Richard Compton and his team at Oxford University, UK, have developed a sensitive technique to measure the levels of capsaicinoids, the substances that make chillies hot, in samples of chilli sauce. They report their findings in the Royal Society of Chemistry journal The Analyst.

Comptons new method unambiguously determines the precise amount of capsaicinoids, and is not only quicker and cheaper than taste-testers but more reliable for purposes of food standards tests could be rapidly carried out on the production line.

They tested a range of chilli sauces, from the mild Tabasco Green Pepper sauce to Mad Dogs Revenge, which sports an extensive health warning and liability disclaimer.

The well-established Scoville method currently the industry standard involves diluting a sample until five trained taste testers cannot detect any heat from the chilli. The number of dilutions is called the Scoville rating the relatively mild Jalapeno ranges from around 2,500-6,000, whereas the hottest chilli in the world, the Moruga Scorpion, has produced peppers testing over 2,000,000.

How To Make Fermented Louisiana Hot Sauce

Ingredients Needed

  • 1 pound red chili peppers , chopped
  • 1 quart unchlorinated water
  • ½-1 cup white wine vinegar to your preference

The Method

First, ferment the chili peppers. Chop the peppers then pack them into a jar, leaving at least 1 inch of head space. The peppers may rise a bit when fermenting.

Next, mix 1 quart unchlorinated water with 3 tablespoons sea salt. Pour just enough brine over the peppers to cover them, pressing them down a bit as you go. It is important to keep the peppers covered with brine to avoid spoilage. Check this daily.

Screw on the lid and set the jar away from direct sunlight to ferment for at least 1 week. Ideal temperatures are between 55-75 degrees F. The most active fermentation period is between 1-2 weeks, so be sure to monitor it during this time. Burp the jars often by unscrewing the lid a bit to let out some of the accumulating gases. After 1-2 weeks, the fermenting activity will diminish and the brine will turn cloudy and taste acidic.

Pour the fermented peppers, including brine, into a pot along with the vinegar. Bring to a quick boil. Reduce heat and simmer for 15 minutes. Alternatively, you can strain out the fermented peppers and discard the brine, then boil the peppers with 1 cup vinegar and 1/2-1 teaspoon salt. Some people prefer to use the brine.

Is Louisiana Hot Sauce Good

First produced in 1928, Louisiana Hot Sauce is not as hot as some may think. Compared to Tabasco, it has a much milder flavor to it. Thats not to say there is no heat because there is!

Heat tends to appear and pop up for a second or so after a quick taste before dissipating again.

However, its initial flavor is pretty strong and can take you by surprise due to its high salt content. There are actually 200 milligrams of salt per teaspoon making it one of the saltiest hot sauces on the market.

If you have a bland meal, there is no doubt that pouring Louisiana hot sauce over it will enhance the overall flavor. Just be warned! If the dish is already salty, it might be a little overkill and unpleasant at first.

This is definitely a medium-spiced hot sauce. The heat comes from the aged peppers in the ingredients. Therefore, the spices and heat are not intense at all.

Many say that this hot sauce has a strong vinegar bite and we would have to agree. In fact, it tends to taste like many other hot sauces that are currently out there meaning it doesnt stand out as much as we would have hoped for.

Jalapeno peppers, on the other hand, have a Scoville heat unit rating ranging from 2,500 to 8,000. The Scoville heat scale is used to determine the spiciness of the alkaloid enzyme that gives chilies their pungency, which is found in chillies.

To Ferment Or Not To Ferment For Making Louisiana Hot Sauce

This is a big factor. Original Louisiana Hot Sauce is made with fermented peppers. Tabasco is famous for this. They ferment their peppers in oak barrels for up to 3 years before mixing the resulting mash with vinegar and salt. I have made Louisiana Hot Sauce with both fermented and fresh chili peppers and can tell you there is a noticeable difference in the final flavor.

Louisiana Hot Sauce made from fermented peppers is mellower and has more fully developed flavor.

That said, Louisiana Hot Sauce made from fresh peppers has a bit more bite to it, and doesnt take nearly as long to make. I encourage you to make it both ways and see which way you prefer.

Because of this, I am including both ways for you to make simple Louisiana Hot Sauce, with fermented peppers and fresh peppers.

Louisiana original hot sauce is not hotter than Franks Red Hot Original. In fact, they both have the same Scoville heat unit rating of 450, which makes both of these hot sauces on the milder side.

In spite of the fact that they both have the same Scoville heat unit, some people feel that Franks red hot is a tad hotter. A subjective take that is understandable. Spicy food often elicits subjective evaluations.
