What About The Consistency
Like many of the former Last Dab sauces, the Apollo is thick and chunky. The fresh peppers in this mix are nearly chewable, and the vinegar in it is kept at a low consistency.
This means you get a fantastically perfect pour from it. You do not want to get too fast of a pour. With the thickness of the sauce, it will not pour out very fast, so you do not get the danger of accidentally pouring too much into your food and therefore, burning your face off.
Instead, you get a slow pour that allows you to pour just the right amount of heat into any meal.

With over 100 unique sauces that have appeared throughout the 15 seasons, theres no way Im going to make everyone happy.
Remember, this is just my opinion.
The margins to make the Top 15, to the Top Six Out, to the dozen or so sauces that just missed that list were razor thin.
I had more agony than I thought when I first conceived putting this together.
One sauce I think all fans of the show can agree on is that any best Hot Ones sauces list will never include Da Bomb.
My personal tastes are pretty obvious with my choices: I like for the most part mild and medium heat level sauces that are versatile in their uses.
Fruit based hot sauces are also a favorite. It was a difficult choice for Heartbeats Pineapple to make the main list when Year of the Dog and Skinny Habanero were right on the cusp as well.
Another analysis I took is I think its evident that the hot sauce lineups in the later seasons have been stronger overall.
Only the best make the show and Im glad Im not the one who has to make those choices.
I started this blog in April 2020 and it took me seven months before I was comfortable putting together my first list and it has changed several times with the new seasons that have been added since that time.

Jimmy Kimmel has been making the rounds promoting Once Upon a Time in Queens, the docuseries he executive produced about the 1986 New York Mets, and his latest stop is the YouTube talk show Hot Ones.
As fans of Hot Ones are aware, the premise involves celebrities being interviewed while they consume an increasingly spicy assortment of hot wings, which typically culminates in profuse sweating and involuntary tears being shed.
Kimmel, a fan of hot wings for real, comports himself admirably until just after the 17-minute mark when he chomps into a chicken wing seasoned with a hot sauce dubbed Da Bomb: Beyond Insanity, boasting a Scoville rating of 135,600.
This is the one thats like the prank, right, quips Kimmel before taking his first bite. Oh yeah, he says while beginning to cough. My nose is starting to run. And when the sauce gets hot, Im gonna warn you, I get the hiccups.
As predicted, plenty of hiccuping follows as the wings become progressively spicy.

Youve probably seen Heatonists hot sauces on Hot Ones, First We Feasts interview show where Sean Evans asks celebrity guests questions while eating wings coated in increasingly spicy hot sauce. While some of the hot sauces on Heatonists website arent for the faint of heart, they also have a great lineup of medium and mild sauces because for most of us, consuming hot sauce isnt about pain.
Heatonist has recently launched Hot Ones Jr., a hot sauce for kids made in collaboration with First We Feast. The idea initially came about when Heatonist founder Noah Chaimbergs 10-year-old cousin Matteo asked him to make one. Matteo was interested in the hot sauce industry, and asked to interview me for a school project, Chaimberg told me.
