, japones, and Kashmiri red chiles. All three of these varieties pack a serious punch, which silently increases in intensity as the finished condiment lurks in your pantry. If you prefer less of a full-frontal palate attack, substitute them with any other, milder chiles you have around.

Serious Eats / Vicky Wasik

To prep the chiles, I first de-seed themnot to lower the spice level, but to improve the texture of the chili crisp. The seeds in dried chiles tend to be leathery and tough, so its important to remove most of them.

In larger dried chiles, its a quick and simple taskjust snip off the top and shake out the seeds. For smaller chiles, like the árbol and japones chiles in my chili crisp, handling each one individually can be a long and tedious chore. Because a few seeds wont hurt the final condiment, I instead quickly snip the chiles with kitchen shears, or crush them with gloved hands over a wire rack set in a sheet tray. After a quick shake, most of the seeds will sift off, leaving the cleaned chiles behind.

Best Chili Crisp For Crunch

If lots of crunch and a variety of textures is important to you, you need to eat Lao Gan Ma, the most famous chili crisp on the scene.

  • Main ingredients: Soybean oil, chili, onions, fermented soybeans, MSG, salt
  • Spice level: 6/10

While many of the chili crisps I tried contained a lot of oil and required a good mix of the spoon, Lao Gan Ma gets right to the heart of its name: the crisp. Lao Gan Ma has a lot of crunch and not that much oil. Some bits are crispy and sharp, while others require more chew, and that’s what makes it such an enjoyable experience to eat.

Chili is listed as a top ingredient, but don’t worry this chili crisp isn’t that spicy. For me, it’s the onion flavor that really stood out. That’s also why I especially like eating it at breakfast with eggs or congee. The milder spice level means I’m not hitting my stomach first thing in the morning with intense heat.

Another reason to love Lao Gan Ma? It’s affordable and thus easy to stock up on. A 7.41-oz jar only costs $3 to $4.

Our Chili Crisp Testing Methodology

Your spicy condiment-obsessed writer put each of the 11 chili crisp brands to the test four taste tests to be exact:

  • Standalone taste test: I ate a teaspoon of each chili crisp, making sure to get a balanced proportion of crisp to oil. I noted taste, texture, and spice level .
  • Fried egg test: I fried one egg in a tablespoon of each chili crisp and noted how the condiment spread on the pan, any changes to the taste and texture of the crisp, and the overall taste and texture of the egg.
  • Noodle test: I drizzled a tablespoon of each chili crisp over a bowl of stir-fried wheat noodles and noted how it enhanced or detracted from the taste and texture of the noodle dish.
  • Ice cream test: I drizzled half a teaspoon of each chili crisp over a tablespoonful of Haagen-Dazs vanilla bean ice cream. I noted how the spice and flavor mingled with the cold, sweet ice cream.
  • Taste is personal, so I did my best to describe the flavors objectively and rank appropriately. While I tend to favor spicy , slightly sweet, and moderately crunchy chili crisp, we know that there are many other palates out there, which is why we ultimately landed on four categories of the best chili crisp.

Easy to use, deeply rich, and ready to eat. The distinguishing feature of this sauce, uncommon to other chile oils, is the fermented black soybeans. Heavily salted, these little buggers are tasty, umami bombs that add an unexpected creaminess to an otherwise crispy combination of fried garlic and crushed chiles.

Eat this on top of soft tofu as a snack, dressed with cucumbers for an easy banchan-esque side dish , or added to a fried rice dish at the last second.

Better Than Sriracha Yes Its Lao Gan Ma

Several years ago, sriracha sauce burst into the mainstreamdining scene. Previously relegated to pho noodle houses, where it, along withhoisin sauce, were common optional add-ins to the beef broth, this saucesuddenly became the condiment of choice for restaurants far and wide. Wewitnessed it swirled onto fusion sushi rolls, dotted over fresh oyster, andbrightly coiled around lamb chops in upscale eateries. Suddenly, everyone had triedthis sauce, and what had previously only been sold for $2.99 in Asiansupermarkets could be found north of $7 at Dean & DeLuca. Fast-forward to 2016, and once again, the food scene might be ready for a newhot sauce one thats been around for ages, but most likely hasnt beenincorporated into mainstream eating yet.

Lao Gan Ma is our personal favorite hot sauce. It, like sriracha, can be found in mostAsian supermarkets for just a few bucks . The sauce mainlyconsists of dried pepper bits that are mixed in with chili oil. They also havevariations on this basic formula, such as with bean curd or peanuts. Wepersonally love the extra crunch that the peanut chunks give.

The spiciness levelof the sauce is moderate. It will leave heat, but nothing that lingers for morethan a few minutes. Note that as compared with chili peppers like jalapeno orhabanero, Lao Gan Ma has a meaty sweetness that dulls the heat. It is notvinegary, so the spice is not comparable to Cajun sauces likeTabasco or Franks.
