    Chipotle chillies are ripe jalapeno peppers that have been dried and smoked. They have a medium heat and a beautiful fruity smoky flavour.

    Canned chipotles in adobo are dried jalapeños that have been smoked then canned in a adobo hot sauce that has varying levels of brown sugar, Mexican oregano, and vinegar plus other spices depending on the brand.

    I could easily use up a can in less than 30 minutes but if you open one, use one or two and wonder what to do with the rest, the good news is, they freeze beautifully. Feel free to puree the rest in the food processor then fill an ice cube tray with the puree and freeze for later!

    • The first way is to take the whole peppers, seeds and all and put them in a saucepan with the rest of the ingredients. Leaving the seeds in the peppers increases the Scoville units, which translates asHOT.
    • The second way is to peel off the blistered skins , removeseeds , then put them in a saucepan with the other ingredients.

    Dont forget its the seeds and inside membranes that carry most of the heat.

        Take away my fancy olive oil, my spices, the peppers I’ve been air-drying in my fridge. Take my copper-lined sauciers and vintage cast iron. You can have it all, as long as I get to keep my chipotles in adobo.

        Because these little buggers can do it all it’s easier to think of cooking applications where chipotles in adobo don’t fit in rather than the other way around. How many ingredients are equally at home in sauces, glazes, marinades, braises, soups, sandwiches, beans, and then some? We’re talking top-level pantry stuff here, olive oil and vinegar territory.

        If you’ve never tried them, a quick primer. Chipotles in adobo are smoked and dried jalapeños rehydrated and canned in a sweet and tangy purée of tomato, vinegar, garlic, and some other spices, for a ruddy sauce that packs wicked heat but with plenty of balance and body. They’re complex enough to use as a solo seasoning but friendly enough to play well with othersmore chilies, fresh herbs, honey, vinegar, dairy, you name it.

        A can costs just a few dollars and will keep pretty much forever, so there are few reasons to not keep a couple dozen around. Even when opened, the chilies last for weeks right in the can.         My number one favorite brand is La Costeña.

        Initially I was sure I wasnt going to like this one. It is the only brand Ive tried that includes hunks of caramelized onion in the adobo sauce which made the sauce seem dry and chunky.

        But it was the onions that sent these chipotle peppers over the top. They added a complex, browned, sweetness that really stood out. Mexican tacos will never be the same.

        Our namesake ingredient, the chipotle chili pepper is a dried and smoked jalapeño produced using the age-old craft of smoking them over pecan wood for several days. These intensely smoky, spicy peppers are the foundation for much of the food we servefrom our chicken, steak, and Barbacoa to our beans and vinaigrette.

        Chicken With Adobo Sauce Recipe

        • 2-3 Chipotle Peppers
        • 2-3 Pounds Chicken: breast, thighs, and/or legs
        • Other ingredients from above adobo sauce recipe
      • Take the chicken and sear it in a pot over high heat until the chicken is browned all over, about 5 minutes per side.
      • Set the chicken aside and turn the burner down to medium heat. Pour the vinegar and 1/2 the water into the pan and scrap the bits of chicken off the bottom with a wooden spoon.
      • Add the onion, chipotle peppers, garlic, ketchup, salt, and the browned chicken to the pot. Add enough water to almost cover the chicken.
      • Simmer the chicken adobo mixture over low heat until the chicken is cooked through and tender, about 30 minutes, turning the pieces of chicken occasionally.
      • I like to serve my chicken with adobo sauce recipe over white or brown rice. That way all the adobo sauce is soaked up and doesnt go to waste.
