This easy chicken alfredo is a lifesaver on weeknights. Its quick and clean up is easy, plus it just tastes amazing!

  • Heat chicken and Italian dressing in a large 12 inch skillet over medium high heat . Season chicken with salt and pepper to taste.
  • Cook chicken until browned and just cooked through, about 5 minutes depending on thickness of chicken.
  • Add the box of pasta and the entire jar of alfredo . Fill the empty marinara jar with water and add to the skillet. If using a stockpot, use 2 cups water. Add the salt and pepper to taste and the dried oregano. Lightly stir the mixture to combine.
  • Bring mixture to a boil and then reduce to a simmer. Cover and cook for 15 minutes or until pasta is tender to your liking.
  • Stir in the sun dried tomatoes.
  • Cover with grated parmesan and then shredded mozzarella. No need to stir. Continue to cook for 2-3 more minutes or until cheese is fully melted. You can also broil the entire skillet for about 4 minutes to make the cheese extra melty!

    • The first step to making Alfredo is to warm your butter and cream in a large saucepan over low heat. You will let it simmer for about 2 minutes.
    • Next, you will whisk in your garlic and seasonings. Whisking constantly for about one minute just to let the garlic cook.
    • Lastly, you will add your parmesan cheese and stir just until the cheese has melted and your sauce is smooth.

    Note that it is best to use freshly grated parmesan cheese right off of the block so that your sauce isn’t grainy. I do not recommend using the “shaker” style container grated cheese for this recipe.

    The Parmesan will thicken this sauce up. If it isn’t quite thick enough, allow the sauce to stand for 2-3 minutes before serving.

But it really only takes about 30 minutes, maybe 40 minutes the first time you try it. Or if you have children who like to torment each other in the background, that will definitely slow you down.

    First we need to sear our chicken. Start by slicing your chicken in half horizontally into cutlets, like this:

    Slice the chicken with a sharp knife and avoid sawing, which will shred your chicken not what we want.

    Once you have your chicken sliced into cutlets, pat each one thoroughly with a paper towel to get it completely dry.

    Rub it with salt, pepper, and a bit of smoked paprika. You dont have to add the paprika, but I love the subtle flavor it adds! It also adds nice color to the chicken.
