    How To Peel And Devein Raw Shrimp

    For shrimp tacos, you’ll want to completely peel and devein the shrimp. No one wants to bite into a shrimp tail!

    To peel raw shrimp, first gently twist off the head then wedge your thumb inside the shell, just above the legs. Grasp the shell between your thumb and forefinger lift and turn to detach the shell down to the tail segment. For shrimp with the tail intact, hold the peeled shrimp near the tail and gently pull to release the shrimp completely.

    To devein, use a sharp paring knife to cut a shallow slit down the center of the back. With the tip of the knife, gently lift the vein out and discard . Repeat with remaining shrimp.

    How To Make This Shrimp Tacos Recipe

    STEP ONE: Mix together the garlic powder, onion powder, chili powder, dried basil, and cayenne pepper. Use this mixture to thoroughly coat all the shrimp.

    PRO TIP: If youre not entirely a fan of spicy food, feel free to remove the spicy elements such as the chili powder, cayenne pepper, jalapeno, and hot sauce!

    STEP TWO: In a skillet over medium-high heat melt the butter. Add in the shrimp, lemon juice, and soy sauce. Cook the shrimp until pink on both sides, about 1 to 2 minutes per side. Remove from heat and set aside.

    PRO TIP: You will know when the shrimp is cooked when it is pink and no longer gray or translucent, and the shrimp curls slightly. Shrimp usually takes about 1 to 3 minutes to cook on either side depending on the size of the shrimp used. Dont spend more than 4 to 6 minutes cooking the shrimp or it will be overdone and rubbery.

    STEP THREE: Make your spicy cilantro lime sauce.In a food processor or blender, blend together the sour cream, buttermilk, jalapeno, cilantro, lime juice, hot sauce, garlic powder, and salt. Set aside.

    STEP FOUR: To assemble the tacos, warm the corn tortillas and then start with a layer of homemade or store-bought guacamole and spread it on the bottom center of each tortilla. Then layer it with a small bunch of green cabbage followed by the cooked shrimp. Drizzle some of the cilantro-lime sauce over each taco and then top with a squeeze of lime juice, feta cheese, and chopped cilantro.

Some bags of raw shrimp come with the tails already peeled, or you may see a label on the bag that statesEZ Peel. It means just that. The tails are easy to pull off yourself: either way, both bags of shrimp work. Just make sure you DO peel the tails off. You wouldnt want crunchy tails in your tacos. Yuck!
    • Now, you need a bag of shredded cheddar cheese, soft taco shells, and old bay seasoning. Once the shrimp has thawed, pat dry with a paper towel. Add old bay seasoning to the shrimp, and toss it in a large pan with butter. Cook the shrimp until done when its a light pink color. Then you can assemble your tacos!     • Be careful not to over-cook the shrimp. Key to any good shrimp recipe. If over-cooked they take on a bouncy rubbery texture.
    • Add some textural contrast with toppings. Serving with crunchy cabbage and creamy avocado does just that.

    How To Make Baja Shrimp Tacos At Home:

  • Set up a workstation. The step that takes the longest is the shrimp. So toss the shrimp in a splash of buttermilk with some salt. Then, place the flour with the seasonings in one dish, the rest of the buttermilk in another dish, and the panko in the third dish. Youre going to drain the shrimp from the buttermilk, toss it in flour, then buttermilk, and finally the panko. Place them on a clean sheet pan at the end so you can fry them all at the same time towards the end.
  • Make the sauce and saute the veggies. To make the chipotle mayo, all you have to do is blend the buttermilk chipotle peppers and adobo sauce until smooth. Then, add the mayo and continue to pulse the food processor until the ingredients combine. Dont overmix though otherwise, the sauce will become too thin. To saute the veggies, melt the butter in a skillet, add the carrots and cabbage and saute until al-dente. You can let them go longer if you usually prefer them on the softer side.
