I love cooking mapo tofu for a quick lunch or dinner and serving it over steamed rice. Sometimes I double the meat and sauce, so it will be enough to serve two people as a one-dish meal. I also like to add a handful of greens at the end of braising before adding the cornstarch, to create a more nutritious and balanced meal. Sometimes I also replace the ground pork with ground turkey to cut calories.

The peanut butter we used is the Kraft Smooth Peanut Butter since we like a more uniform texture for the sauce. But you can also use the chunky peanut butter if you like peanut bits in your sauce.

Hot sauce is a mainstay of Caribbean culture and cuisine, and there are dozens, if not hundreds, to choose from throughout the islands. For an authentic taste of the U.S. Virgin Islands, its hard to beat Alvins Hot Sauce, winner of 12 international awards and featured on Netflix.
Originally from Trinidad, Alvin Franklin moved to St. Croix at the age of 14. After graduating from Central High School, Franklin joined the U.S. military, where he did two tours in Iraq and Haiti over 28 years as a water treatment specialist. After leaving the military, he worked at the HOVENSA refinery for Nalco Water Company for 12 years. When the refinery closed, he had a choice to either move to Houston and continue doing the work he was doing or start his own business.
During his youth, Franklin grew up developing my own brand by watching his stepfather make his special sauce. Over the years, Franklin refined his recipes and after winning an award for his spicy blend, he decided to get his business license and get serious about the sauce.
Because he could not get enough scotch bonnet peppers on St. Croix, he set up production in Trinidad and has the product shipped to the Virgin Islands. Alvins Hot Sauce can be found in major restaurants and supermarkets on St. Croix, St. John, St. Thomas, Tortola and now on .

Best Chili Sauce To Use
Two important ingredients that you might not find as easily in stores are the chili sauce and sweet soy sauce. We used the Indonesian ABC Original Chili Sauce and ABC Kecap Manis. We like the ABC chili sauce since it’s on the sweeter side and not too spicy. The ABC kecap manis is thick in consistency and adds sweetness and great darker color to the sauce. If you cannot find it in your local stores, you can order online or use another chili sauce of your liking and use regular sugar instead of the sweet sauce. Keep in mind each brand of chili sauce is different, and regular sugar doesn’t have the same sweetness level as sweet soy sauce, so the quantities would have to be adjusted accordingly. We also added extra chili oil from our favourite Lao Gan Ma Black Bean Chili Sauce for some extra spiciness!

The most common approach is to fry the Sichuan peppercorns in the hot oil to infuse the flavor, then you remove the peppercorns so you wont accidentally chew on it and feel numb for 10 minutes. Once fried, Sichuan peppercorns will become much milder. You can grind it up and use it to garnish your dish later, to add more flavor if you prefer.
Alternatively, you can use ground up fresh Sichuan peppercorn. I recently got the Sichuan peppercorn grinder from The Mala Market and really enjoyed it. Instead of using whole peppercorn, you can grind a small amount and add it during the cooking or at the end to add flavor. If you have this product on hand, you can add 1/4 teaspoon ground Sichuan peppercorn at the time you add the ground pork. This is such a fast and easy way to use Sichuan peppercorn.
When you use super fresh Sichuan peppercorn, the flavor is super pungent and you might not need to use a lot. For example, if you just purchased a bag from The Mala market, you probably only need about half of the amount indicated in this recipe. The longer you store the Sichuan peppercorns, for example, a few months to a year, they will gradually lose fragrance and you will need to use more.

There is a Japanese brand doubanjiang thats gluten-free and I see it quite often at Asian markets and . Compared to the Chinese brand, this one is quite salty and has less fermented taste. If you decide to use this one for your mapo tofu, you should reduce the amount so your dish wont end up too spicy and salty.
