HOW TO MAKE SPAM MUSUBI | HOMEMADE TERIYAKI GLAZE

In my experience, the only thing one needs to know about teriyaki spam is that it is fake and not delicious. This can be as simple as using a low-brow food term for something you think looks tasty or, more commonly, like a chemical compound that is supposed to be flavoring a dish but isnt. Here are some recipes that use teriyaki spam, including some of my favorite dishes.

I love this recipe for teriyaki spam. Its probably the best spam Ive ever eaten, and its super easy to make. While youre at it, try some of these other recipes from Fancy Spam.

During World War II, because of its long shelf life, Spam was transported to Hawaii with all of the soldiers and sailors who were stationed there. It quickly made its way into the hands of the locals, and in the early 1980s, Barbara Funamura, a Japanese-American woman from Hawaii, came up with the idea of creating Spam Musubi. In this recipe, Spam and rice are combined with nori to create a delicious hand-held snack that can be enjoyed anywhere.

Spam Musubi is so widely available throughout Hawaii that you can find it pretty much anywhere on the Hawaiian islands. Youll frequently find it at the check-out counter of any supermarket or convenience store. Because its difficult to find spam musubi in the United States, Ive been making it at home for years. As an alternative, I like to grill the Spam while brushing it with homemade Teriyaki sauce and a dash of rice vinegar this helps to bring the flavors together.

Steps:

Variations On Spam Musubi

The classic is a trio combo of rice/spam/nori. But there are many super delicious variations. Here are a few:

Furikake Spam MusubiRolling the rice furikake before you top it with the Spam slice. Some places also mix the furikake directly with the rice, so you get furikake-speckled rice.

Half-Wrap Spam MusubiCut the nori sheet lengthwise into quarters so that either end of the musubi is exposed.

Spam-in-the-Middle Musubi This is when the Spam is tucked between two layers of rice . You do a half layer of rice, sprinkle furikake , then the Spam, more furikake, then a top layer of rice. Then wrap the whole thing in nori.

Mini Spam MusubiThese are just whole Spam Musubi cut into halves or quarters . Minis can also be made with a mini musubi mold.

Saucy Spam MusubiThose who like crispy and saucy Spam can pan fry Spam slices in shoyu-sugar or teriyaki sauce before making the musubi.

Cook the rice. Be sure to rinse your rice thoroughly, then transfer to a rice cooker, cover & cook according to manufacturer directions. Why? Rinsing removes any starches from the surface of the rice, which helps create the perfect light & sticky texture. If rice is not rinsed properly, it will have a gluey/gummy consistency once it cooks no good!

Where Did Spam Musubi Come From

Spam got popular in Hawaii right after World War II.

The military consumed a ton of Spam during the war years. Because Hawaii had a large military presence, there was lots of Spam in Hawaii. People loved the taste, and Hawaii eventually adopted Spam. Spam musubi was invented by a local Japanese lady in Hawaii.

The Spam Musubi Is A Ridiculously Simple Creation Composed Of Four Ingredients Yet Its Extremely High Rating On The Scale Of Tastiness Cannot Be Denied

Of all the foods people associate with Hawaii, Spam musubi seems to be most popular, with echoes of lau lau, lomi lomi salmon, and kalua pig trailing just behind. Ive heard the terms Spam sushi and Spam sandwiches, but, no, get it right: Its Spam musubi.

Back home in Hawaii, musubis are found at every convenience shop on the islands, 7-11 included . Musubis are sold in school cafeterias and right alongside butter mochi at local bake sales. Picnic? Someones mom is bound to make at least two dozen. Sleepover? Either dinner that night, or straight out of the fridge for breakfast.

How To Make The Spam Musubi Sauce

Some spam musubi recipes dont use a sauce and I think that is the worst decision. The marinade adds so much flavor!

Thats why I make this simple Spam Musubi sauce recipe to marinate and cook the slices of Spam in.

I make my Spam musubi sauce recipe with soy sauce, sake , rice vinegar, cornstarch, and water.

Youll just mix all the ingredients together and marinate the Spam slices in it for about 30 minutes before cooking.

As you pan fry the Spam slices, the sugar will caramelize and it will taste incredible. And you can use the pan sauce to drizzle on top of your musubi before wrapping it in seaweed.

Types Of Seaweed To Use

Like other types of recipes that use nori , its a very important part of Spam musubi. Nori typically has different rankings based on the quality. For instance, some brands use a color rating like green and go up to gold or platinum . Sometimes these rankings are also in letter grades too.

For Spam musubi, I like to get gold or grade-A or B rated nori so that the sheets are uniform in thickness and have less of a tendency to break during wrapping and eating. However, if you dont have access to this type of nori, its okay to use nori at local supermarkets you may just need to be more careful when wrapping.

How To Serve And And Store

FRIED TERIYAKI SPAM MUSUBI Easy Recipe

These are best served fresh so that the rice is nice and soft and the nori is not too soggy. Its perfect with a side of ahi tuna poke or salmon poke bowls too. If you have leftovers, you can wrap them individually in a piece of cling-wrap tightly so they dont dry out. Once refrigerated they need to be microwaved in 30-second intervals until they are nice and warm. They are good in the fridge for about 3 days.

How To Make Spam Musubi Without A Mold

But not everyone wants to buy another kitchen tool. I get it.

Another easy way to make Spam Musubi is by hand. You can use the Spam slice as a template and grab a scoop of rice and pat it into a rice patty. This works because the rice is sticky. This is what I did in these photos since many people dont own a spam musubi mold.

Alternatively, you can make a DIY Spam Musubi mold using the Spam can itself. You just need to cut off the ends of the Spam can and then you can push rice into the can to get the right shape. But, its important to make sure there are no sharp edges or you can cut yourself.

Now you have two options for how to make musubi without a mold.

How To Make Teriyaki Spam Musubi

Below are brief steps and images on how to make this dish but please scroll down to the recipe card for detailed instructions:

Rinse your uncooked rice in water a few times. Then boil it until cooked. Season hot rice with sugar, salt and rice vinegar. Cover and let it cool down as you prepare other ingredients.

Lay spam flat on the cutting board. Slice spam into 5 equal pieces. Clean and reserve the spam can for later.

In a bowl, combine regular soy sauce, mirin, and sake.

In a pan over medium heat, add vegetable oil and fry spam for 1 ½ to 2 minutes per side, until pinkish golden.

Pour sauce over cooked spam and let it fry in sauce for 1 minute on each side. Remove spam from hot pan and transfer to an oiled plate to prevent the spam from sticking to plate. Note: Do not leave spam in pan as the teriyaki glaze will start to burn it with the residual heat.

Line the spam can with a large piece of plastic wrap.

Divide seasoned rice into 5 equal portions using a wet rice paddle.

Scoop 1 portion into base of lined spam can.

Cover the rice with the plastic wrap. Then using your fingers, pack the rice into base of can until top is flat. Be careful not to cut yourself along the edges of the can, feel free to use a utensil to help you with this step.

Remove the rice from can by pulling the cling film out and unwrap it.

Cut your nori sheet horizontally into 5 equal sized strips.

Wet your hands and place a piece of glazed spam on top.

  • Add one slice of spam to the top and with the topper of the mold you will cover the spam and rice and push down while lifting the mold up creating a rectangular shape.
  • When rice and spam is out of mold you will fold up each side of the nori and wet the edges to keep the Nori from unravelling and it ready to eat.

Classic Shoyu Musubi By Allison Robicelli

Spam Musubi with teriyaki dipping sauce

For a salty and sweet spam musubi that will be leaving you begging for more, take a look at this amazing take on the classic food by Allison Robicelli on foodandwine.com.

This dish, the recipe says, is an amazing way of showing what a seemingly looked down upon food can really do, when it is given the time, energy, and flavors to work with. Given just how great her recipe books are, were inclined to agree with her!

This recipe uses the spam can mold your musubi food to perfection, whilst giving this novel sandwich appearance to its nori, which sets it apart from almost any other recipe on this list in terms of looks.

For the teriyaki, the recipe recommends using brown sugar, for that extra strong sweetness in your packed up little rice and meat slice snack.

How To Make Spam Musubi With A Mold

Making the musubi takes a bit of time. As long as you have the right mold , youll be fine. If youre using a mold that only fits one piece of Spam, youll have to cut your seaweed sheets in half.

Ive heard you can use Spam cans with the bottom cut out as molds Ive never tried, so I cant vouch for those. Ive also seen people do make this without molds that also works, only makes it harder to stack everything on the rice, equally as tasty though!

If youre a visual person, this tutorial shows the method I use .

Otherwise, let me walk you through it. I prep a little bowl of water and keep it on the side in case I need to unstick rice from my hands. The station also gets set with one sheet of seaweed, shiny side down on top of a cutting board, and the mold on top. The mold should be positioned so that its in the middle , and that the short edges of the mold meets the edges of the seaweed.

Scoop some rice in an even layer into your mold. Use the molds plunger/plank to press on top of the rice to gently smoosh the rice down. You want the grains to hold together, but not so much that you cant see the individual grains anymore.

Place one or two pieces of Spam on top of the rice in a single layer, and drizzle on some extra teriyaki on top.

Make another layer of rice on top of the Spam. Place the plank on top and smoosh down a bit. Keeping the plank on top of the rice/Spam/rice stack, bring the edge of the mold up and off the stack. Remove the plank.

Want to have a go at making this tasty little treat, but not sure if you think you have the skills? Dont worry: As the name of the recipe suggests, this is an easy spam musubi that anyone can try.

This sweet and spicy seasoned center is laid on that trademark bed of sushi rice, all wrapped by the nori sheet, ready to go straight in your mouth. Its as simple as musubi can get, and its all the better for it.

And because it is so simple, you can change this simple dish up however you want. Want extra spices? An easy task just throw some more on the spam or in the rice when you lay it out.

Want to try a different seasoning? Just dust the center of your roll before you wrap it up, and youre ready to go!

Want to add some extra fillings, like avocado? As long as your rice bed is big enough, and your nori sheet is long enough, theres no end to what you can add to this superbly simple snack!
