Copycat Gates Barbecue Sauce

There are many Kansas City barbecue sauces that I enjoy: Rosedale is great when you want something sweeter, Jack Stack is nice when you want something thicker, but Gates is my all-purpose winner. I feel they do a great job of balancing the sweet and vinegar tang and pepperiness, and thats what makes it so great on beef, pork, turkey or chicken. Its even my favorite french fry dipping sauce.

But bottles of barbecue sauce are heavy to ship and to carry in luggage. So when I heard that there was a Gates knockoff recipe floating around online, I jumped on it. Its not a bad sauce, but if youve had Gates and you know what its supposed to taste like, its just spicy ketchup. After a little reverse engineering and the purchase of a bottle of liquid smoke, we think weve hit on the best knockoff this side of the Atlantic.

Ive scaled the recipe back to one quarter of the original. Because Im not starting with ketchup, Ive adjusted the salt, sugar and vinegar, so it wont be 1/4 across the board.

1/4 c brown sugar1 T + 1/4 t salt 1 1/2 t celery seed1 1/2 t cumin1 1/2 t cayenne pepper1 1/2 t garlic powder1 t chili powder1 t black pepper, coarsely ground1/2 c apple cider vinegar1 t liquid smoke1 t Worcestershire sauce2 c tomato sauce

  • Gates Sauce Comes To Cabo

    This recipe for Gates barbecue sauce comes to us from John Padgett who cooked Southern BBQ further south than most people: Cabo San Lucas, Mexico.

    He opened a restaurant there focused on barbecue and worked to develop a range of sauces to compliment the pork.

    He shared this Kansas City-style barbecue sauce recipe with us, along with the story of how it was created:

    Im a big mustard guy, myself, and my second favorite was always pure cider vinegar with red pepper flakes and salt however, when I found a Kansas City recipe with ketchup and cayenne, it won me over.

    In fact, that sauce was one of the favorites in the restaurant.

    When I began researching and testing recipes for the restaurant, I knew we wanted several varieties of sauces.

    Because the concept was Southern BBQ and the customer got to choose what kind of sauce he wanted, we called the restaurant The Naked Pig BBQ: We Leave The Dressing To You.

    I knew all about NC, SC, and Tennessee sauces and dry rubs, but not too much in the way of Kansas City-style sauces. I had always heard that their sauces had a kick to them.

    After testing several, I fell upon one that closely resembles Gates Bar-B-Q, and the rest was history.

    It was the perfect blend, and it went really well with the coleslaw I made, which resembled Memphis style slaw.

    The Gates journey started in 1946 when founder George W. Gates to leave the railroad behind and open a family restaurant. He gathered enough funds to open Gates Ol Kentucky at 19th and Vine.

    This was the original of the restaurant chain known today as Gates Bar-B-Q.

    Apparently, however, Mr. Gates had other ideas when he first purchased the restaurant.

    According to WDAF-TV, George Gates initially bought the restaurant for its liquor license, intending to turn it into a pub. His wife didnt agree with this she was a devout Methodist and disapproved of whiskey so barbecue became the venues main focus.

    Gates sauce recipe was one of the key elements in their success.

    To Make A Smaller Batch Of This Gates Bbq Sauce Recipe

    You might feel that 2-1/2 quarts of barbecue sauce is too much to make at one time, so the following homemade sauce recipe will make about one bottle’s worth.

    • 1/2 teaspoon ground red pepper
    • 1-1/2 teaspoons garlic powder
    • 1/2 cup apple cider vinegar
    • 1/2 teaspoon of liquid smoke, hickory flavored
    • 1/2 teaspoon lemon juice

    For the hot and spicy version, add an extra 3/4 teaspoon of red pepper, and just shy of 1 full tablespoon of ground black pepper. Follow the above directions for combining the ingredients.

    Give this Gates bbq sauce recipe a try, and if it doesn’t quite suit your tastes, make an adjustment here or there to create a sauce that pleases you.

    Make it a little sweeter, or less salty, smokier, or even hotter than fire.

    Homemade Gates Bbq Sauce

    This recipe was shared with viewers of the Martha Stewart show by none other than Mr. Gates himself. It’s probably not an exact duplication of the commercially produced sauce, but it comes pretty darned close.

    INGREDIENTS

    • 2 quarts ketchup
    • 2 cups apple cider vinegar
    • 1-1/2 teaspoons of liquid smoke, hickory flavored
    • 1 teaspoon lemon juice

    Combine the sugar, salt, celery seeds, cumin, red pepper, garlic powder and chili powder in a small bowl.

    Mix the ketchup and remaining ingredients in a large bowl, then stir in the dry ingredients. The sauce can be served warm or at room temperature.

    That’s the recipe provided by Mr. Gates, but I do things a little different. To bring out the flavor of the spices, and to get all that sugar and salt completely dissolved I next pour the sauce into a large pan, and bring it to a simmer over medium heat.

    At that point, I lower the heat and continue simmering the homemade Gates barbecue sauce for 5 minutes, at which point it’s taken off the heat, covered, and cooled until it can be funneled into 5 or 6 cleaned, empty bbq sauce bottles.

    I like the Gates Extra Hot barbecue sauce too, and found that by adding an extra teaspoon of ground red pepper, plus a tablespoon of ground black pepper to the recipe, I get a sauce that is nice and spicy, while still having that great Gates taste.
