White wine forms the base of many sauces that go well with seafood, chicken, and pasta, and the simplicity of the sauce makes it easy to tweak to your preferences. There are generally two types of white wine sauce: a light, thinner sauce made with butter and chicken stock and a richer, dense sauce that uses cream and flour. Both sauces require a process known as “reduction,” which cooks the liquids together for 5-10 minutes heat to concentrate their flavors.
These recipes make enough sauce for 4 people.
Making The Perfect White Sauce
In a small saucepan, over low heat, melt the butter thoroughly. Once it is melted add the flour all at once.
Whisk constantly for just a couple of minutes, just to give the roux a chance to develop some flavor and encourage its thickening properties, while preventing it from getting any color.
In a separate pan, gently warm the milk, being careful to not let it heat or come to a complete boil. At this point, carefully add just a small amount of the warm milk to the pan with the roux, stirring constantly to create a smooth, lump-free mixture.
Once this is achieved, you can add more milk gradually, continuing to stir until all of the milk is added.
Continuing over low heat, cook the sauce for about 5-8 minutes, allowing the sauce to thicken until it is shiny and leaves a trail behind the spoon in the bottom of the pan.
Alternately, dip a spoon in the white sauce & draw a finger on the back of the spoon. If it is done perfectly, it leaves an open space meaning it is of the right thick consistency.
Finish your sauce with salt and the seasonings of your choosing and you are on your way to a really great meal!
Can White Sauce Be Frozen
Once the sauce has completely cooled to room temperature spoon into a freezer bag. Its best to store in portion sizes as it’s quicker to defrost. Freeze for up to 6 months. Defrost overnight in the fridge. You will need to reheat the sauce gently once defrosted on the hob and may need to add a knob of butter too.

With all its versatility, you might think the sauce would be hard and time consuming to make. It is not! You can whip up the sauce in under 10 minutes.
In fact, it only has three ingredients: milk, flour, and butter. It starts with a blond roux, made by whisking flour and butter for about 2 minutes in a saucepan on the stove. Thats just long enough to cook the flour without browning it to eliminate the pasty taste that comes from raw flour. Once the roux has bubbled for a minute or two, add half the milk and whisk to eliminate any lumps. Then whisk in the remaining milk.
Many recipes advocate for hot milk when making a bechamel, but I have found that heating the milk is an unnecessary extra step. Practically speaking, the sauce is easier to manage with cold milk since lumps dont form too quickly.
The sauce does take a little longer to come to a boil than if you added hot milk, but you eliminate an extra step. Once the sauce comes to a boil, it must continue to cook for at least one minute to ensure it thickens. Stir constantly and keep your eye on the bottom of the pot to avoid scorching.
How To Store Or Freeze Bechamel
Store in an airtight container in the refrigerator for up to 5 days. Reheat over low heat, whisking constantly, on the stovetop. You can freeze bechamel in an airtight container for up to 3 months.
Reheat the frozen block in a small covered pot over low heat, whisking well. Add a thin layer of water to the bottom of the pot, and stir often once the sauce starts to liquefy.

Seal, and shake well to combine .
Store in the refrigerator for up to 1 week. Shake before using. Makes enough sauce for 4-6 dishes.
Cold Milk Vs Warm Milk
Expert chefs always suggest using cold milk as hot milk can end up with lumps of roux in the white sauce. With cold milk you get enough time to incorporate the roux into the milk before it begins to simmer. So no lumps.
However cold milk can end up with instant splatters when added to the very hot roux. So bring down the temperature of the roux slightly before adding cold milk or warm up the milk slightly before stirring it to the hot roux.
There is no one way to make perfect smooth white sauce. In this recipe, it is warm roux + warm milk = no lumps. So if you 2x or 3x this recipe, do follow this as it makes a lot of difference when made in larger quantities.

What’s The Difference Between White Sauce And Alfredo
While the two sauces look the same, there is a noticeable difference in taste. Alfredo sauce typically doesn’t begin with the roux, preferring to skip the flour and instead heating butter and cream. It also includes Parmesan cheese and parsley for flavor. In comparison, white sauce is very basic and bland but offers lots of potential for a variety of flavors and uses. This cream sauce variation is a good alternative to Alfredo for pasta. Simply season it as desired.

- Prevent the flour from browning when making the roux. If it looks like its cooking too quickly, simply slide the pan off the burner and keep stirring until the pan cools down it will keep cooking with residual heat.
- Stir continuously once you add the milk, so the bottom of the pot doesnt scorch, and lumps dont form.

How To Make White Sauce Pasta
We start with making the classic white sauce with butter, flour and milk. The important thing here is to use a whisk when you add in the milk and whisk continuously until all the flour and milk is mixed well together.
I high recommend using a whisk else you might get lumps in your sauce and thats no fun!
Once you have made the base, you add in the seasonings and cheese and then toss in the veggies and you are done.
I like sauteing my veggies before adding them to the sauce. I only slightly cook them in some butter, this way they remain crunchy and retain their color and crunch when added to the sauce.
The prep work for this pasta takes a bit of time since theres some chopping involved but once you have got everything chopped and ready to go, it comes together pretty quickly.
To make this pasta less creamy: use milk only and skip the cheese!
If you want a more saucy pasta: reduce the quantity of pasta to 100 grams .
