Recently, however, an interloper has crossed the border, and we find ourselves with a fifth sauce: the Alabama White Sauce.

Alabama White is, obviously, a mayonnaise-based sauce that reminds many of a simple coleslaw dressing however, there is no question that Home Teams Alabama White is popular on things other than cabbage, especially with their Smoked Chicken Wings.

What Is Alabama White Sauce And Who Invented It

When thinking of barbeque sauce, its likely the rich brown tomato/ketchup-based condiment used for marinating, basting, dipping, and spreading that comes to mind. However, theres a surprising number of variations on a traditional BBQ sauce. And one of those is mayonnaise-based Alabama white sauce.

The Alabama white BBQ sauce recipe was created by Bob Gibson the executive chef and vice-president of Big Bob Gibson Bar-B-Q restaurant in Decatur, North Alabama. Its been served at the restaurant since its opening in 1925.

This popular Southern sauce was traditionally used for their slow-smoked chicken, cooked for hours in a hickory-fed pit and then dunked whole into the sauce. However, it has since become a popular condiment for brushing, dunking, and dipping all sorts of meats, seafood, veggies, and evenhard-boiled eggs!

With a base of mayonnaise, vinegar, lemon juice, sugar, and salt and pepper , this sauce is creamy, tangy, and slightly sweet. Its also often slightly spicy with the addition of horseradish and/or cayenne pepper. The combination of smooth and tangy makes it ideal for enhancing all sorts of meats and veg.

Bob Gibson popularized the creamy, peppery sauce known nationwide as Alabama white sauce. When he opened his barbecue restaurant in northern Alabama in 1925, the white sauce was on the menu. It quickly proved to be the perfect poultry pairing, with mayo to keep the meat moist and vinegar and spice to balance the fat.

So, this recipe for Alabama white sauce will make about one cup’s worth. But, if you want more, you can easily double, triple, or quadruple the ingredient measurements.

Also, since this is a mayonnaise-based BBQ sauce, it should be stored in the refrigerator immediately after making it. With that said, if you store this Alabama white sauce in an airtight container – or glass jar – it will last in the fridge for about 4 days.

Honestly, I think it actually tastes even better days after making it since the flavors have time to meld together. Then, when you’re ready to use it, give it a good stir to smooth it out, then enjoy.

How Can You Tell If Youre Working With High

When it comes to sauces, its all about the ingredients. A good white sauce will start with real, high-quality mayothat means mayo made with real eggs. Quality Alabama white sauce also will not feature any fake sugars. The best versions will be zero sugar and keto-friendly.

If your white saucetastes like ranch, thats another sign youre not quite on the right track. Ranch is thin and buttermilky, while white sauce should be thicker and richer, with more tang from the vinegar. It will have a bite similar to that of Carolina BBQ sauce.

What Is White Bbq Sauce Made Of

Breaking with the tradition of making barbecue sauce from tomatoes, Alabama white sauce starts with a mayo base. I like mine extra tangy so I like to use plain Greek yogurt instead. The other ingredients are as follows.

  • mayonnaise/Greek yogurt/Miracle Whip
  • Worcestershire sauce

Some recipes like to add a little sugar to balance out the tang but I dont. If you like that little added sweetness feel free to add in some honey, brown sugar, or white sugar. Just be sure to start small.

The spices are the typical ones for bbq like garlic powder, paprika, salt, and pepper. Cayenne is another one that is added but I prefer a few dashes of hot sauce.

The mustard used can be varied as well. Spicy brown is a great one to use. If you are looking for a slightly different profile, try adding Dijon or honey mustard.

If you like it hot, you can add extra hot prepared or grated horseradish but I like to use a prepared horseradish sauce. You can find it near the deli section.
