On the surface, the idea of a tangy hot mayonnaise may not strike the mouthwatering response of its tomato-based brethren, but one taste and I’m sure you’ll be sold.

  • 1 cup apple cider vinegar
  • 1/2 cup apple juice
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons freshly squeezed juice from 1 lemon
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon cayenne pepper

Who Invented Alabama White Sauce

Alabama-style white barbecue sauce was invented by Robert Gibson at Big Bob Gibsons Bar-B-Q in Decatur, Alabama. He would serve it on his chickens for weekend backyard barbecues back in the 1920s before he had his restaurant. Each smoked chicken would be dipped in this sauce to keep it from drying out. The sauce began to be bottled and sold at grocery stores in the 1990s, but why buy it when you can make it anytime you are craving it?

Ways To Use This Sauce

There are so many ways to use this tangy sauce. I love dipping chicken fingers or BBQ chicken in it. You can also spoon it over grilled steak, drizzle it on your burger, or even put it on baked salmon. I know some people who like to dip their pizza in it! I know that sounds unexpected but its not that much different than dipping pizza in ranch dressing

What You Need To Know About Alabama White Sauce

If you’ve been coating wings in only hot sauce or BBQ, you’re missing out.

You could probably tell where someone grew up based on the first thing that comes to mind when they think of barbecue. A tangy, vinegar-based sauce? North Carolina. More of a mustard-based style? Fine, South Carolina then. Love brisket and smoked turkey? Texas.

And if you answered “white sauce,” we could probably pinpoint your hometownor, at least, the BBQ joint you ate at during that one road trip and couldn’t get out of your head ever since. Decatur, AL, has a population of less than 56,000, and its known as the birthplace of Alabama White Sauce. Big Bob Gibson Bar-B-Q is credited with inventing the peppery, mayo-based condiment, which the restaurant first slathered on pork and chicken at weekend cookouts in the late 1920s.

A mayonnaise-based sauce may sound off-puttinguntil you try it. The tangy flavor is kind of like ranch dressing, and just as dangerously addictive. It’s also every bit as versatile: Big Bob’s recommends pouring it on chicken, pork, seafood and turkey, and using it as the secret ingredient in homemade cole slaw and potato salad.

The sauce isn’t confined to Big Bob Gibson. Other companies have bottled up their own blends, like Full Moon Bar-B-Que in Birmingham, AL, and Firebud Brands in Atlanta, GA. The trend stretches as far North as New York: Manhattan-based Blue Smoke slathers its chicken wings with its own take on the sauce.

White Barbecue Sauce History

Alabama White Sauce + Video

Bob Gibson, of Big Bob Gibson Bar-B-Q in Decatur, Alabama, is credited with creating white barbecue sauce in 1925.

The white sauce was never really intended to accompany meats like beef brisket. Instead, it was meant to accompany chicken and turkey and to be used as a finishing sauce rather than as a basting medium while the meat is grilling.

Gibson smoked whole chickens for three hours and to keep them from drying out, he devised the white sauce to dunk them in once they came off the pit and were held for service. He thought the fat in the mayonnaise helped them to stay juicy.

What Is Alabama White Sauce

The head pitmaster of Big Bob Gibsons restaurant, Chris Lilly, first shared their restaurant original recipe which was measured in gallons and is a fairly simple mixture of mayonnaise, corn syrup, vinegar, and salt/pepper. My zesty version has the same sweet and tangy notes that make all BBQ sauces the perfect complement to smoked meats, but an Alabama white sauce is mayonnaise based, instead of tomato based, which gives it a great creamy flavor profile.

I first met Chris at a Guinness World Record event for the Largest Grilling Lesson in 2017 , and I was so incredibly impressed with his knowledge of all things BBQ. I consider my recipe an homage to the restaurant-style original with a little Hey Grill Hey kick.

What Is White Bbq Sauce Made Of

Breaking with the tradition of making barbecue sauce from tomatoes, Alabama white sauce starts with a mayo base. I like mine extra tangy so I like to use plain Greek yogurt instead. The other ingredients are as follows.

  • mayonnaise/Greek yogurt/Miracle Whip
  • Worcestershire sauce
  • other spices

Some recipes like to add a little sugar to balance out the tang but I dont. If you like that little added sweetness feel free to add in some honey, brown sugar, or white sugar. Just be sure to start small.

The spices are the typical ones for bbq like garlic powder, paprika, salt, and pepper. Cayenne is another one that is added but I prefer a few dashes of hot sauce.

The mustard used can be varied as well. Spicy brown is a great one to use. If you are looking for a slightly different profile, try adding Dijon or honey mustard.

If you like it hot, you can add extra hot prepared or grated horseradish but I like to use a prepared horseradish sauce. You can find it near the deli section.

What Does White Sauce Taste Like

This thin sauce has a smooth and creamy taste with a tangy finish. Its also seasoned with lots of freshly ground pepper. Some recipe versions contain horseradish, which gives the sauce more of a spicy kick, however, the original does not.

Im a bit of a purist and prefer the original flavor, however, you can easily add in some of your favorite spices or kick it up with some hot sauce too.

Not everyone has a smoker, but anyone can do a delicious pork shoulder right on their grill. If you have a smoker, set it up for an 8-hour smoke.

The Keys To A Proper Alabama White Sauce

The sauce has taken on a few modifications over the years, though the key characteristics remain: It needs to be thin and creamy with a tangy bite, Michael Kimball, the test kitchen manager at Savory Spice, says, adding that mayo and vinegar are the essential ingredients.

Savory Spice makes its variation with a smoky spice blend, horseradish, and plenty of alliums . Raymond makes his version a touch sweeter and adds horseradish and a little cayenne to the mayonnaise, vinegar, and lemon juice.

The acidity of Alabama White brightens and heightens flavor while fat-filled mayo helps carry fat-soluble flavor compounds to your taste buds, Kimball says. This flavor-enhancing combo makes whatever you put it on taste better and more like itself and adds a complementary horseradish bite.

Despite being picked up and sold outside of the state, the verdict is still out for when Alabama white sauce gets to the level of fame as Carolina vinegar sauce or thick and saccharine Kansas City sauce. Still, Alabama white sauce is a hit wherever it goes. Raymond sells Alabama White Gold at his restaurant and online through his company Duces Wild. Its currently the brands bestselling sauce, and sales top even the competition sauce that Raymond considers his flagship.
