  • Mince 6 cloves of garlic and 2 shallots .
  • Place a large pot on the stove top and heat to medium. Add 2 tablespoon olive oil.
  • Add the peeled and cored tomatoes to the pot and saute for 4-5 minutes, stirring often.
    • I recommend using shallots instead of onions if you can find them. Shallots have a milder flavor and are slightly sweeter than onions resulting in a smooth, silky sauce.

You can even process the entire tomato sauce in your food processor if you dont want any chunks of tomatoes at all, which will give you a very fine and smooth puree of sauce if that is what you like.

How To Achieve The Best Texture When Cooking Spaghetti Sauce

Spaghetti sauce is one of those things that is subjective and everyone has their own ways of enjoying it. Some sauces are thick and chunky and others are smooth and silky.

You can customize this recipe a bit according to your tastes. It can be left thick and chunky or cooked down and pureed for a smoother texture.

  • Once the tomatoes have sautéed for 4-5 minutes, it’s time to smash them with a potato masher .
  • Cook the tomatoes on medium heat for another 10 minutes, smashing them often with a potato masher. They will begin to break apart and look more like a sauce.
  • After 10 minutes or so add 1 8 oz. can of tomato sauce, 1 tablespoon sugar, ¼ cup fresh chopped basil, 1 teaspoon each of fresh oregano and thyme, and ½ teaspoon kosher salt and pepper.
  • Cook for another 5 minutes, all the while continuing to mash the tomatoes with a potato masher.
  • Add 1 tablespoon unsalted butter to the sauce and simmer for a few more minutes on low or until the butter has melted.
  • If the sauce is still too chunky for your tastes feel free to pulse it with an immersion blender until it reaches your desired consistency. Be very careful when using an immersion blender in hot spaghetti sauce! Be sure to turn the heat off before using an immersion blender in a pot of sauce on the stove top.
  • What Kind Of Tomatoes Do You Use For Sauce

How To Make Homemade Spaghetti Sauce

Were technically making a herea quick-cooking sauce thats relatively thin and tastes strongly like tomatoes . There are all kinds of different types of tomatoes out there, but this recipe is designed around crushed canned tomatoes. Crushed tomatoes are perfect because they have the ideal consistency for pasta sauce, so you dont have to drag out the food processor to get rid of the chunks.

If you have another type of canned tomato in the pantry, you could certainly use it for this recipe. Each type has a different consistency. Heres how they differ:

    • Diced tomatoes: Firm chunks of chopped tomatoes in tomato sauce. These tomatoes are treated with calcium chloride, so the pieces wont fall apart as they simmer.
    • Crushed tomatoes: Semi-pureed tomatoes in tomato sauce. Crushed tomatoes have a thicker texture than tomato sauce, and they sometimes contain a little tomato paste.
    • Tomato sauce: A thin, fully pureed sauce made from tomatoes. These jars often contain added seasonings, like basil or oregano, and are usually thinned out with water.
    • Stewed tomatoes: Large chunks of soft tomatoes in tomato sauce, sometimes left whole or chopped into rings. Many stewed tomatoes also contain onions and celery.

Four: Cook Your Onion And Garlic

At this point you have a couple options. If you just want diced tomatoes, you only need to cut your tomatoes up small and freeze them as-is. Simple! If youre going to make spaghetti sauce from scratch, now is when you will begin cooking the onions and garlic.

Start by heating up about a tablespoon of olive oil in a small skillet, on medium heat. Dice your onion while it warms. I actually used onions that were also from my garden. Theyre tiny, but man they pack a punch! My eyes were burning and watering like crazy, and the kids got a kick out of me flailing around the kitchen I mean, I was super cool about the whole thing.

Dont forget to keep an eye on the oil while youre chopping, so it doesnt burn. Youll know its hot enough when it moves like water in the pan. Reduce the heat and add your onions, stirring often. When theyre almost translucent, add minced garlic . Garlic burns easily, so only cook it for a minute or two, and watch it closely!

Prepare your favorite gluten free pasta according to the package directions and drain. You can make some fresh pasta if you’re feeling really ambitious .

The great thing about this sauce is that it’s super versatile. You can serve it on top of your favorite variety of noodles. Spaghetti, linguini, farfalle, penne, or ravioli are all delicious choices.

If you’d like to keep things low-carb you can opt for zucchini noodles or spaghetti squash.

For a salty or briny kick feel free to add chopped Kalamata olives or capers to this pasta.

I love a generous amount of freshly shaved Parmesan, Romano, or Parmigiano-Reggiano along with some minced basil.

    Spaghetti Meat Sauce Recipe

Homemade spaghetti meat sauce is a regular around my house. It’s one of those recipes that my kids ask for all the time, “mom make your spaghetti sauce.” My kids are young right now but I am hoping it’s one of those recipes that they come back home and ask for as they get older .

This spaghetti meat sauce simmers on the stove top and every time I make it, I am reminded that there is not a better scent than spaghetti sauce simmering away on the stove. It’s like the smell of comfort and home.

I love the convenience of a canned marinara sauce but sometimes you want a homemade, total comfort food dinner. And for me it’s usually this spaghetti meat sauce. It’s the perfect recipe to make for dinner when you have some time on your hands and just want some delicious classic, comfort food.

Helpful Hints For A Perfect Spaghetti Sauce:

How to Make Spaghetti with Meat Sauce

1.) Pick the right crushed tomatoes.

There are so many ways to make sure your sauce can be perfect every time. You first need to start with the best quality crushed tomatoes. When you buy your crushed tomatoes, make sure that you are buying ones that do not have any seasoning added. Often times you can buy crushed tomatoes with basil and salt already added, which can throw off the taste when you take into account the spices I add to my tomatoes.

You also want to decide if you like a chunky or smooth spaghetti sauce. We prefer a smooth sauce, so I like to buy Tuttorosso or Hunts crushed tomatoes. If you prefer a chunky sauce, you may want to use whole tomatoes or buy a chunky canned crushed tomato.

2.) Add Ground Beef or Italian sausage.

You can easily add ground beef or Italian sausage to this sauce. We typically brown it before adding it to the sauce. Another thing that we like to add is the big sausage links. That way, if the kids dont like them they can pick them out without it affecting the entire pot of sauce.

3.) Use canned crushed or fresh tomatoes.

When using canned tomatoes vs fresh tomatoes there are a few things to consider. If you are growing your own tomatoes at home, it is obviously going to be cheaper to make a sauce using your own tomatoes. You will need approx 15 medium-sized tomatoes to equal 3 28 oz cans of crushed tomatoes.

Lets take a look at how to make a homemade spaghetti sauce using fresh tomatoes.

Two: Blanch And Peel The Tomatoes

Blanching is the process of very lightly cooking a food in hot water, then stopping the cooking process using cold water. Blanching only takes a couple minutes, and will make the skins slide right off with almost no effort. You can use this same process for peaches! If you have a stock pot that came with a strainer, it will be even easier. Just place the tomatoes in the strainer and lower it into your steaming water. Set a timer for one minute youll see the skins starting to split by the time the minute is up.

Remove the tomatoes and place them in an ice bath, which is simply a big bowl of ice water. Or do what I did forget to set up the ice bath and run them under the faucet instead. The cold water serves two purposes it stops the tomatoes from cooking any further, and cools them so you dont get burned. When the tomatoes are cool enough to handle, you can begin skinning them. The peels should slip off very easily using only your fingers. If they dont, dunk them in the hot water for another 30 seconds and try again. I had a few Romas from our food co-op that I added, and they were a little more feisty. Next time I would give them an extra minute in the pot, and cut a shallow slit around their middles in addition to the X.

    How To Thicken Spaghetti Sauce

Why is this homemade spaghetti sauce rich and just the right thickness even though it is meatless? Here are a few things that make a difference:

    • Add finely chopped or grated vegetables. This is another great reason why I love adding finely grated carrots. Not only do they add natural sweetness to the tomato sauce, but they also thicken the sauce and give it a nice body.
    • Use the right kind of canned tomatoes. Many recipes will use tomato sauce. That’s fine, but if you’re after thicker consistency, canned crushed tomatoes will give you a better result. And like I said earlier, something I don’t always add is a couple tablespoons of tomato paste which could also help.
    • Do not add too much liquid. In this recipe, I use about ½ cup water earlier on to get things going. Later, I watch the sauce as it simmers and I add a little bit more if needed .
    • Simmer the sauce. You’ll notice that once the sauce boils briefly, I turn the heat down and let it simmer a good 20 minutes. If I’m not in a hurry, I leave it a few extra minutes, watching the consistency and adding liquid if it turns too thick.
    • Other ways to thicken the sauce. Not used in this recipe, but you can also use a little bit of corn starch or even add an egg to thicken the sauce . I don’t use either of these methods in my recipe because it is just the right thickness for me.
