We had a seven plus million dollar build in this 10,000 square foot place that we have at Caesar’s Palace. We had all of the woodwork done, milled and what have you, the cherry wood, every attention to the design decor and materials, furniture, fixtures were as identical as they could be to the New York restaurant, same design team, same thing in Los Angeles.
As simple as the place looks in Los Angeles, there was an awful lot behind it and an awful lot of quality craftsmanship and a lot of attention to detail, even though it looks very simple and basic.

What was the catalyst for opening up a Los Angeles location?
As a little boy, I always had these aspirations of going out west. I was infatuated with California. Most Alfredo sauces are made with only Parmesan cheese, butter, cream, and salt. But we took the liberty of adding in some garlic and extra seasonings to make it that much more delicious. This is the only recipe you will ever need! Heres the breakdown:
- Parmesan cheese: For optimal results, use real Parmigiano-Reggiano right off the block. Avoid those shaker-style containers or tubs filled with pre-shredded cheese. They dont melt properly, making your sauce grainy. And they simply dont taste nearly as good as fresh.
- Butter: Either unsalted or salted work great. If using salted butter, I recommended omitting the additional salt until youve tasted the sauce and then add extra, if necessary.
- Heavy Cream: We use heavy whipping cream for the ultimate indulgence. This will give you the creamiest, richest results. Go big or go home, right? You certainly can use regular heavy cream, though, and it will still be wonderful!
- Garlic: We use a mix of garlic powder and fresh garlic, which we think is perfect. If you want a more subtle garlic flavor, you could cut back on one or the other.
- Seasonings: Salt, pepper, and dried Italian seasoning. This trio of spices really takes the sauce up a level. Parmesan cheese is already salty, so were only adding in a touch more.

- When adding the butter make sure not to burn it. This will greatly affect how this recipe tastes.
- When adding in the heavy cream, slowly stir it in with a whisk. I like to use a whisk rather than a spatula or spoon. It helps incorporate everything a lot better and makes it smoother.
- Parmesan cheese is what brings everything together and makes this so creamy and amazing. For best results use fresh grated Parmesan. Avoid using Parmesan cheese from a can or the powdered stuff. This will make the sauce turn out lumpy and gritty. When adding the cheese into the sauce. Sprinkle it in slowly and whisk the entire time. This will allow the cheese to melt better and avoid getting clumps in the sauce.
- Dont overheat the sauce or allow it to boil. This will cause the oils to separate from the sauce and it will cause your cheese to be clumpy. You can also remove the sauce from heat and add the Parmesan cheese in without heat if you are worried about boiling it.
