What Sauce Makes Meat Tender

In order to make meat tender, you need to use a sauce that will break down the tough proteins in the meat. The most common sauces used for this purpose are acidic sauces, such as vinegar or wine-based sauces. These types of sauces work by breaking down the connective tissues in the meat, making it more tender. Other common tenderizing agents include enzymes, such as papain or bromelain, which can also be found in some fruits and vegetables. You can also use a marinade to tenderize meat before cooking it. Should I Refrigerate Soy Sauce

I spoke with Tracey Brigman, EdD, associate director of the National Center for Home Food Preservation, and she confirmed that, despite what the labels may say, lots of commercially produced soy sauces dont have to be refrigerated, at least not for safety reasons. Many soy sauce producers use sodium benzoate as a preservative. I also spoke with Lillian Lin, co-owner of Yun Hai Taiwanese Pantry, who suggests that soy sauce made without preservatives should be refrigerated after opening to preserve freshness.

But both Brigman and Lin say that refrigerating soy sauce, even versions made with preservatives, will keep it tasting fresher for longer. Our soy sauce brewer, Yu Ding Xing, says that the peak freshness lasts from three to six months after opening the bottle, Lin tells me. She also mentions that the more delicate the flavors, the shorter the shelf life, which is to say that over time, you will start to lose the subtle notes in soy sauce first. So if you recently splurged on a top-shelf bottle of Yamaroku 4-Year Aged Shoyu, you might want to keep it cold to preserve those mellow, oaky and caramel flavors.

Award-winning cookbook author Grace Young tells me that she actually does refrigerate her soy sauce, but says that most Chinese home cooks leave it out at room temperature. Most are using bottles which they use up within six to 12 months. In old China no one had refrigeration so everyone kept their soy sauce at room temperature, she tells me.

What Does Light Soy Sauce Mean

If our Chinese recipes call for soy sauce, regular soy sauce, or light soy sauce, we are always referring to Chinese light soy sauce . It is generally thinner and lighter in color than the familiar Kikkoman you may have seen on dining tables at sushi restaurants and takeout joints.

Here, the distinction of light differentiates light soy from Chinese dark soy, which is darker, thicker, and a little bit sweeter .

But light soy is essentially just the default to use in most situations for Chinese recipes.

On our blog, Light Soy Sauce does NOT refer to low sodium, which can be especially confusing, since some brands like Kikkoman and La Choy have applied the word light or lite to their low sodium products in the past.

Examples of Chinese light soy sauce products on the market are Kimlan Soy Sauce, Pearl River Bridge Superior Light Soy Sauce, Lee Kum Kee Premium Soy Sauce, Haitian Superior Light Soy Sauce, and Wan Ja Shan Soy Sauce. In the photo below, see the bottles for these different brands. Some bottles say light while others dont.

General rule of thumb: if it is a Chinese brand of naturally brewed soy, and it does not say dark on it, it is light soy!

In our house, were partial to Pearl River Bridge brand.

They make a regular Superior Light Soy Sauce as well as a slightly more expensive premium Golden Label light soy.

Youll often see a distinction within brands between a regular and a premium product.

Even though each convenience store differs in size and products on the shelf, the majority of the 7-11s have similar products, and you can be sure to find excellent customer service at every store.

First, I love how all the 7-11 in Taiwan have a wide range of food, which I will talk about later.

Second, each convenience store has a sitting area where you can enjoy your food. Just take a look at the fantastic sitting area in Chiayi. Initially, I wasnt sure if I can eat at the convenience store, but I followed the staircase, and it led me to a beautiful dining room. There is even outdoor seating! I am not sure if it is the biggest 711 in Taiwan, but it has to be one of the nicest!

Third, you can buy other things other than 7 11 food. Some 7-11 in Taiwan have toiletries, umbrellas, alcohol, make-up, and Muji products . Muji is a Japanese brand that manufactures furniture, clothing, toiletries and food and is super popular in Taiwan.

Some of the bigger 7-Elevens have Muji products on the shelf. It really does come in handy if you forget your toiletries at home, or didnt bring enough underwear! Ha! Or if you need a stapler in the middle of the night. Ha!
