Just 10 miles from Ville Platte is the small town of Mamou , which hosts one of the traditional Cajun Mardi Gras Celebration in the United States. The History Behind Touffe

Étouffée, pronounced eh-too-fey, has been deeply rooted in Louisiana culinary history since the 1920s. Initially, it was only popular with Cajuns who lived along the bayous of South Louisiana and was later introduced in restaurants around the Breaux Bridge area in the 1950s. It wasnt until the 1980s that a server from the very popular New Orleans restaurant, Galatoires, brought the dish to his boss and asked him to give it a try. The peppers in Slap Ya Mama are listed on the label as aged pepper mash but there is no mention of the specific pepper type. Since this is a Louisiana style hot sauce, it is safe to assume that the pepper is either cayenne pepper or tabasco. Both are commonly used in this type of hot sauce. For example, Tabasco sauce uses tabasco peppers as you might expect Crystal Hot Sauce uses cayenne. Tabasco and cayenne peppers both score in the 30,000 to 50,000 range on the Scoville scale, but Slap Ya Mama Cajun Pepper Sauce is much milder its Scoville rating has been measured to be in the 1,000 to 10,000 range. This places it at a similar level of heat as Tabasco Sauce, Tapatio Hot Sauce and Trappeys Louisiana Hot Sauce, with the potential for a little more.

It is worth noting that unlike many other Louisiana hot sauces, Slap Ya Mama has pepper as the first thing on the ingredients list.

Preheat oven to 350º F. Place ribs in baking pan and cover with tin foil. Cook for about 30 minutes and drain. Place back in oven and cook for another 30 minutes and drain again. Start Slap Yo Mama Ribs In The Oven And Finish Them On The Grill

Wrap the spice-rubbed ribs in foil, and crimp the edges, to seal the packet. Cook them low and slow, at 300º on a rack. Place the rack on a cookie sheet, for two hours. Low heat + sealed in steam from the cooking ribs, causes the meats proteins to relax. Low, slow and steamy makes them tender and juicy.

And since I cant resist a bit of smoky flavor, when we took our ribs out of the oven and unwrapped them, we finished them for the last 45 minutes on the grill, over indirect heat, with a stick of hickory wood placed on top of our Kingsford charcoal coals, to get some smoky flavor.

The brown sugar in my rub sugar in any spice rub or barbecue sauce will brown and caramelize on the grill. Yum!!!! However, sugar burns quickly, so thats why we used an indirect heat while we grilled the ribs.

What Type Of Ribs Did You Choose For Slap Yo Mama Ribs

I chose the St. Louis style spareribs. All cuts of spareribs are going to be delicious, whether regular, baby back, country style or St. Louis style, but the cut known as St. Louis style spareribs has already been trimmed of skirt meat and excess cartilage. Thus, their overall shape is more even. The shape is basically rectangular, and in terms of even cooking, that makes for less worry for the cook!

I start my ribs by applying the spice rub. If you have 8 24 hours to spare, you can wrap them in plastic wrap at that point, and store them in the fridge, till you grill them later. The spice rub will have even more time to penetrate that way. I didnt have that kind of time: I needed to grill them soon, so we applied the rub and cooked them right away, and they were great, even without giving the rub time to be drawn in deeper.

Review: Slap Ya Mama White Pepper Blend

Being a hardened habbie-head, its natural to go for Cajun foods, or atleast the seasoning used in that cuisine. And I really dig it when a company puts out a product that not only is simple in its ingredients, but makes cooking that said food simple. Case in point: Slap Ya Mama white pepper blend seasoning. Is it a rub, is it a mix, is it a seasoning? It really doesnt matter because you can use it for anything.

Made in the heart of Cajun Louisiana, this seasoning packs a serious one-two punch: First you get hit by the red pepper , then a back-throat hit by the white pepper. When I first got it I was using it like I would use regular salt, shaking it on pasta, nachos, hot dogs, and even in salad dressings. So it can cover those bases, but I wanted to try it as a rub, so my wife went out and bought some pork steaks. I liberally rubbed this all over the pork, and grilled it.

The picture cant begin to do the justice this seasoning deserves for bringing such flavor from the pork. It was absolutely divine, and what was really cool was how the individual flavors came out. First you taste the salt, then the cayenne, then the white pepper, without a heavy after-taste. Very flavorful, very crisp. Once you get it youre going to find yourself using it on your dinner table.
