How do I like my steak, you ask ? Rare to medium rare and covered with sauce, is the answer. I LOVE steak. Juicy, a little charred and *just* cooked. For those of you that havent heard of Tabasco sauce, it is a popular brand and type of hot pepper sauce that uses tabasco peppers.

Interestingly, the Tabasco sauce brand does add other varieties in addition to tabasco peppers including habanero and sriracha.

You shove as many tabasco peppers that you can find into a jar, cover them with salt, hot vinegar and blend.

How Can I Make My Hot Sauce Milder

Diluting your finished hot sauce is the best way to tame the heat. If youve made a sauce and find that it is just too hot to consume, try making another batch without the peppers, if possible. Incorporate carrots or tomatoes, then combine the two sauces for a milder overall sauce.

Adding sweetness can help, too. Try honey, agave nectar, or a bit of sugar or brown sugar, if those flavors fit the hot sauce. Youll still get plenty of heat, but the sweetness helps to balance some of it.

Dairy is another way to combat the heat. Of course this will completely change the character of your hot sauce, but consider adding cream to help.

Adding a teaspoon of olive oil will make your homemade hot pepper sauce hotter. Shake your jar well and allow it to sit for a couple of weeks.

But use caution! Adding more than a teaspoon of olive oil will make your vinegar based hot pepper sauce recipe too hot, in our opinion!

It might have to do with chemical properties of capsaicin, a chemical in hot peppers, and how it binds to the fats in olive oil. I am not totally sure.

All we really need to know is to be careful when adding it.

Even though a teaspoon doesnt sound like much, I urge you to start there and wait a couple of weeks. Give your southern pepper sauce a taste and if you can handle more heat or fire, add another teaspoon.

Weve all done it. Bitten off more than we can stomach spice-wise! Hot sauce is nice because you can add more if its not too spicy and use it in small amounts if its a very spicy hot sauce.

But if youre making it yourself then you can start out with a mix of peppers to suit your own heat tolerance!

For a mild-to-medium hot sauce try using: jalapeños, serrano peppers, cherry bomb peppers, banana peppers, or fresno peppers. You can use all of one pepper or do a combination.

For a medium-to-hot hot sauce try using: cayenne peppers, fish peppers, thai chilies, or tabasco peppers. Again you can use all of one kind of pepper or use a combination.

For a hot-to-insane hot sauce try using: habanero, scotch bonnet, or ghost peppers. If using these peppers I would personally mix them with one of the medium-spicy or milder chiles.

This is not a complete list of chilies of course, and the same pepper can produce peppers of wildly varying spice level. Its part of the adventure when it comes to chilies!

Fermenting chili peppers is a popular way to make hot sauce. Fermentation is the natural process of breaking down the peppers with micro-organisms into a more digestible form.

If youve ever enjoyed Tabasco sauce, youve tasted fermented chili peppers. Tabasco starts with tabasco peppers which they crush, mix with salt, and ferment in oak barrels for up to 3 years. The original Tabasco sauce only uses 3 ingredients tabasco peppers, salt, and distilled vinegar.

A number of hot sauce makers use fermented peppers in the form of pepper mash to make their products, and a good pepper mash makes a difference in the resulting flavors.

How Long Will This Sauce Keep

It should keep a few months easily in the fridge, or even longer. Its all about the acidity. To be technical, target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 4.0 or so, to account for errors. If youre concerned, add more vinegar to lower the ph. Sauces made with fermented chili peppers will last even longer.

What Are The Best Peppers To Use For Homemade Hot Sauce

Jalapeños, reapers, Thai chilies, habanero, cayenne, ghost peppers, serranos, OH MY. Its easy to get lost in the world of chile peppers! Which hot peppers you use really depends on your personal heat tolerance, the flavor profile youre looking for, whats available nearby, and pepper color. Yup, color! Feel free to mix and match different types of peppers to get the flavors and heat levels you desire, but make sure you stick to the same color family. Why? Well, if not, youre going to end up with a brown hot saucewhich, trust me, doesnt look so appetizing when drizzled on your food. The two hot sauces in the photos here were made with these mixes:

  • Red Medium Hot Sauce: Red bell peppers, red cayenne peppers, and red jalapeño peppers
  • Green Mild Hot Sauce: Green bell peppers, green jalapeños, and poblanos

Whatever you choose, just remember that you can always add more spice in, but you can never take it out once its been blended. I tend to like a more mild hot sauce, so I start with a 3:1 ratio of sweet peppers to hot peppers. When using a milder hot pepper, like jalapeño, I cheat to more like 2:1 or 1:1. Some folks use nothing but hot peppersso it really is up to you to pick your poison here. Remember: you can always have an extra super spicy pepper nearby to drop into the blender if you want to up the ante. I recommend checking out a Scoville scale and making your plan based on that.

Traditional Trinidadian Sauce includes an ingredient Shado Beni Ive never found this in my green grocer. But, Ive heard its a herb that tastes like cilantro so in this recipe, Ive swapped out shado beni with Cilantro

Trinidadian Pepper Sauce Ingredients

  • 2 Cups Yellow Scotch Bonnet Peppers
  • 20 Garlic Cloves Minced
  • Add all the ingredients to a blender and blend till smooth.
  • Bottle immediately.
  • Because of the vinegar, this pepper sauce will keep for several months.

Some Recipes Notes And Information On Yields

My included recipe yields 5 ounces of strained sauce, which is the size of a typical hot sauce bottle. To make enough strained cayenne pepper sauce to fill a 5 ounce bottle, youll need to start with 10 ounces of cayenne peppers, 6 garlic cloves, and 1/2 cup of vinegar. Plus some salt.

This is approximate, but should get you quite close. And note again that this is STRAINED. Unstrained, the above measurements will yield you about 1-1/3 cups of cayenne pepper sauce.

Straining definitely thins out the sauce, though you can also thin it and/or stretch the sauce out by adding more vinegar or water, or perhaps another liquid, such as lime juice or beer. Consider the flavor possibilities.

Just be sure to weigh out your peppers first based on how much youre looking to make.

With this simple recipe, you can make hot sauce as hot or as mild as you like. If you are a hot sauce lover, you need this in your life.

Makes 2 1/2 cups sauce. Prep time does not include 1 to 7 days resting time.

Fresh Chiles, Such As Jalapeno, Serrano, Fresno, Poblano, Habanero, Or A Mix

Distilled White Vinegar

Pulse chiles, garlic, onions and kosher salt in a food processor until you have a rough puree. Transfer to a 1-quart glass gar, loosely cover and let stand at room temperature overnight. Add vinegar, stir and loosely cover. Let stand at room temperature for 1 to 7 days. The longer you let it stand, the more the flavor develops. Pour mixture into a food processor or blender and puree until smooth. Store in the refrigerator up to 4 months. Note: Hot sauce may separate. This is normal shake before use.

How To Make It:

Easy &  Healthy Roasted Red Pepper Sauce

Its really as easy as this: Wash the peppers and put them whole in a bottle. Heat white or apple cider vinegar until its just about to the boiling point.

Add the sugar and salt, if desired and stir to dissolve, then pour the vinegar solution over the peppers. If you want to add peppercorns or garlic they can be done before or after the vinegar goes in.

Thats it! Seal the bottle up tight and set it aside for a few days.
