Bajan hot pepper sauce is served with everything in Barbados. Recipes and preferences vary and like Bajan Seasoning each cook or family has their own secret recipe.
Bajan hot pepper sauce is of a thick consistency with a bright yellow colour that is flecked with pieces of red Barbados Bonney hot peppers. At first taste you get a strong mustard flavour, then suddenly after 3-4 seconds, the powerful heat level kicks in. Its an excellent combination of heat and flavour. Its a real hit.
Today most Bajans buy ready made hot pepper sauce. One of the first commercial manufactures of Bajan Hot Pepper sauce was LG Miller & Sons Import and Export Ltd. under the Windmill Products label. This family business started in 1965 with a home-made hot sauce recipe and soon they were producing thirty gallons of sauce a week. Nowadays, their capacity exceeds 2,000 gallons per week!

- 6 large bonney peppers, seeds and stems removed, chopped
- 1 large onion, coarsely chopped
- 2 small cloves garlic
Combine all ingredients in a saucepan and boil for about 15 minutes. Adjust the consistency with water. Puree in a food processor or blender and bottle in sterilised bottles.

The bright yellow color comes from turmeric in addition of mustard the yellow prepared variety. Mustard is not usual ingredient found in other Caribbean type of sauces. If scotch bonnets are hard to get in your area you could use habanero peppers but our preference is the scotch bonnet for authentic flavor.

Of course, seafood is a perfect match since it is a Caribbean style sauce. Bajan hot sauce will elevate the flavor of simple grilled chicken breasts or thighs. Bajan sauce is especially good with fried foods as the tardiness from mustard, lime and vinegar cut through the greasiness.
This sauce has several variation changing from kitchen to kitchen and home to home. However our version is simple with limited ingredients to let the peppers shine. Variations include added culantro , ginger, or rum however we really prefer the simple is best approach in this particular sauce.

It has been a trying week for me, so I wanted to do something just for fun to take my mind off of some of the stuff thats been going on. I first encountered Bajan Hot Pepper Sauce at Surfside Restaurant and Bar in Holetown a couple months into my stay in Barbados. It was love at first taste! I bought some at a grocery store and quickly realized it is considered one of the food staples here.
But when you go to buy it for the first time, the sheer number of choices can be pretty overwhelming. How do you know which one tastes the best, or which one is the best for the price? It didnt take long before I had it in my head that I wanted to do a taste test to find my favorite.
Obviously, no two persons taste buds are the same, so I pulled my partner Reuben in so we could provide a more comprehensive review of each sauce.
