- Butter Real, unadulterated butter. Nothing artificial allowed. I like using salted, but you can always add salt to the final dish if you dont have any.
- Cream This recipe calls for heavy cream, but half & half is permissible too.
- Garlic Not the jarred or powdered kind. Get some real garlic and mince it or use a garlic press. I promise, it makes such a difference in the flavor of this sauce!
- Parmesan cheese Its paramount that you dont use pre-grated paremesan for this recipe. If you do, it wont melt into the sauce properly and youll be stuck with a grainy sauce! Just buy a wedge of real parmesan and grate it yourself.
- Cream cheese The addition of cream cheese makes the sauce thicker and richer, without the need for any thickening agents like flour or cornstarch. Plus, its more cheese! You cant go wrong.

What Do I Serve The Alfredo With
While alfredo is typically served with fettuccine noodles, theyre not my fave anyway so I use any other noodle. Spaghetti, penne, rotini, or any other shaped pasta that you can find gluten free will work just fine.
A couple years ago I started making Blackened Chicken Alfredo and its become a real family favorite. Using store-bought blackening seasoning, coat boneless, skinless chicken breasts and saute them for about 15-20 minutes in a little butter and/or olive oil. Slice them into thin strips and add them to a plate of alfredo pasta. You can also add sauteed broccoli and/or spinach.
If youve ever been to the Rainforest Cafe, they have this wonderful dish called Rasta Pasta. Its loaded with chicken strips, broccoli, red peppers, and spinach. The sauce is a mixture of basil pesto and alfredo sauce. If youve never tried this combo, youre in for a treat because its incredible!! Just add equal parts basil pesto and this alfredo sauce to hot pasta, toss, and serve with veggies and meat .

- Dont cook this sauce on high heat medium low is best. And be sure to stir frequently and keep an eye on the sauce until its finished. This is because the cheese proteins clump together when they get too hot, resulting in a grainy sauce thats not smooth. Im guilty of multi-tasking only to turn around and find a boiling cheese sauce NOT cool!
- If you want to make this but dont have any parmesan, not to worry. Its possible to make a cream pasta sauce without parmesan, it will just have a slightly different flavor. You may sub any type of mature cheddar instead . In fact, we do this about half of the time if weve forgotten to pick up parmesan at the store.

Sauces Which Usually Contain Gluten
Unfortunately these sauces pretty much always tend to contain gluten, save for a few specifically gluten free ones.
Again, its always worth checking, but generally these sauces are NOT coeliac safe:
- HP Brown sauce
- Bread sauce
HP Brown Sauce does contain gluten, however the Tesco and Asdas cheap brown sauces are completely safe.
Plus there are some free from brown sauces such as Chippa which you can sometimes find in the free from aisle.
Soy sauce is the one which catches a lot of people out because its not a thick sauce, its easy to assume its fine.
But soy sauce is NOT gluten free unless it is specifically marked as gluten free, which is usually Tamari instead of standard soy sauce.
I personally think gluten free soy sauce tastes the same, but Asian food connoisseurs might disagree youll have to let me know if you think otherwise!
This does mean a lot of Chinese food is not gluten free either, neither is sushi unless you can get it with a gluten free soy sauce instead.
As discussed above, Marmite is unfortunately not gluten free and is labelled as such, but some of the supermarket yeast extracts are, which are basically the same thing!
