Nutritional Benefits Of Fresh Basil Pesto Recipe

Pesto sauce is a delicious and nutritious condiment that can add flavor and zing to many dishes. Its made with olive oil, pine nuts, basil, garlic, Parmesan cheese, and sometimes other herbs or spices. The combination of these ingredients makes pesto sauce not only tasty but also good for your health.

The high levels of mono-saturated fats in pesto make it a great choice for those looking to maintain heart health. Olive oil contributes beneficial antioxidants which helps reduce inflammation and minimize the risk of developing chronic illnesses such as diabetes or cancer. Pine nuts are packed with essential minerals like manganese, magnesium, phosphorus, zinc, potassium and iron which help support the bodys metabolism and promote healthy bones.

Choosing An Olive Oil For Aglio E Olio

Before I walk you through making the best aglio e olio , lets talk just a bit more about the olive oil component because its arguably the most important.

Carbonell Extra Virgin Olive Oil has been my go-to EVOO lately for a number of reasons:

Taste. Carbonell Olive Oil is a single cultivar olive oil, meaning its produced using olives from a single region. This gives their olive oils a deliciously fresh and clean, yet complex and balanced flavor.

Im not an olive oil expert by any means, but you can truly taste the difference with just a drop on your finger.

Color. Oh my gosh, THE COLOR! Ive never seen such a vibrant yellow-green color in olive oil. Its positively dazzling!

The Bottle. The bottle is just gorgeous with heavy green glass and beautiful labelling, which incidentally, also provides useful details on the flavor profile and origin.

I would not hesitate to place it on my table when entertaining. Theres absolutely no need to decant it into a decorative olive oil, especially with my very favorite feature the pop-up spout that makes drizzling easy and mess free!

Sustainability & Traceability. Carbonell uses sustainable farming practices that produce world class olive oil, and its production is 100% traceable from growth to table. I havent discussed these attributes on my blog much, but its something Ive been actively seeking out in the products I purchase for our family.

Tips For Making Homemade Garlic Sauce

  • Remove the green sprout from inside the garlic. This step is not necessary, but by doing so, it ensures that you remove the oldest part of the garlic to be left with the freshest whitest part of the garlic. The result in a less bitter sauce, so its worth the step if you have time.
  • Soak the garlic in ice water for a few minutes for a less potent taste. Some readers have mentioned that the taste of the garlic was really strong. One way to reduce that potency is by soaking the garlic with ice water. Make sure to dry them thoroughly though afterwards if you do this.
  • Make sure to alternate the lemon juice with the oil. Ive had the garlic sauce fail on me a couple times when I tried leaving the lemon juice until the end, but the oil becomes too heavy to support the garlic that way. The lemon juice helps keep the consistency light, so I suggest alternating it as soon as the mixture is initially emulsified.
  • Dont use a blender. Its really difficult to get the mixture to emulsify in a standard blender or immersion blender. A blender also doesnt allow the ease of slowly drizzling in the oil while the motor is running over a large surface area. I do not recommend a blender.

When Kim and I first met, we went out to eat a lot. In fact, we made it our goal to try every Italian restaurant in Northwest Arkansas.

Which, back then, wasnt very challenging because there were only about 8 in the whole region.

After we moved to Miami, Fl. we found a small pasta shop in North Miami Beach that made the best roasted garlic and olive oil pasta.

Todays recipe pays homage to that restaurant. Now, I doubt our version will ever be as good as theres, but its close enough to keep us happy.

Cook The Pasta To Al Denteand Dont Forget To Save The Water

There are two keys to the pasta in this recipe. First of all: make sure its al dente. Al dente means to the bite in Italian: its pasta thats cooked until its perfectly tender but with a firm center. Overcooked pasta is not only rubbery and unappetizing: it actually has less nutrients and makes you less full! Then, youll need to make sure to pull out some pasta water before you drain the pot.

    • Check before the package instructions indicate. Most pasta packages have timing that results in overcooked pasta. Start tasting the pasta a few minutes before the package indicates.
    • Taste often! You want to catch it right when theres a small white fleck at the core, or just when it disappears. Pasta can go from al dente to overcooked in a matter of seconds.
    • Save the pasta water for making the sauce. It can be hard to remember, but make sure to save out about ½ cup of starchy pasta water for making the garlic butter sauce! It helps to thicken the sauce and make it glossy.
