Quite a while ago I did a post on Penne with Vodka Sauce. Its a tasty but time consuming recipe involving oven baking the sauce for quite a while. This vodka sauce is similar but with no oven time. Just reduce the sauce for a while on the stovetop. Much easier.

Vodka seems like an odd partner to tomato sauce, but the alcohol in the vodka becomes an emulsifier. It holds the acids and the oils together and the result is a creamy smooth taste.

The shrimp in this recipe pairs well with the richness of the sauce. And the shrimp is so easy to cook right in the sauce. You should use pretty big shrimp20 to 30 shrimp per pound size. The sweetness of the shrimp combined with the smooth tasting sauce is what makes this a super dinner.

At the same time that I was making our dinner, MJBakesaLot.com, was baking bread to have with our meal. MaryJo sliced and buttered some of her bread, and I toasted it on the stovetop in a cast iron griddle. The combination of the shrimp, pasta and bread was amazing.

This recipe makes around a quart of shrimp penne alla vodka sauce which is enough for 4 or 5 people. Since the sauce is so good, Im saying 4.

Shrimp Fettuccine Cooking Tips

Use canned stewed tomatoes for the sauce. Canned stewed tomatoes give this dish a nice rich, deep, simulated slow-cooked tomato flavor. If you use regular canned diced tomatoes, that would give this dish a brighter flavor.

Use frozen or fresh shrimp. I used frozen shrimp, which I thawed prior to including in this dish. But you can use raw shrimp as well just be sure to adjust your cooking time as noted in the recipe.

Sub out the protein if you prefer. If you dont like shrimp, you can easily make this without and have it as a vegetarian pasta. As for chicken or pork, I honestly dont think it would be the same with any other meat. It might, however, be delicious with meatballs. If you try that, please do let me know how it tasted!

Cleaning And Preparing Shrimp

Bertolli Vodka Pasta Sauce Recipes

You can use any size of shrimpthat you want for this recipe. I prefer something in the large to jumbo range.

There are a few things you want to keep in mind any time you are cooking with shrimp.

Shells I prefer to buy shrimp that have already had their shells removed, as I do not cook shrimp with them on. And it is one less thing for me to do.

Deveining What does this mean? Well, if a shrimpis de-veined, it has been cut down the outer edge of the shrimp and the black vein has been removed.

The vein is really the digestive track of the shrimp. So if you are eating shrimp that still have the vein, you are essentially eating shrimp poop.

Tails Leaving the tails on looks very pretty, and I find them commonly sold with tails on. But you do have to remove the tails before eating. So it is easier to have the tails removed prior to cooking, unless you dont mind pulling them off as you eat.

Pre-Cooked vs Raw I almost never buy pre-cooked shrimp because I like to cook them in sauces and recipes directly. Pre-cooked is handy for things like shrimp cocktail.

I can count on my two hands the number of times I have bought jarred spaghetti sauce. To me it is just easier to use crushed tomatoes and spices and make my own. Plus having a child with many food sensitivities makes finding ready to use products difficult.

How To Know When Shrimp Is Cooked

Shrimp cooks FAST and can easily become overcooked.

When shrimp is overcooked, the texture is very rubbery.

When I cook shrimp I watch for color changes.

First, watch for the bottom half of the shrimp on the pan to start turning white instead of the clear, grayish color of raw shrimp.

When I see it get up almost halfway, close to where the shrimp is split down the back from the de-veining process, I flip the shrimp.

Then continue cooking and watch that crevice down the back of the shrimp. As soon as the very bottom of that valley or cut in the shrimp is white and no longer gray, I remove them from the heat.

Dont leave the shrimp in the pan too long, as it will keep cooking. If you need them to sit for a moment, remove from the pan and put in a bowl to get away from the hot metal.
