How to Make SPAGHETTI with TOMATO SAUCE Like an Italian (Spaghetti al Pomodoro)

In my role as a guest Expert Council member on The Survival Podcast, I received the following question from Matthew:

Can you please recommend a recipe for homemade spaghetti sauce without oregano? I love to grow tomatoes and I love homemade spaghetti sauce. My problem is my wife is very picky about spaghetti sauce. She will only eat Ragu from the store.

My wife absolutely despises oregano and really doesnt like basil. So therein lies my dilemma. If you could please give me a recipe that omits oregano and is low on the basil Id appreciate it because I havent found one in the past 5 years.

Okay, although I am personally not a fan of commercial sauces like Ragu compared to homemade pasta sauces, I do love a challenge! So I was happy to take a stab at developing a homemade pasta sauce that would appeal to folks who prefer that commercial sauce flavor.

Mater Matters: The Best Tomatoes For Sauce

The first question is the most important: what tomatoes do we use? If youre lucky, you can get perfect tomatoes from a farmer or perhaps your backyard during the summer, and if you can, then Daniel has already showed us how to make the best tomato sauce from fresh tomatoes.

If, however, youre like most of us, your best bet for good tomatoes is in a can.

At the supermarket, youll see canned tomatoes in a variety of formscrushed, diced, in sauce, etcbut what youre looking for are whole peeled plum tomatoes packed in juice or puree. While its possible to find a decent can of crushed tomatoes, the tomatoes packed whole are almost invariably better quality than those used for crushed or diced tomatoes, and they give you more freedom to chop them to whatever size youd like.

Go with a trusted brand of tomatoes if you have a favorite: of the readily-available, American-produced tomatoes, I like Muir Glen and Cento the best. If you can find them, youll never go wrong with D.O.P. San Marzano tomatoes imported from Italy. The D.O.P. seal ensures that they were grown, harvested, and processed under very strict protocols that guarantee a certain base quality.

I can hear you now: D.O.P. doesnt necessarily mean the best! And its true: Its possible to find better tomatoes if you know where to look. But the D.O.P. San Marzanos are readily available and come with a guarantee of quality. I like that.

How To Defrost Meat Sauce

There are a few ways to defrost meat sauce. Once it is fully thawed, reheat over medium heat just until hot and simmering.

  • Quick-thaw method: Place the sealed bag of meat sauce in a bowl under cold water until thawed.
  • Slow-thaw method: Place the frozen meat sauce in the refrigerator overnight.
  • For a camping trip: place packaged frozen meat sauce in a cooler with ice and let it thaw as in a refrigerator overnight.

    How To Peel Tomatoes For Pasta Sauce

    Its important to peel the tomatoes before turning them into sauce as the skins may create a chunky, uneven texture in addition to adding extra bitterness.

    Peeling the tomatoes is easy once they have been blanched in boiling water and shocked in an ice bath.

  • Fill a large bowl with ice water.
  • Once the skins have begun to split as the tomatoes are boiling, carefully remove each tomato with a Spider strainer or slotted spoon and place them in the ice bath.
  • Allow the tomatoes to cool completely in the ice water and discard the hot water that was used to boil the tomatoes.
  • Once the tomatoes are cool to the touch, carefully peel the skin from each one and discard.
  • Remove the core from the top of the tomatoes using a paring knife or small metal scoop.
  • To Cook The Best Spaghetti We Have A Few Simple Tricks

    Check the package directions of the spaghetti you plan to cook. On the box, there should be an approximate cook time for al-dente, which means the pasta will be tender, but not mushy. It will still have a bit of a bite, which is perfect.

    When you know the suggested cook time, set a timer for a minute or so before it. So if the box suggests 10 minutes, set a timer for 8 minutes.

    This way, at the 8-minute mark, you can check on the spaghetti to make sure it isnt done already. The box directions are a helpful guide, but its always a good idea to check the pasta early!

    Cook the spaghetti in salted water. The water should taste salty. This seasons the pasta as it cooks and is necessary for the best-tasting pasta.

    Toss the cooked spaghetti with a flavorful sauce like our homemade spaghetti sauce. Dont just spoon the sauce on top of the pasta.

    Tips And Notes For Making The Best Spaghetti Sauce

    • Try to use good quality tomatoes if you have access to them. My favorite brand of tomatoes is Tuttorosso tomatoes, Muir Glen, or Pomi tomatoes. I like the Pomi tomatoes because they come in a box rather than a can, which is nice if youre looking to avoid BPA.
    • Dont skip the brown sugar. Adding a bit of sugar to your homemade spaghetti sauce helps to cut the natural acidity of the tomatoes and helps to balance the sauce.
    • For an extra kick, add a sprinkling of red pepper flakes to your sauce. Only add this if you like some spice, though!
    • Meat substitutions: you can replace the lean ground beef with ground turkey or pork sausage. You can also leave it out completely for a meatless, vegetarian spaghetti sauce.
    • Let it simmer. I like to let my sauce simmer for at least an hour and a half, but longer is better The more time you allow your sauce to simmer, the richer the flavor will be. You can also transfer the sauce to a crockpot after preparing it on the stove and allow it to cook over low heat for a few hours. If your sauce is too thick after cooking, add a little more water to thin it out.
