A Buffalo-style chicken wing is nothing without the sauce — and who would know that better than the Anchor Bar?

Perhaps that explains why, after 30 years or more in the wing business, the Main Street restaurant a New York Times critic once called “raffish” will finally have its name attached to a wing sauce: Frank & Teressa’s Original Anchor Bar Buffalo Chicken Wing Sauce, to be exact.

But some wing aficionados are going to be confused.

What happened to the Frank’s Original Red Hot Sauce everyone always used on chicken wings? they may wonder.

Allow us to enlighten you. As almost everyone on the planet must know by now, one official story is that the late Teressa Bellissimo made culinary history when she created the wing concept at the Anchor Bar Restaurant. That was way back in the early ’60s.

So what took them so long to sell the sauce?

Maybe it’s indeed a matter of “enough is enough,” says Joanne Will Kaminski, who has been heading up the project. There are a lot of people marketing wing sauces out there.

Or maybe it’s a simple matter of technology and capital instead.

Ms. Will says she has been well aware of “all the wing sauces out there” for years. She is well aware of how inauthentic most of them are, also.

But, she goes on to explain, Frank and Teressa’s son, the late Dom Bellissimo, who inherited the restaurant from his parents, was reluctant to release the recipe for his sauce during his lifetime.

The Anchor Bar in Buffalo, New York is home of the original Anchor Bar Buffalo Sauce recipe. Apparently, the owner son brought friends back to the bar late at night.

He asked his Mom to whip up a late night snack.

So she created the hot wing sauce weve all come to love with the only ingredients she had Franks Red Hot, and butter thats it.

She fried up some chicken wings and tossed them into the original Anchor Bar Buffalo sauce and the rest is history.

Having lived in Western New York for almost 20 years we love our Buffalo wings. The problem is that outside of Western New York few wings live up to our standards. The crispiness, the tang of the sauce, the slight but not overpowering heat is the sign of a good medium wing.

Verdict: We love this wing sauce. The vinegar gave it a nice tang while the heat was not overpowering. You can make it milder or spicier by varying the amount of cayenne, red pepper, and tabasco sauce you use.

I served this with a homemade ranch dressing.

The Incredible Story Of How Buffalo Wings Were Invented

Step into any American bar, and you’ll likely find Buffalo wings on the menu. However, the messy finger food beloved by many is actually a relatively new creation.

Insider Food’s video team went to Buffalo, New York, to find the best wings in town. In the video, Insider producers Herrine Ro and Alana Yzola explained that they were on a mission to find “a crispy wing with a juicy inside and a sauce that is decadent, yet still tangy, yet still has a bite and a kick.”

In Teressas original Buffalo chicken wings recipe she tosses the wings with oil, salt and some flour. I dont think the oil or the salt is necessary at this stage, the flour however is necessary.

How do you get sauce to stick to chicken wings you ask? Toss the chicken wings in flour, shake off excess. The flour adds texture and will absorb the sauce. So now you know your favorite pubs secret to keeping the sauce on the hot wings, instead of dripping off and leaving you with a thinly sauced wing.

You can fry, grill, broil or bake the wings. I have tried all of these ways and I by far prefer baking the wings. Frying gives the wings a really nice crisp texture and are delicious, but sooooooo not worth the effort or the added calories and fat of frying. Very incremental difference to baking. I stay away from broiling if I can because Im notorious for burning things under the broiler, too much on my mind I guess. Grilling is a good alternative, but you should be turning the wings often so it takes more babysitting. Thus, baking is On The Go Bites preference for making hot wings.

Once the wings are cooked toss with the hot sauce. Its best to place a few wings at a time into the sauce so that the wings get a nice, even coating.

Throughout the United States, there are foods so synonymous with a city that they are known by its name: Philly cheesesteaks, Chicago-style pizza, and Memphis barbeque to name three. Buffalo wings are another of these classic foods.

The original Buffalo wings were made at the Anchor Bar on the corner of Main and North Streets in March 1964. As the story goes, a group of customers came into the bar late and wanted something to eat.

With little food left, the cook that evening, Teressa Bellissimo , turned to the chicken wing, which was normally either thrown out or used to flavor stocks. She fried them up and coated them a hot sauce.

The wings were an instant hit, and it didnt take long for people to start coming in and asking for these chicken wings.

Since that time, Buffalo chicken wings have spread around the world and become one of Americas favorite foods.

While Buffalo is filled with many great spots to get great wings , I knew I wanted to get my first Buffalo wings in Buffalo at the place where they were invented.

Pulling into Anchor Bars parking lot, it was clear I wasnt alone in wanting to try the home of the original Buffalo wings. Even on a weeknight, the parking lot was full, and the cars in the lot represented a surprisingly large number of different states and Canadian provinces.

Nevertheless, Id come out to try some authentic Buffalo wings where they were first created, so I headed inside the restaurants.

Anchor Bar Chicken Wings

  • 3/4 cup Franks hot sauce
  • 1/2 cup butter
  • 1 teaspoon Tabasco sauce

Directions:

  • Mix all the sauce ingredients, except the chicken wings, in a small sauce pan over low heat until the butter is completely melted. Taste sauce and adjust spices to your liking.
  • Fry the wings in two batches in a deep fryer set at 375 degrees with vegetable oil for about 12-15 minutes.
  • Drain the wings for a few minutes then put them in a bowl. After all the wings have been fried, pour the sauce over them. Toss to coat the wings with sauce.
  • Serve warm with bleu cheese or ranch dressing as desired.

    Original Anchor Bar Buffalo Wing Sauce

    On football Sunday, Chris had a buddy over so Chris wanted to make wings and drink beer. His friend always loves our wings , so we always make sure to make them when he is over. Usually, we use the Sweet Baby Rays Buffalo Sauce, which is our absolute favorite, but Chris wanted to be adventurous and try a new sauce. We were in the sauce aisle of our local Giant, and we came across the Anchor Bar Buffalo Wing Sauce.

    Chris and I have been to Buffalo, NY before for a baby moon and ate at the Original Anchor Bar. Im so upset though, I never took notes or a picture for a review. I was like 7 months pregnant at the time, so wing reviews werent the first thing on my mind. I do remember that I wasnt 100% impressed with their wings though. They were good, but werent the best. Actually, we like the wings from Gabriels Gate in Buffalo even more. Gabriels Gate was recommended to us by a girl who worked at the front desk at our hotel.

    Now onto the sauce, the sauce had a nice mild buffalo flavor to it. It definitely had the hotness of a mild sauce, which I liked. My only complaint was that the sauce was a little too watery for me, and I felt like it didnt stick to the wings as much as our Sweet Baby Rays does. Im glad we tried a different sauce. This sauce was good, but it doesnt replace Sweet Baby Rays.

    Cooking 101 For Original Buffalo Chicken Wings Recipe

    To simplify the recipe even more there are a few steps that are optional. Ive explained above why I keep some of the optional steps in, but you can still end up with hot savory wings with less effort and ingredients.

    Tossing the uncooked wings with flour is great to make the sauce stick to the wings better, but is an optional step that you can skip if you are really pressed for time.

    The original Buffalo chicken wings recipe for the sauce can be pared back to just butter and hot sauce. The addition of cayenne pepper, cider vinegar and garlic powder adds a nice touch. But really, if you are eating these hot wings at a party or in front of the TV, I dont think many people will notice the missing ingredients.

    The simplified version of Buffalo chicken wings is to bake the wings in a single layer in a 400 degree oven for 30 minutes, flip and cook for an additional 15 minutes. In the meantime melt a stick of butter and ½-3/4 cup of hot sauce, depending how scorching you want the wings. Toss cooked wings with hot sauce and enjoy!

    Want to make hot wings even easier? Buy a prepared hot wing sauce like Franks Redhot Wings sauce that is already to go, no additional butter or ingredients needed. Im not talking about just hot sauce but WING sauce. It comes in a bigger bottle than the hot sauces do and is in the condiment section. Now you are down to just chicken wings and bottled ready-to-go sauce. How much easier can it get?

    Making The Perfect Wing

    In order to get the perfect chicken wing, you need to follow a few steps.

  • It is very important that you thoroughly dry the chicken skin before frying. Any moisture on the skin will deter the wings from becoming crispy in the fryer. After wiping with a paper towel, you can leave them on a cooling rack on the counter for 20 minutes or so to make sure they’re completely dry.
  • Keep an eye on the oil temperature to make sure it is maintaining 350 F. Using a deep-fry or candy thermometer is ideal.
  • Do not crowd the pot as too many wings at once will drop the oil temperature.
  • Keep the batches warm in the oven while you finish fryingyou want to be sure to toss them while hot in the sauce.

    There are as many recipes for hot wings sauce as for chocolate chip cookies. But why reinvent the wheel if we have access to the original recipe. I found the hot wings recipe on Parades website and for the most part I follow it. They state thats its truly Teressas original buffalo chicken wings recipe so Im going to believe them. Teressa uses hot sauce, butter, cider vinegar, cayenne pepper, & garlic powder.

    As far as brands or types of hot sauce, my suggestion is to use a milder version so that you can control the heat better. In the south a common choice is Crystal and in general Franks Hot Sauce is popular. Something like Tabasco is one of the hotter brands.
