This is my gluten free Chinese Black Bean Sauce recipe for Asian cooking. I couldnt live without it!

When I first started cooking gluten free I couldnt find a gluten free version of Asian black bean sauce so I dug out this old recipe and just made it. I have no idea where the recipe came from but my best guess would be a glossy food magazine from before the days of the internet. In those days Asian black bean sauce was a specialty ingredient that was difficult to find. Now you can buy a variety of black bean sauces, but every one Ive seen contains wheat.

This homemade version takes less than ten minutes to make . The beans are the only special ingredient and I can easily buy them at an Asian market. The sauce keeps in the fridge for months as long as you always use a clean utensil. In my mind there really is no valid excuse not to make it.

How To Prep Fermented Black Beans

To use the fermented black beans, always rinse them with water and drain before using, so they wont be too salty. Plus, the water will soften them to make the chopping.

I always chop the beans on a cutting board so I can control the texture. I like my bean paste a bit coarse, with bits of black bean chunks to add texture. You can do this step in a food processor as well.

*Tip on peeling garlic faster: Lightly crush it with your chefs knife by holding it with one hand, and press the flat side with the palm of your other hand. After this simple procedure, you only need 2 seconds to peel a clove.

Once you get all the ingredients ready, slowly roast them in a skillet. It will take 20 to 30 minutes. Please be patient and use low heat, so you wont burn anything.

The sauce will be ready to use once its cooked, but it gets better after storing it for a few days.

If you want to include garlic, mix 1/2 tsp of minced garlic puree into the mashed black beans before adding them to your wok.

Types Of Korean Black Bean Noodles

Jjajangmeyon : When theres no other word in front of it, it simply refers to regular jajangmyeon, also known as yetnal jajangmyeon yetnal meaning from the past or old-fashioned. For this type, water or stock is added to the sauce as well as some starch slurry to thicken it. The resulting sauce is liquidy.

Ganjjajangmyeon : The dish is made without the addition of any water or stock or thickening for the sauce. As a result, the sauce is dry with more solid ingredients per serving.

Samseon jjajangmyeon : Samseon means fresh delicacies from 3 sources land, sea and sky, but in Korean-Chinese cuisine, it commonly refers to a dish with various seafoods. Theres usually samseon ganjjajangmyeon on the menu as well.

Euni jjajangmyeon : Jajangmyeon made with ground meat.

Jaengban jjajang : The noodles are stir-fried with the sauce and served in a large platter to be shared.

    Maggie, I just found this recipe and after trying many others its THIS one that brings the real deal!!! Love that theres no cornstarch and no stock. It looks, smells, and tastes AMAZING!!! I used a thumb of ginger as well throwing in the 6 dried chilis in the oil until blackened then removed. I cant imagine this without either as they really add to the aroma, flavor, complexity and umami your recipe brings.
