Advocates of the Aardvark say it goes well with anything: burgers, eggs, pizza, etc. Suzanne on Amazon called it “Incredible! Really yummy, smokey, with a hint of citrus flavor.” Made in Portland, Oregon, it’s become nearly as ubiquitous on restaurant tables there as ketchup.

A Lime Lover’s Hot Sauce: Sinclair’s Fatalii Hot Sauce

Heat level: Hot

Flavor: Sinclair’s Fatalii has a strong lime flavor that pairs nicely with citrusy Fatalii peppers. If you’re a fan of lime-flavored tortilla chips, its aroma is quite similar if you’re not, you might want to pass on this bottle. With apple cider vinegar as its first ingredient, it also starts and finishes with a mouth-puckering vinegariness. I’d pair it with creamy or rich foods, like quesadillas, pizza, and macaroni and cheese.

Tabasco is hotter, and tastes different than Franks Red Hot. I find Franks to be much more sour than Tabasco. If youve had buffalo wings before then you may have had Franks as a lot of places just mix Franks with butter. Im selective with what I can put Franks on but Tabasco is pretty much good with everything.

Hot Ones hot sauces are both intriguing and scary. Take a look at just how hot they are.

In Hot Ones, a YouTube series under the account name First We Feast, host Sean Evans sits down with a different celebrity guest in each episode, talking with them about their lives and careers. The catch: as they talk, they eat chicken wings, starting with a slightly tangy sauce and working their way up to the kind of hot sauce that could turn you into a fire-breathing dragon. If the celebrity makes it all the way to the tenth and final sauce, they can promote an upcoming project at the end of the episode.

In season 3, the starter hot sauce was a basic sriracha, which is 2,200 Scovilles, a scale that measures the spiciness of peppers or spicy foods. That was followed by Tabasco Original at 2,500 Scovilles. And the final sauce was Blairs Mega Death at 550,000 Scovilles. But things have been progressing rapidly on the spicy scale, and the show now produces its own branded sauces as well.

If the last sauce didnt get them, this one surely will. With at least almost three times as much heat as Los Calientes, you can almost see the pure fire coming your way given the thickness of the sauce.

The ingredients are simple, including fire roasted habanero, apple cider vinegar, sea salt, distilled water, and olive oil. Its fruity and tangy, but dont let the seemingly harmless ingredients list beyond the pepper fool you – this one will clear your sinuses right up!

A Childhood Favorite Returns: Todd’s Inner Beauty

Heat level: Hot

Flavor: Anyone who’s lived in Cambridge, Massachusetts, in the last several decades is familiar with Inner Beauty, the hot sauce made famous at Chris Schlesinger’s East Coast Grill. His original recipe, which blends mustard with habanero peppers, molasses, Chardonnay wine, honey, and a whole slew of tropical fruit juices, is the kind of thing you’d come up with only in an expanded mental state. Throughout my childhood, my dad kept a bottle of Inner Beauty in our fridge door at all times, so I was saddened to hear that the sauce was being discontinued.

Thankfully, Todd’s Salsa, out of Bangor, Maine, decided to revive the sauce a few years back. The first taste I had of that distinctly mustardy, tropical flavor was an immediate punch in the mouth that sent me back in time to those early, formative years of hot sauce tasting. It’s exactly as I remember, and just as glorious. This stuff really shines on grilled seafood, but it’s a great all-purpose sauce you’ll want to keep in your fridge door, just like my dad did.

Flavor: I love this stuff intensely. The main flavor is that of fruity habanero chilies that have been charred to give them a distinct smokiness. Multiple times a month, I bring it to the table and start adding it willy-nilly to my food, before realizing that, once again, I was so looking forward to its flavor that I completely forgot about its not-insignificant heat. My wife, Adri, finds this amusing. I don’t know why I keep doing it over and over, but I don’t carethat flavor is worth it.

My Process To Make Hot Sauce Is Simple

First, you add a bunch of hot peppers, garlic, , salt and water to a food processor and chop it coarsely to make a thick and pulpy salsa.

Transfer the mixture to a clean glass jar, cover it with cheese cloth, and place a rubberband around the lip to hold it in place.

Set aside for 24 hours to kick start the fermentation, then stir in the vinegar and let it ferment for a weekstill covered with cheese cloth.

At that point, transfer the mixture to a blender and blend until fairly smooth.

If you want a thinner hot sauce or your blender cant make the sauce smooth enough, you can strain the sauce through a fine-mesh strainer. For a thin and smooth hot sauce you can run it through a cheesecloth lined strainer to remove all pulp. Make sure to squeeze out all the liquid from the pulp if you use cheesecloth!

If you want to keep the pulp, just add more water to thin it out the desired consistency while youre blending.
