Ways To Modify The Chicken Parm
- We removed the searing step of the chicken, but if you like getting maximum flavour from your meat, sear the chicken breast with a bit of olive oil in a skillet until the sides are brown for about 10 mins & set aside.
- Adding a handful of small, fresh tomatoes to this dish amplifies the flavour, but if you dont have any, just the canned diced tomatoes will do. Like many traditional Chicken Cacciatore recipes, you could also add mushrooms & sliced red peppers during the step where we saute the onions. We omitted these simply because the kids dont like a lot of extra in their sauce. A splash of wine is a nice flavour enhancer too!
- We like leaner poultry & use skinless, boneless chicken breast, but this would taste delish with chicken thighs & skin-on chicken as well.
- For our dairy-free readers, you can skip the last step of adding mozzarella.
- We used a small heart-shaped food cutter for the cheese as a fun way to get the kids involved, but its a totally unnecessary step & you could simply slice or shred the mozzarella.
- As a large family, this recipe yields enough to serve six adults, and since kids have smaller portions, youll have lots of leftovers for another meal. If six chicken breasts is too much for your family, reduce the portion, as well as some of the ingredients. When we were a family of four, for instance, Id only used 1 can of dice tomatoes.

I will be the first to tell you that a kitchen stocked with all the fancy, expensive cooking tools does not necessarily equate to quality cooking. I learned how to cook from my Dad who used the same simple pans & pots for years until they fell apart & his food was incredible! BUT, if youre looking for a fabulous addition to your culinary cooking equipment selection, I highly recommend investing in a Braiser. Why? It has the same capacity of a Dutch Oven & Skillet in one. Braisers are great for searing + browning, simmering, sauteeing, roasting, and, of course, a good braising a combination-cooking method that uses both wet and dry heats: typically, the food is first sautéed or seared at a high temperature, then finished in a covered pot at a lower temperature while sitting in some amount of liquid . .
If purchasing a Braiser isnt in the cooking cards right now, no sweat! Weve made this dish MANY TIMES in a basic low & deep sauce pan. Instead of finishing with a cheese broil, just add the mozzarella near the end of the cooking time so it melts on top in the sauce pan.

Authentic Italian Spaghetti Alla Puttanesca Sauce
Puttanesca sauce is a popular Italian pasta recipe. The original Neapolitan ingredients are simple and flavorful. The ingredients include onion, garlic, shallot , olives, capers, and anchovies .
As an Italian, I can tell you we love to talk about food and discussing the correct ingredients for traditional dishes. Since there are regional versions of many popular dishes, we often dispute the correct way to cook something!
However, when it comes to Puttanesca there are a couple of strict rules all of us Italians think are true: No Parmigiano cheese if you make it with anchovies and no basil! That’s it!
Now, if you want to break the Italian rules, I won’t tell. Enjoy it any way that makes you happy. That’s the most important part.
Variations To Puttanesca Sauce
This simple and delicious pasta dish is fantastic as is without additional toppings. If you crave a more hearty dish try adding a good quality canned tuna or salmon for an extra protein boost.
Wine – add a splash of white wine at the end of cooking to enhance the flavor of the sauce
Olives – you can also use kalamata olives for this recipe!

Substitutions For Anchovies In Puttanesca Sauce
Help! I don’t like anchovies, what can I use instead? The best substitute for anchovies varies by dish.
Substitutes include fish sauce, shrimp paste, sardines, soy sauce, or miso. The only one I would recommend for this recipe is a bit of Worcestershire sauce .
If I’m being honest, I will tell you that the taste of anchovies is not strong in this recipe. It creates more of an unami flavor that complements the sauce and pairs well with the taste of capers and olives.
I would definitely try this recipe with the anchovy to try something new! I bet you will acquire a new appreciation for the taste.

Where Does Spaghetti Alla Puttanesca Get Its’ Name
Well, the name isn’t pretty, or appropriate for that matter! Let’s get it out of the way: Yes, puttanesca literally translates to of, relating to, or characteristic of a prostitute, to quote the OED.
There is a theory that the dish was invented in one of many bordellos in the Naples working-class neighborhood of Quartieri Spagnoli.
The explanations for the origin of puttanesca are many, just as the sources and scholars who have tried to trace the first inventive chef who began to call this spicy dish puttanesca.
Originally, it was called alla marinara the current name began to appear after World War II.
Some say that the name originated in the brothels of the Spanish Quarters .
Some argue that, the modern name of this preparation refers to pasta prepared as it comes, that is, easy to cook, without frills or complicated preparation.
