Fermented Pepperoncini Hot Sauce Recipe

Its actually a pretty simple process, and I basically followed my general recipe for how to make fermented hot sauce.

Cut the pepperoncini peppers in half , and layer them in a quart sized jar with the chopped onion and garlic cloves.

You can remove some of the pepper seeds if youd like it to be a little less hot.

Add the salt to the jar, and fill with filtered water to cover the veggies. Cover and shake the jar a few times to help dissolve the salt.

Weigh the veggies down with a fermentation weight to keep them under the brine .

Cover the jar with a cloth secured with a rubber band, and let it ferment in a dark corner for 1-2 weeks.

When the veggies are done fermenting, put the contents of the jar and the apple cider vinegar into a blender. You may not want to use all of the brine, depending on how thick you want the hot sauce to be.

Blend into hot sauce, and store in the refrigerator.

If you use all of the brine it will be fairly liquidy. I am ok with that, because then it can readily go into a squeeze bottle that is easy to use.

If youd like a thicker hot sauce, or even something more like fermented chili paste, use less of the brine when you blend.

These peppers smelled so good after fermenting! They would be really good just on their own as well, even if you didnt want to turn them into hot sauce.

They lost a bit of their green color during the fermentation process, which is normal.

Its definitely going to become a new staple in this household!

How To Store Your Sauce

Fermented hot sauce is a living food that’s rich in food enzymes and beneficial bacteria. Once you purée the chilies and bottle your sauce, it will continue to ferment. So store your fermented hot sauce in the refrigerator to slow down the fermentation process. You can also pour your sauce into jars and can it for long-term storage, but the high heat of canning will destroy the sauce’s beneficial bacteria.

Some home cooks stabilize their finished hot sauce by adding apple cider vinegar. Adding vinegar lowers the PH of the sauce, increasing both its acidity and the ability to store it long-term. If you wish to stabilize your hot sauce this way, you can purée the fermented peppers and, instead of mixing them with leftover brine, use apple cider vinegar instead. This forms a blended sauce, using both fermented peppers and vinegar.

For some reason this year, most of our pepper plants didnt do very well. We only got one or two bell peppers total, and a few hot peppers here and there.

Then we have this one pepperoncini plant which has produced so many peppers that I dont even know what to do with all of them!

I turned a bunch of them into pepperoncini refrigerator pickles to put on sandwiches and pizza.

The plant then had a second flush of peppers, so I decided to ferment them this time around. Then I got the great idea of turning them into fermented pepperoncini hot sauce!

Pepperoncinis are such great peppers because they are a little bit spicy, but not overly so. They also have an excellent flavor that is more than just hot.

I absolutely love fermented hot sauce and generally make it a couple of times a year to make sure that we always have some around.

I usually make it with hot red peppers, or sometimes jalapeno peppers, but when we had an excess of pepperoncini peppers I knew I had to give it a try with them.

How To Make Fermented Hot Sauce

Making this hot sauce recipe, as with most fermented foods, is easier than you think and fairly straightforward. There are requires two primary steps: fermenting the chili peppers, and then blending the sauce.

  • Prepare the ingredients. You’ll want to prep the chilies and any other ingredients you have in advance. You’ll rinse the chilies to remove any debris, and then cut away the stem end. Coarsely chopping the chilies can speed up fermentation, too.
  • Mix the brine. A typical brine for fermentation is about 2% however, for both hot and sweet peppers a higher level of salt is optimal, and you’ll typically need to ferment these ingredients in a 3-3.5% brine. You can mix the salt and water together on the stove, and then allow it to cool to room temperature before adding it to the chilies.
  • Combine the chilies and brine. After about two weeks, your chilies will be done fermenting and ready to make into sauce. You’ll purée chilies and any other ingredients, as well as some of the brine together to form the sauce.
  • Strain the finished hot sauce. If you prefer a thinner sauce, you can strain it if you like.

So this salad might not be the most photogenic, I actually forgot I need to take a pic and haphazardly through it together. However, it is super tasty, packed with protein, and fueled me for hours.

Ingredients:

  • Meat or meat subsitute of your choice I used an Impossible Burger to keep it vegetairan.
  • Shredded cheese I used moterraey jack
  • Coleslaw mix as the base I used the prepackged kind from Whole Foods becaue it was so convienent.
  • Whole Foods Vegan ranch This one is optional, but it adds creaminess and makes this dish more of a salad than just a deconstructed taco.
  • Hot N Saucy Garlic N Peperoncini hot sauce
  • Optional veggies or herbs- Like pickled jalepenos, fresh tomatoes or cilantro etc. Sadly, I didnt have any of these when I made this salad, but they would be great additions!

Directions:Its so simple, just put a base layer of coleslaw mix in a bowl and add your meat or meat substitute of choice. Pile the rest of the fixins above and drizzle with vegan ranch and Hot N Saucy. Enjoy!

Welcome back, everyone! Yes, its already time for another hot sauce review. Ive yet to kill my love of chicken strips, so Im continuing to work at trying all the sauces in my To Review pile . Part of why I need to get through theses sauces is because Season 16 of Hot Ones is just around the corner and Ive still got sauces in my pile from *coughs* uh well, season 14. Yeah, yeah. I know. But better late than never. Anyway, this sauce, as I mentioned is from Season 14 of Hot Ones. Its Hot N Saucys Garlic N Peperoncini sauce.

Anyway, so, what goes into this sauce? Well, we have: Pepperoncini , water, salt, vinegar, citric acid, cilantro, honey, sugar, and garlic.

Pretty straightforward. Starting off with the peppers. Then we get water and salt before the vinegar. That means theres either only a tiny bit of vinegar or theres a whole heaping mess of salt. And despite Garlic being the first part of the name, its the last item in the ingredients list. I guess well see how much I can end up tasting when we get there.

Taking off the bottle cap, it smells well it smells like pepperoncini . Slightly pickle-y. Slightly sour. Not necessarily a huge whiff of vinegar. And not all that much of garlic, either, to be honest.

Suggested dishes: Id put this on a Greek salad or on a cold-cut sandwich. Turkey and Swiss with a couple dashes of this seems like itd be fine. Or, as I say, on the aforementioned Greek salad with some olives and feta.
