Today, I decided to try again. I had a very long list of ingredients that I wanted to try this time. As I was adding things to the sauce and tasting as I went along, I suddenly realized that I had exactly what I wanted.
I stopped there and very happily asked my husband to taste the sauce. He was thrilled with it. I will be quadrupling this recipe next time I make it and freezing the extra to have for future meals.
This is a pretty spicy sauce as it is written however, if you like more heat, feel free to increase the Tabasco and cayenne. I served this sauce over pulled pork and it was an instant hit.

Step One Throw all the ingredients into a saucepan. Then give it a good stir.
Step Two Bring to a simmer on the lowest heat, stirring all the time. As you stir, take care to scrap the sides and bottom of the pan so it doesnt catch and burn.
At this stage the sauce smells very strongly of vinegar and wont taste at all nice. Dont try it and dont be put off!
Fuss Free TipThe sauce is a thick mixture and if you boil it, it will splatter and spit, so go gently. If you overheat it, it will make a horrible mess. Those sugary spits and splatters are hot and can burn. You may need a diffuser ring, even on the smallest burner on the lowest heat.
Step Three Your barbecue sauce is ready once it has reduced down to about the same volume and thickness of the ketchup you started with. It will be glossy and nicely coat the back of a spoon.
Once cool, transfer to a jam jar and keep in the fridge.
The BBQ sauce is ready to be used straight away. However, the flavour develops over time, so is far better the next day, or a few days later once the flavours have had a chance to mellow and meld.

- Check the labels of your ketchup and Worcestershire sauce – the main culprit to look for here is malt vinegar or any other vinegar made from grains. But you never know, depending on the brand there could be some other gluten lurking there as well.

How To Make Chicken In Barbecue Sauce
In a small bowl, mix the olive oil with lemon juice. Place the chicken joints in a roasting tin with the onion and the salt and black pepper.
Brush the chicken pieces with the oil and lemon juice dressing. Cover the top of the roasting tin with cling film and place in the refrigerator for 30 minutes.
Then, when you are ready to cook the chicken, preheat the oven to gas mark 6/400 degree F . Remove the cling film and place the roasting tin on a high shelf and cook for 25 minutes.
Meanwhile combine the entire sauce ingredients in a jug and whisk everything together thoroughly. When the chicken is done remove the roasting tin from the oven and pour the sauce all over giving the joints a good coating.
Return the chicken to the oven and cook for about another 25 minutes. Serve the chicken with some of the sauce spooned over. This can be eaten with plain basmati rice.
