    • 3-4 Large Haas Avocados Make sure they are ripe
    • 1 medium red onion

    Also, I had originally planned on adding some fresh chopped cilantro, but the wife picked up parsley instead. Recipe turned out fine without it, but you can make it either way.

    Carefully, cut your avocado crosswise into small cubes.

    Now, using a spoon, you can easily scoop out the cubes from the avocado. This really helps speed up the process and its a snap to do.

    • Cilantro: Like when I make salsa, Im heavy-handed with my cilantro.
    • Lime: Fresh lime juice is best, but Ill be honest with you: Ive swapped it for lemon juice when Im out of lime. Its slightly different from what you might be used to, but still quite delicious.
    • Jalapeño: I love adding diced jalapeño to my guacamole, but since I prefer it on the milder side, I remove all of the seeds and white membrane inside the pepper . If you love spicier guacamole, add the whole pepper seeds and all. Serrano peppers are a good substitute, but remember that they can be hotter than jalapeño peppers.

    • Add garlic for flavor. Some people might say authentic Mexican guacamole doesnt have garlic, I say I dont know whats official but I do know the garlic makes it taste better, so go with it.
    • Rinse red onions to remove harsh bite of the onion. Rick Bayless suggests this, and I think it really does help. If you want a milder onion flavor, go with green onions instead.
    • Dice everything small. Its just better this way, trust me.
    • Make more than you think youll need. Somehow this is a tip for the best guacamole :). No, its just a little word of advice. This goes fast, so double up the batch for a party.

    • Slice through the stem cavity straight down and cut around the pit.

    How To Cut Avocados

    While youve probably seen it done, do not place an avocado in the palm of your hand to cut it. You could end up with whats now called, Avocado Hand.

    Instead, you should place your avocado on a cutting board and cut it in half lengthwise around the pit. Next, rotate it ¼ turn and cut it in half length-wise around the pit again. You should now be left with 4 quarters.

    Choosing a ripe avocado can be a little tricky. If you choose one that is under-ripe, it will be hard and inedible. Insert crying face emoji. If you choose one that is too ripe, it will be mushy and brown. Ick.

    So what do you do?

    Luckily there are ways to find a perfectly ripe avocado.

  • The best way to begin your search for The One is to look for the dark avocados. When you find one, give it a gentle squeeze. Does it give just a little without giving in and feeling hollow? Awesome! This could be the one.
  • Once youre 99% sure youve found a good one, take a look under the stem. If it looks green, youre good to go. If its brown, its past its prime.

    Avocado has a much greater importance to me now. Because we have an avocado plant at home.     • Choose an avocado that, when pressed lightly with your thumb, yields to the pressure ever so slightly. If it feels extremely soft, its too far gone. If it’s rigid and hard, it isnt ripe. Your avocados are guac-ready when you press them and it feels like pressing into a just-ripened yellow banana. Not too hard, but not terribly mushy, either.

    How Do You Choose The Best Avocados For Guacamole

    It seems that picking good avocados is a fine art but its much easier with a few helpful tips:

    • Check the color: Avocados with a darker green or blackish shade are more ripe, vibrantly green avocados are underripe and still need a few days to ripen.
    • Gently press the avocado: hard solid avocados arent ripe yet, mushy avocados are overripe . They should have some give when gently pressed.
    • Avoid those with patchy dark spots on the skin, these can be signs of bruising inside. Also avoid those with random soft spots as that is usually another sign of bruising.
