If youre like me, or many of us really, youre probably used to enchilada sauce from a can. I wont lie, Ive eaten more canned enchilada sauce than I care to admit on anything from eggs to pizzas, and of course on enchiladas or a giant wet burrito. To be honest, the canned sauce isnt bad, really. Its not great, but its not awful either.

About 6 months ago I was eating at one of my favorite Mexican restaurants in San Diego and I fell in love with their enchilada sauce. It was then that I realized I needed to step up my game and make my own enchilada sauce from scratch. When you search online for how to make enchilada sauce, or homemade enchilada sauce theres no shortage of search results. I tried a handful of recipes that were posted but none of them were remarkably better than the canned stuff.

This enchilada sauce is super easy to make, which is one of the reasons I love this recipe. Easy now because Ive made no less than 75 batches of this stuff over the last half a year to perfect it. Thats not an exaggeration, and 75 is probably a conservative estimate. Follow the few easy steps below and in about 20 minutes start to finish youll be tasting some truly incredible enchilada sauce. I promise youre going to love this sauce.

How To Store Homemade Enchilada Sauce

I dont normally add a section on storage to my recipes. I felt it necessary to do so for this recipe because this enchilada sauce will stain your typical plastic storage containers. Assuming you havent already lost the lid to the plastic storage container, staining them is another reason to toss them. Heres a hint for those lost lidstheyre hanging out with the missing socks. Seriously, how is it that socks and storage ware lids seem to just walk off in the middle of the night? UGH! I digress, youll want to store this sauce in a mason jar, like how I store my homemade pickled red onions.

Diy: Make Your Own Dry Enchilada Sauce Mix

I enjoy being creative and I also like the idea of being able to control what goes into my familys food. Case in point: Last night I planned to make Beef and Rice Enchiladas . However, I was out of the dry enchilada mix I usually use, and so was the grocery store. So, I turned to my friend the internet and found a recipe I had all the ingredients for and that looked pretty good.

The original recipe had a few things I didnt like and so I changed it to my liking. Here is the resulting recipe:

3- 4 teaspoons black pepper3 teaspoons dried oregano¼ cup chicken bouillon granules ¼ cup beef bouillon granules 1/3 cup cumin½ teaspoon dried chipotle pepper ¼ teaspoon cayenne pepper

Combine all ingredients in a bowl or container with a tight-fitting lid. I re-purposed a plastic salsa container, which worked fabulously for mixing AND storing! Bonus! This is what mine looked like before mixing:

It smells wonderful! To use as an enchilada sauce, add about 1/3 cup mix to 2 cups liquid, such as water, tomato juice, or a combination of water and tomato sauce. You can adjust the amount of mix to suit your taste. This mix can be used in a wide variety of foods such as chili and tacos.

Chili Powder This is not a spicy enchilada sauce recipe unless you want it to be! The type of chili powder you use can and will affect not only the color but the flavor of your enchilada sauce. The color can range from brown to red depending on your chili powder.

I typically use this chili powder, which has a mild complex flavor. My son loves to use Penzeys Medium Hot Chili Powder because he likes a little heat .

Cooks Illustrated wrote an article rating different chili powders. Their number one favorite was Morton & Basset Chili Powder.

Chicken Broth You can use a homemade or commercial brand here. You can even substitute beef or vegetable broth if you like. Actually, even water will work in a pinch, but you get so much more flavor from a broth.

How Long Can You Keep This In The Fridge

Your homemade red enchilada sauce will stay fresh and yummy in the fridge for up to a month. Its a little harder than the white enchilada sauce and it doesnt contain any dairy.

I typically keep mine in an airtight container with a secure lid but be sure to let it cool completely before tossing it in the icebox.

The sauce will be much, much thinner–it’s about like mixing tomato paste and water 1 to 1. If the recipe involves adding water in a quantity about equal to the amount of tomato paste it calls for, it’s worth a shot. Just omit the water.

In 12-inch nonstick skillet, heat oil over medium-high heat and cook onion, stirring occasionally, 3 minutes or until tender. Stir in chicken, tomato sauce, tomatoes, chilies, and Lawry’s Taco Spices & Seasonings. Bring to a boil over high heat. Reduce heat to low and simmer covered 15 minutes.

How To Make Homemade Enchilada Sauce Step

Step 1: In a small mixing bowl, whisk together all dry ingredients and set aside.

Step 2: Add oil to a medium-sized saucepan and place over medium heat just until oil begins to shimmer. About 2 minutes or so.

Step 3: Add dry ingredients to warm oil and whisk constantly until well mixed and the color is deep mahogany. Youll be able to smell the chili powder really coming alive at this point as well. Whisk in tomato sauce and allow to cook for another minute before slowly whisking in the chicken broth.

Step 4: Turn up the heat to medium-high, whisk in butter and bring the sauce to a low boil.

Step 5: Reduce heat to low, add vinegar and cook for an additional 5 minutes, whisking often to prevent any burning. The sauce will seem thin as it cooks, but it will get thicker as it cools.

Step 6: Remove from heat, and use for my smoked chicken enchiladas recipe, or over your next breakfast burrito, or on pizza or throw some in a slow cooker with a pork loin and let it go to work. This sauce is good for so many things, dont limit it to just enchiladas.
