Its featured in their vegetarian cookbook Pretty Simple Cooking, which I bought last spring when they made an appearance at my local bookstore. The truth is, with more cookbooks than I have room for already, I had no business adding to my collection. But her story tugged at my heart strings and I wanted to lend my support, even in this one tiny way.

And heres the other thing: its a terrific book. With two vegetarians under our roof, its also exactly the kind of inspiration we need right now, starting with this easy falafel recipe.

If you feel intimidated by the idea of making your own falafel, dont. It sounds exotic, yes, but is nothing more than pulsing together chick peas, a few vegetables, and spices in a food processor and forming it into patties. After cooking the burgers, you tuck them into buns topped with a generous spoonful of dill-spiked yogurt sauce. Theyre delicious, a vast improvement over the just add water mixes and frozen falafel you find in the supermarket.

Best of all, these burgers will perfume your kitchen with warming spices, fill your belly, and make you forget, even for a minute, just how hard mothering can be.

As a vegetarian, Ive learned to embrace beans as a staple in my diet. I love that they are inexpensive, full of healthy nutrients, and can be used in numerous ways in recipes. Beans are not only a good source of protein , they are also high in folate, manganese, iron, zinc, potassium and more!

Also, they are packed with soluble and insoluble fiber making them a low glycemic food. We know that the glycemic index, which measures how much certain foods raise your blood sugar after eating them, isnt completely reliable. However, in general foods that are low on the glycemic index are typically healthy foods that are unprocessed and high in fiber like non-starchy vegetables. Some population studies show that a diet that is higher in low glycemic foods may of chronic diseases like diabetes. All the more reason to make eat beans more often!

Some of my favorite salad additions to go with the falafel include: cucumber, red pepper, tomatoes, feta cheese, and olives. I also added some spice with a tablespoon of Mina harissa . I packed this exact salad for lunch a couple of days in a row for work and found it so filling. All the fiber, healthy fats, and protein kept me going until dinner time!

Can I Use Canned Chickpeas For Falafel

Weve made this recipe using both canned chickpeas and freshly cooked chickpeas. We prefer the taste of chickpeas that are cooked from scratch. These do take a long time to boil so we often make them in advance. But canned chickpeas work very well too. You may need to adjust the quantity of flour that you add, until you get the right dough consistency.

Variation: Use Mayo For A Richer Sauce

How To Make Dill Yogurt Sauce

Making this sauce is super simple!

Add all the ingredients to a bowl and stir until its combined. Honestly, thats it.

If you want to embellish the dip, here are a couple of ideas and tips.

  • Taste and adjust the seasoning with salt and freshly ground black pepper. I prefer sea salt.
  • Add a pinch of ground cayenne for pleasant heat. You can also add red pepper flakes for the same effect.
  • Drizzle olive oil over the top before serving to add additional richness.

Does It Get Any Healthier Than This I Dont Think So

Yield: 4 servings

For the falafel:

  • 1 cup lentils, rinsed and picked over
  • 1 onion, finely chopped
  • 1/3 cup whole wheat seasoned bread crumbs
  • 1 large egg white
  • 4 tablespoons extra virgin olive oil

In a medium saucepan combine water, lentils, onion, carrot and ½ teaspoon salt and bring to a boil over medium-high heat. Stir and simmer covered for 30 minutes.

Drain and cool. In a food processor, combine lentil mixture, remaining salt, spices, bread crumbs and egg white. Pulse until combined. In the meantime, heat 2 tablespoons olive oil in a large skillet , until oil is hot enough that a droplet of water sizzles.

Shape falafel mixture into small, round, approximately 1 inch balls. Drop in oil and fry in batches, adding more oil as necessary, until golden brown on both sides . Remove and place on paper towels to soak up excess oil.

For the tahini sauce:

  • 1 tablespoon extra virgin olive oil
  • Juice from 1 fresh lemon
  • ¼ teaspoon salt

In a food processor, mince garlic cloves. Add tahini, olive oil, lemon juice, water and salt and puree until mixture is well blended. Mixture should be thin and pour able.

For the Greek yogurt sauce:

  • 1 cup non-fat, 0% plain Greek yogurt
  • 2 teaspoons extra virgin olive oil
  • Juice from ½ a fresh lemon
  • 2 tablespoons chopped fresh dill

In a food processor, mince garlic clove. Add yogurt and olive oil and pulse until blended. Add in lemon juice and pulse again until mixture is blended. Pour yogurt mixture into serving dish, add in dill and stir to blend.

Slice the cucumber in half lengthways and cut or scrape out the seeds this is where most of the water content is. Grate the remaining cucumber. Tips To Make The Perfect Falafel:

  • Use dry chickpeas that have been soaked overnight!
  • Drain chickpeas well before mashing or blending them.
  • Add a teaspoon of baking soda to keep them light.
  • Adding cilantro and parsley makes a big difference in falafel taste!
  • Use a high smoke point oil for frying, like canola oil, sunflower oil or grapeseed oil.

    Making The Yogurt Dill Sauce

    Like I mentioned, this sauce is really easy to make. First, get out a small bowl and set your ingredients out with a cutting board, knife, and a spatula. Grab your measuring spoons and youve basically done most of the work.

    The Yogurt

    I used a container of fat-free, plain Greek yogurt. There are options here but it definitely has to be plain. The strained Greek variety you can also get Icelandic style Skyr is thicker than European yogurt and so it creates a better consistency.

    The main thing youll need to decide is what fat level you want to use. I find that the American diet is generally very high in fat, salt and sugar so in my recipes, Im constantly trying to cut back on those ingredients. Choosing a low or no-fat yogurt is a really easy substitution. If youre a person who is trying to get more calories or fat in the diet then definitely use a higher fat option. If youre a person who really prefers the texture or flavor of a higher fat yogurt, go for it! You could use a 2% option or go for whole yogurt.

    There are some really great plant-based yogurts on the market now. I love Nancys plain soy yogurt , or you could use a plain almond or coconut variety. Whatever you do, make sure theres no added sugar in there by reading the label.

    The Seasoning

    Mince your garlic clove and toss that in as well. You get to choose how garlicky you make the recipe. I used just a small clove but if you want more, go for it with a large clove or two small ones instead.

    How Long Does It Stay Good

    The sauce should stay good in your refrigerator for 5-7 days and the flavor will intensify as it refrigerates. For that reason, I used minced garlic from a jar rather than fresh. I find that fresh garlic leaves me with the most unbearable breath for a good 24 hrs no matter how many times I brush and gargle with mouthwash. Garlic from a jar is a little more subtle.

    I was pleasantly surprised to find cucumbers on sale 7 for $1 at our produce market today so that really brought the price of this sauce down. Unfortunately, they are only this cheap for a short time during the summer.

    Falafel With Garlic Dill Yogurt Sauce

    YIELD: 8 silver-dollar-sized falafel patties

    INGREDIENTS

    • 1 can chickpeas, drained & rinsed

    • Whole wheat pita bread

    • Oil for cooking

    • 1 container or ¾ cup plain Greek yogurt

    • 1/2 lemon, juiced

    DIRECTIONS

  • Mix Garlic & Dill Yogurt Sauce ingredients together and set aside in the refrigerator until needed.

  • In a large bowl, add chickpeas, cumin, garlic powder, salt, lemon juice. Mash with a fork or masher until mixture becomes a paste. Add 1-2 tsp of water if mixture is too dry. Fold in green onions, flour, parsley, and cilantro. Let falafel mixture sit for at least 5 minutes.

  • Optional: Heat a large skillet on medium high heat. Cook pita bread on each side for 2-3 minutes and cut in half. Keep warm in a kitchen towel until needed.

  • Measure out 1/8 cup falafel mixture. With your hands, firmly press and shape into ¾-inch thick patties. Repeat.

  • Heat 1-2 Tbsp of oil in a large skillet on medium high. Add falafel patties and fry until golden brown on each side . Add more oil as needed.

  • Serve falafel patties in whole wheat pita bread with Garlic & Dill Yogurt Sauce and Optional Ingredients, if desired.

  • Cut Out Shapes From The Dough

    We recommend taking a ball of dough one at a time. Squish it with your hand until the dough sticks together. Then roll it into a ball.

    Place it onto a floured work surfaced and press down on the ball to flatten it. Then cut out your shape.

    If you prefer to make falafel balls then you can simply roll each piece of mixture into bitesize balls with your hands, and set them aside.
