Fish tacos with coleslaw and a creamy chipotle sauce- Conscious Cooking

First, if youre using frozen shrimp, thaw them out under cold water, drain the seafood and set it aside. Next, grab a large mixing bowl and sprinkle the shrimp with fajita seasoning. Feel free to use a packaged spice mix.

Or you can use our custom homemade fajita seasoning mix by clicking the bolded link. Now, toss the shrimp with seasoning and place them on a preheated grill or griddle. Let them cook on one side for 1-3 minutes depending on size.

A great way to keep them from overcooking is to flip them once they turn white around the vein of the shrimp .

Then, once theyre flipped, let them cook for and extra 30-90 seconds or until theyve turned white all the way through.

Last, remove the shrimp from the grill and start assembling the tacos. We started with grilled tortillas, then lettuce, tomato and avocado salsa, and finally chipotle sauce.

Dont forget to slice some limes to add an extra spritz of lime juice to each taco. Before we say goodbye, a quick word about the chipotle cream sauce.

Which Fish To Choose For Fish Tacos

When you prepare Fish Tacos, you will marinate the fish, then it will be mixed with spicy sauces. It is therefore not necessary to choose a noble fish. Prefer white and rather thick fish filet like cod, whiting, hake , saithe.

It is better to choose fresh fish. If you take frozen fish, let it thaw in the fridge for 10 to 12 hours

Where Do I Find Mahi Mahi

Mahi Mahi is an easy-to-find white fish. Most grocery stores will have it in the frozen fish section even if you live in a location without access to fresh fish. I made my fish tacos with frozen fish but you can also check your local fish counter for fresh fish too. Just make sure to ask if it’s actually fresh or just thawed from frozen.

I still remember my very first fish taco. I had just moved from Minneapolis to Houston, TX and it was over 100 degrees outside. I stumbled upon a little taqueria called Berryhill Baja Grill, and was introduced to the amazing flavor profile of the fish taco. I immediately called my mom and she was not quite as excited about the idea of a fish taco, which was still very foreign in the year 2000 in the midwest. I could sense her hesitation when I told her that it was at the top of my list for her next visit, until

My mother arrived in Texas and I dragged her to Berryhill and made her take a bite of my fish taco. Transformative is all I can say! Her next visit she told me that she wanted to be sure that we visited that fish taco place on the way to my house from the airport. Yep, I had a convert. And although my version is not quite the same as theirs, the flavor profile is very similar. Fish tacos are now on many menus here in the midwest , however I will never forget my first!

The taco is finished off with crunchy cabbage, cilantro and green onions. Dont forget the corn tortillas-flour tortillas, although great for a lot of different types of tacos, are not adequate for this one. Even if you havent liked corn tortillas in the past, try them for these fish tacos. Trust me.

There are quite a few ways you can doctor up this fish taco sauce recipe.

  • Add more garlic: If you love the taste of garlic, add a little more until you are happy.
  • Add sriracha: If you love sriracha as much as we do, dry using it in place of chipotle peppers.
  • Add cayenne: If you want some heat but don’t want to use sriracha, add ¼ to ½ teaspoon of cayenne pepper.
  • Add onion powder: We love to add onion powder when we are in the mood.
  • Add cumin: This works well if you are using sriracha and still want that smoky flavor.
  • Skip the mayo: Use 1 cup of sour cream instead of half mayo and sour cream.

What Kind Of Fish Can I Use

Chipotle Fish Tacos Recipe

For these tacos, its best to use a white-fleshed and mild-tasting fish. I used cod, but tilapia, halibut, and snapper are also all good options. The fish you use should be as fresh as you can get and from a sustainable source. If you do use frozen fillets, ensure they are fully defrosted before you marinate them.

Whats the best advice youve ever gotten from your father?

    Serves 4-6

When I was writing the novel Groundswell, I spent a month in Mexico to research. Translation: I spent a month in Mexico eating fish tacos and surfing. I tried almost every taco stand in town, except one, because I thought it looked too touristy. It was always packed, so finally I decided to give it a shot. Wow wow wow: It was off- the-charts good. They served their tacos with a variety of sauces in squeeze bottles, and my personal favorite was a chipotle sauce. It was creamy, slightly spicy, tangy, with a hint of sweetness. As soon as I got back home, I set off to re-create it. This is pretty darn close. Fish tacos are typically made with fried fish, but I like cooking the fish in a skillet to keep it lighter, although you could certainly fry yours if you wish.

    Ingredients:

    • 1 cup mayonnaise
    • 2 chipotle chiles in adobo
    • Juice of 1 lime
    • 2 tablespoons chopped fresh cilantro
    • Pinch of salt

What Sauce Is Used For Fish Tacos

We’ve visited Mexico a few times and one time, in particular, we sat oceanside at an outdoor restaurant and feasted on the best fish tacos ever. What made these tacos so amazing, you ask… The fish taco sauce!

It was cool, creamy, and tasted like chipotle peppers. It paired wonderfully with the fresh ingredients and fish over a soft taco shell.

We still think about this crema and decided it was time to recreate it.

There are several fish taco sauces online and after plenty of trial and error, we finally adapted one to make it close to what we had in Mexico. It actually reminds us a lot of our yum yum sauce.

The great thing about sauces like this is you can add more or less of the ingredients to suit your taste. Play around with it until it’s exactly how you like it.

    Fish Taco Sauce Ingredients:

How To Make Low Carb Salmon Tacos

I got these Jicama wraps from Trader Joes, but I’ve also see them at Whole Foods. It’s just jicama that has been thinly sliced and perfect for tacos and wraps. This is my favorite way to make low carb salmon tacos.

Another easy option is to just use lettuce leaves or make a salad with mixed greens. I like doing this then crumbling up some tortilla chips on top for crunch

Leftover salmon can be stored up to 3 days in the refrigerator, however it is best eaten the same day.

How To Make Chipotle Sauce For Fish Tacos

Gather your ingredients and process until smooth!

Avocado Mayo avocado oil mayo is my preferred mayo because its jam-packed with healthy fats! You can sub any unflavored mayo you like, though.

Plain Yogurt I added just a bit of plain yogurt, not Greek yogurt, regular yogurt. I dont love using greek yogurt for cooking because it makes the food too greek yogurt tasting I made one version using real plain yogurt, which was delicious. I also made a dairy-free version using plain cashew yogurt. Both were delicious. You could omit this if you wanted, but it thins out the sauce and lightens the flavor to pair well with fish tacos.

Lime Juice Dont omit. Of course, you could sub lemon juice, but you will get a slightly different tasting end product.

Cilantro do not sub with dried cilantro or omit. Its so essential for the flavor!

    Salt adjust to taste.

Chipotle Pepper in Adobo Sauce in most of my chipotle sauce recipes, I try to use half to an entire can of chipotle pepper in adobo sauce because Im not too fond of leftovers, but that makes for a very spicy final product. You can adjust this recipe by adding more chipotle peppers or sauce. First, make the base recipe, then add until you hit our desired spiciness. Remember, you can always add more, but you cant put it back once its blended in!

  • 2/14/2013 icons / ellipsis / ellipsis-horizontal This recipe is excellent! I love the combination of flavors. The cinnamon and lime are especially nice. I agree with one reviewer that it is watery. But add the tomatoes later and the flavors may not mix as nicely. This recipe is good, but different than the fish tacos I’ve had at restaurants where the fish is breaded and fried and the accompaniments are raw, fresh vegetables. I am rating this a 4 because I found the chilpolte pepper ingredient confusing. I thought it said 2 *cans*, which I knew was way too much. I used half a can and that was way too spicy. Now I see my mistake…2 peppers *from* can makes more sense. I will definitely make this again, without so many peppers in the sauce!! icons / like

What Goes With Tacos Other Than Rice

Looking for a side to serve with fish tacos that isnt rice? I have you covered!

    Why This Recipe Works

Easy 5 minutes! FIVE! It doesnt get shorter or easier than that!

Tasty You wouldnt believe how just a few simple ingredients can taste so GOOD together! Youll want to put this easy fish tacos sauce on any and all fish, shrimp, and other meats too. Its not just limited to fish. This quick sauce goes great on everything!

Healthy By using half Greek yogurt and half mayo, I have cut out some of the unhealthy fats and added more protein. You could also use all Greek yogurt for that matter and no mayo at all if you want it even healthier!

Simple ingredients The fanciest ingredient in this sauce for fish tacos is adobo sauce and you can get that in a can of chipotles in the Mexican/ethnic food aisles in probably just about any grocery store. Easy!

How To Properly Cook Salmon On The Stove

When cooking Salmon or any type of fish, use a thermometer to ensure the fish does not get overcooked.

If your salmon has the skin still on, it is easier to remove the skin after the fish is cooked.

Season each salmon piece with salt, pepper, garlic powder, and smoked paprika.

Heat a cast iron skillet or non stick skillet with some oil until the pan is hot. Cook the salmon skin side up first. This way the top gets an nice sear and crust on the seasoning.

The cooking time will vary depending on thickness, but I did 5 minutes first and 4 minutes on the skin side down. I remove the salmon at 140° F, then let it rest for 5 minutes.
