Signs That Your Worcestershire Sauce May Have Gone Off

As we have mentioned before, it is pretty rare that a Worcestershire sauce will fully go off. It is much more likely that it will lose its flavor. Regardless, seeing as it can happen, here are a few signs of spoilage to look for. The first sign to look out for is one you should be able to notice by simply opening the bottle. After a while, a spoiled Worcestershire sauce will begin to release gasses. So, if your bottle makes an audible popping noise while it is being opened, this can indicate that the contents are no longer good. If in any doubt, if there is also a very sour odor emanating from the bottle or any mold, the bottle should be discarded immediately. Asides from these signs, all we can really advise is to have a little taste of the sauce before using it. If it has passed the other tests, the worst that could happen is that it will simply taste a little lackluster. At this point, though it is most likely safe, there is no real point in using it as it wont add any flavor to the overall dish that you are cooking.

Choosing A Worcestershire Sauce Recipe

I started combing the internet for Worcestershire sauce recipes and I didnt make it very far. Just about all of them are a mixture of cider vinegar and soy sauce, with a few seasonings thrown in. None that I found contained anchovies, and all of them are ready to use as soon as you whisk them together.

Sure, instant gratification is nice, and its great for making a quick Worcestershire sauce substitute if you happen to run outbut its not what Im going for. Im trying to craft something special, and waiting for the flavors to come together just right is part of the process.

Disappointed, I shelved the project until I came across a recipe for Worcestershire sauce in The All New Ball Book of Canning and Preserving. The ingredients list is long, but reading through it, I happened to have all the ingredients waiting in my pantry.

To be fair, I have a pretty well-equipped pantry, and most people probably dont have tamarind paste or anchovies in stock at all times. Beyond those two things, the recipe is pretty basic pantry staples and spices.

The original recipe called for 1 tsp. anchovy paste and Ive instead used a 2oz can of whole anchovies. A single teaspoon didnt seem like nearly enough, especially since its the second ingredient in the Lee and Perrins Worcestershire sauce ingredient list. I also substituted maple syrup for the brown sugar since we make our own homemade maple and have plenty on hand.

Im very happy with the results. Ill make it again for sure.

Ingredient Notes And Substitutions

To make this BBQ sauce gluten-free, use tamari instead of soy sauce and omit the vegan Worcestershire sauce . If omitting the Worcestershire, taste and add a bit more soy sauce or a couple pinches of salt as needed.

There is, however, at least one vegan and gluten-free Worcestershire sauce Ive seen online. Or, you can try my homemade vegan and gluten-free Worcestershire sauce .

If you cant find liquid smoke, use more smoked paprika. Start with an extra 1/2 teaspoon and work your way up to 1 1/2 teaspoons, as needed.

I prefer using organic ketchup because some standard ketchup brands use high fructose corn syrup and others that use conventional sugar may not be vegan. Annies organic ketchup is pretty great.

If you want some extra heat and smokiness in your sauce, add 1 or 2 chipotle peppers in adobo sauce or just add a teaspoon or two of the adobo sauce. Or, try 1/4 to 1/2 teaspoon of chipotle chili flakes.

If you cant find vegan Worcestershire sauce, omit it or try my very easy homemade recipe . I have used Annies vegan Worcestershire sauce and the Whole Foods 365 vegan Worcestershire sauce with great results.

  • Add all of the ingredients to a medium saucepan over medium-high heat. Bring to a boil, then reduce he heat to medium-low and simmer until the sauce has reduced by nearly half and has thickened considerably, 15 to 20 minutes. Store leftovers in a covered glass jar for up to 3 months.

    Veganized Charleston Red Rice is a delicious and healthier version of the old southern classic. Served up and down the coasts of South Carolina and Georgia, red rice originated on the West African coast and was brought to America by slaves.

    Red rice typically has a kielbasa or other sausage in it. To veganize the recipe, I used Tofurkey Original Italian Sausage, which has a little bit of spicy heat to it and a very nice texture and flavor. Hot sauce and cayenne pepper are added during cooking, but you can always serve it with the hot sauce bottle on the side. We really liked this recipe and hope to make it again soon.

    Heres the fun part. And by fun, I mean potentially disturbing. Remember when I said that the first barrel of Worcestershire sauce was aged for years? Well, beyond a couple different types of vinegar , molasses, sugar, and salt, the most prominent ingredient isanchovies.

    Yes, Worcestershire sauce is in large part aged, fermented fish paste. But thats why it has that lovely umami bite. If that fact freaks you out, there are several vegan and vegetarian options on the market that, while not Lea & Perrins, come pretty close.

    Beyond those ingredients, Worcestershire sauce contains tamarind, a fruit that has a sweet and sour tang underscored by an earthiness, plus garlic, onion, and spice and flavorings.

    For over a century, no one knew what the spice and flavorings were, but then in 2009, a company accountant came across a diary from the 1800s that had been discarded in a dumpster. In that diary were the contents of the secretly guarded spices and flavorings: cloves, soy, essence of lemons, peppers, and pickles.

    Add these together in the proper proportions, let them sit for 18 months, and when youre done, youll have a sauce that starts out sweet and acidic, but finishes with a peppery bite and mouth-watering, umami sensation.

    How Long Does Worcestershire Sauce Last

    You may not be all that surprised to hear that Worcestershire sauce has an incredibly long shelf-life. Even the date printed on the bottle can point to the fact that it can last for up to 3 years if stored correctly. However, we figure that there is absolutely no reason why this lifespan couldnt be expanded by an extra year. Provided that the bottle hasnt been damaged and the seal is intact, there should be no problems. In fact, it may well be fine for an even longer period of time than this. Given that a large quantity of the ingredients are relatively immune to spoilage, it is much more likely that your sauce will simply begin to diminish in quality instead. So, in terms of picking a date that accurately reflects when a bottle of Worcestershire goes off, the task is nearly impossible. In some case, a bottle nearly a decade old could still taste fine. In other case, this may not prove true. For that reason we would recommend sticking to the guideline date of up to a year beyond the sell-by date.

    After checking fifteen brands of Worcestershire sauce, I found that eleven were vegan. Or at least they are close enough that I would call them vegan.

    For the purposes of this study, I did not count sugar or natural flavor as non-vegan. However, if youre a strict vegan who excludes those ingredients, you can choose an organic brand, since organic sugar is not filtered with animal bone char.
