    How To Avoid A Pellicle

    For this recipe, I used an approximate 4.2% total salt concentration. Im usually able to avoid pellicle growth completely by increasing the salt concentration of the pepper fermentation. Peppers can be fermented with up to 10% salt concentration. Thats way too salty in my opinion. But Ive tried many fermented peppers at 6% total salt concentration and Ive never had pellicle growth with a total salt concentration of 6%. The yeasts simply do not tolerate such high salt concentrations.

    This, of course, is a much saltier pepper ferment. However, the peppers come out more sour too, and this is perfect for hot sauce! I like to blend the higher salt fermented peppers with fresh onion, a few different types of fresh peppers, and apple cider vinegar for a perfect, full-flavored hot sauce!

    Whats pasta sauce without the pasta? Here are some low FODMAP pasta and non-pasta options to consider serving under your pasta sauce:

    Wheat pasta: Yes, you read that correctly! According to Monash University , wheat pasta can be included on the low FODMAP diet in small amounts. The low FODMAP serving for wheat pasta is a ½ cup or 74 grams. Avoid this option if you have celiac disease or another medical condition requiring a wheat-free or gluten-free diet.

    Gluten-free pasta is considered low FODMAP in servings of 1 cup or 145 grams. Not all gluten-free pasta products are created equal. To help keep things low FODMAP, select pasta products made with rice, corn, or quinoa.

    Brown rice pasta is a type of gluten-free pasta. Gluten-free pasta has a recommended low FODMAP serving size of 1 cup or 145 grams. Brown rice pasta is also a source of low FODMAP whole grains. Some brands I enjoy include Tinkyada, Jovial, and Trader Joes.

    Chickpea pasta has been lab-tested for FODMAPs by Monash University. A low FODMAP serving is 1 cup or 100 grams. Chickpea pasta tends to have more protein and fiber compared to other low FODMAP pasta options.

    So this is the part we have the least control over in making a really good Italian pizza: the oven. We can always buy a pizza stone, which helps, but the fact that we cant get an oven temperature of more than 500 degrees F is the biggest problem.     Although research is always evolving on IBS, one of the best ways to manage IBS right now is through dietary measures and identifying food triggers. Researchers have discovered that a low fodmap elimination diet can help identify triggers and alleviate uncomfortable symptoms.

    The diet does not eliminate all carbohydrates. Fermentable carbohydrates are limited. Unfortunately, many fermentable carbohydrates are fruits and veggies. Womp womp. So as much as many fruits and veggies are so nutritious, they dont always jive with those who have IBS. Were talking asparagus , peas , and cauliflower and mushrooms . AND GARLIC and ONIONS! Two of my favorites!

    Research about the low fodmap diet is still evolving, so certain guidelines are still murky.* Currently, experts suggest following a low fodmap diet like this:

    • Elimination phase : eliminate all fermentable carbohydrates for this period of time
    • Reintroduction phase: reintroduce each category of foods separately to determine triggers.

    I followed the elimination phase for a full six weeks, but not being able to have jarred tomato sauce after just two weeks made me so sad

    So I decided to come up with a recipe I could eat without any symptoms of distress

    Lets Have A Look At The Ingredients:

  • Rice: I always use Basmati rice for this recipe. In fact, we use basmati rice for most of the rice dishes. But you can use any rice of your choice. However, I will recommend using long grain rice for this recipe. If you prefer, you can also use brown rice instead of white rice. And if you decide to use brown rice, you may need to add more water.
  • Tomatoes: This is the main ingredient of this recipe. So make sure to use ripe tomatoes to make this rice. I always use plum tomatoes but use the one you prefer or available to you.
  • Other Veggies: I have added chopped cabbage and celery to this rice. The purpose is to add some nutrition and a crunch to Tomato Rice No Onion No Garlic. We can add more veggies to this recipe or exclude them completely. So if you want to add more veggies, I would suggest green peppers, carrots, green beans , and green peas. If you do not have celery available, adding only cabbage is fine as well.
  • Spices: I have used whole spices as well as spice powders. Everything I have used in this recipe is mostly readily available in our pantry. Whenever it comes to using spices, always go with your familys preferences. So you can add more spices or skip on one or two from this recipe.

    I do not like red sauce but pizza is one of my favorite foods. So I came up with this good alternative to traditional red sauce pizza. It still has a light tomato taste.

    1 teaspoon dried basil leaves
    1 teaspoon dried oregano
    1 tablespoon grated Parmesan cheese

Given that most of us dont live in Naples, I will share tips on how you can make the best pizza sauce in your homewithout stressing about following the rules to a T. According to the Associazione Verace Pizza Napoletana, the best pizza sauce recipe includes, but is not limited, to the following:

    • TOMATOES: you can use fresh tomatoes, however, for guaranteed quality and taste, try to get your hands on pomodoro pelato S.Marzano dellAgro Sarnese-Nocerino D.O.P. Dont be scared of that long name, youll recognize them as San Marzano tomatoes . These are simply the cream of the crop of the Greatest Tomatoes from Europe . Of course, you can use any good quality canned tomatoes for great results, including pomodorini like the photo of the can above. Be careful as to what you consider to be quality, so check the GTFE site to make sure.
    • EXTRA VIRGIN OLIVE OIL: be sure to use a top quality oil

    Can I Freeze Homemade Hot Sauce

    Yes. If you happen to make an extra big batch, it is perfectly fine to freeze this hot sauce for up to 3 months. Id suggest using zip-sealed freezer bags for ease of freezing. Lay them flat for space saving. Thaw in the refrigerator and then give it a good stir in case the sauce has separated from freezing. I promise the flavor wont be affected.

    Joyce’s Simple Pizza Sauce

    Simmer a blend of tomato sauce, Italian seasoning, basil, sugar, and minced onion for a yummy sauce for pizza. I can’t have garlic, dairy , or gluten, but I can have pizza with this sauce on a gluten-free pizza crust and by using Gouda goat cheese.

    How Long Will This Sauce Keep

    It should keep a few months easily in the fridge, or even longer. Its all about the acidity. To be technical, target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 3.5 or so, to account for errors. If youre concerned, add more vinegar to lower the ph. Sauces made with fermented chili peppers will last even longer.
