Oil temperature is the main reason why fried chicken doesn’t get crispy. If it’s not hot enough, the chicken needs to cook longer and will get soggy from soaking up too much oil. When the oil is too hot you risk raw meat and burnt breading. Avoid crowding the pan and use a thermometer to monitor the oil temperature to ensure it stays close to 350 F at all times. It will fluctuate but if you stay ahead of it and adjust the burner accordingly, the chicken will cook properly.

How To Make Fried Chicken Healthier

Lets not pretend that a fried chicken sandwich is a healthy option, its definitely a treat meal, but making it at home is a way better option than a takeout version. This sandwich is less than 700 calories and you can also make these changes to make the dish healthier if you so wish

  • Use a low-fat/nonfat mayonnaise.
  • Use chicken breast instead of thighs.
  • Use a whole wheat bun, rather than these brioche buns.
  • Add in some more fresh veggies such as tomatoes and onions to your toppings.

Tips For The Best Fried Chicken Sandwich Recipe

  • Use chicken cutlets, thinly-sliced chicken breasts, or pounded chicken breasts rather than a whole chicken breast for each sandwich. When the cutlets are breaded and fried, they become thick and crispy, creating the perfect ratio of meat-to-bun! A standard-size chicken breast would be way too thick and hard to manage.
  • Use either peanut oil, canola oil or vegetable oil to fry the chicken. I typically use peanut oil because it’s affordable, it has a high smoke point, and it will not flavor your meat.
  • I like to use a deep-fry thermometer to make sure that the oil reaches and stays at a consistent temperature of 350° F. If you don’t have a thermometer, no problem! Instead, when the oil is hot , add a drop of water to the pan — if it sizzles, the oil is hot enough for the chicken. You want to maintain a fairly steady temperature as the chicken cooks, so don’t overcrowd the pan .
  • To ensure crispy chicken, keep the temperature of your oil at a steady 350° F. If the oil is too cool, the chicken will absorb the oil giving it a soggy texture and an unpleasant taste.
  • Never cover your warm fried chicken cutlets with foil. This traps steam and moisture, which will make your chicken soggy. Keep the fried chicken warm in a 200° F oven.
  • Butter and griddle brioche buns for the best flavor and texture!

Fry The Chicken At 325f Until Golden Brown Ensuring To Flip It Halfway

Depending on the size of the chicken, it will take about 3-4 minutes on each side to cook to perfection. The thickest part of the chicken should register 165F and should have a golden brown and crispy exterior.

I suggest frying one or two pieces at a time, as this will help maintain the temperature the entire way. To avoid splatter, I recommend using a deep frying pan for your frying here is a link to my stainless steel saute pan that I used in my video.

  • A cup of buttermilk: This is an essential ingredient to tenderize the meat while making it extra flavorful.
  • Buttermilk can be commonly found in grocery stores, but in case they are not available, I recommend mixing a cup of whole milk with a tablespoon of white vinegar or lemon juice.
  • Stir these ingredients together and set aside for 5 minutes before adding in the spices.

    To Make Popeyes Chicken Sandwich At Home You Will Need:

    • chicken breasts
    • spices
    • brioche buns

    To get the perfect size fillet: pound each chicken breast down to about 1/2 inch thickness then cut in half crosswise so you end up with a chicken cutlet about the same size as your buns.

    To make 5-minute Buttermilk: Using buttermilk gives the chicken the authentic southern taste and helps the crust develop all those small crinkles that make it extra crispy. If you dont have buttermilk at home, rest assured making your own buttermilk at home is super easy and done in 5 minutes. Stir 1 cup of milk with 1 tablespoon lemon juice or white vinegar in a bowl and let stand for 5 minutes until the milk begins to curdle.

    Cornstarch: Cornstarch helps make the crust super crispy and light as opposed to just battering the chicken with just flour. I highly recommend using it for the best results but If you dont have cornstarch at home, replace it with more flour and add 1 tablespoon of baking powder.
