Its premium brand of hot sauce, Bulliards, incorporates more pepper solids than the more commonly found “Louisiana Supreme” hot sauce, and has a more nuanced depth of flavor. Rick says, “Its a little different from what I’m used to — it had a heat that hung around a bit, but it was nice.”

PrairievilleLouisiana company HongryHawg produces a number of fancifully named hot sauces, including “Bayou Love Potion” and “Bayou Passion.” But we couldnt help but choose the “Butt Burner” for this little experiment. Neither the author nor the NOFD would like to reveal if the sauces name packed an, ahem, more literal punch, but one thing was for sure: this sauce is hot. Really hot. In fact, it packed the most wallop of any sauce we tasted, which was ultimately its downfall. The flavor was buried by a spice level that can blow out your palate. “The heat doesn’t hit you at first, but it really develops,” Rick says. “It’s a good flavor, but you can’t use it too much, which is a shame, because it has a nice taste to it. And it’s thick, too, like a barbecue sauce.”

Which Vinegar Should I Use To Make Hot Sauce

This is the question with ANY hot sauce, as there are many choices, and each will compliment your chili pepper choice in different ways. Most common is Distilled White Vinegar, which is inexpensive and strong in flavor.

Use this if you are seeking to mimic the flavors of the larger commercial brands. White Wine Vinegar is a bit more mellow, and Rice Vinegar even more so, with a touch more sweetness.

Red Wine Vinegar is made from fermented red wine, which will introduce a slightly fruity flavor to your sauce.

Apple Cider Vinegar is quite fruity, and preferred for when youre seeking a fruity sweetness. Malt Vinegar has a strong, distinctive flavor from its barley ale beginnings, and well worth experimentation.

There are others to consider, such as balsamic vinegar, coconut vinegar, raisin vinegar and more. Experiment to your personal tastes.

How New Orleanss famous cayenne condiment conquered America

Things can get awkward fast for David Guas when some of his regulars walk through the door. Guas is a New Orleans native and owns and operates Bayou Bakery in Arlington, Virginia. For the last seven years, hes stood firm in his love for and commitment to Crystal hot sauce, a reddish-orange Louisiana sauce with just three ingredients: aged red cayenne peppers, vinegar, and salt. There are bottles on every table right next to the salt shaker and Guas sells it behind the counter, too.

I think this hot sauce is drinkable, Guas says. Theres just something about the blend and balance of vinegar to salt to heat. Its perfect.

But heres where things get really weird. Some of Gauss most loyal customers are also New Orleans natives, and they hail from a long line of Louisiana hot sauce families. I can tell you personally that I know people from other hot sauce families that live here, that eat here, and that bring their own sauce, Guas says. They have to accept that Im a Crystal guy, and Im not going to change. Guas isnt a paid spokesperson for Crystal. Hes simply one of the many chefs, consumers, and devotees who consider themselves fans.

It was predetermined, Baumer III explains. My dad and my grandfather are both named Alvin. So she thought it would be an easier way to tell us apart. The name just stuck.

Cajun Chef Louisiana Hot Sauce

St. MartinvilleLike Crystal, Cajun Chef is a good “slather it on anything” sauce, due to its decent balance of flavor, without a ton of heat. As Ken noted, “Theres nice vinegar here — its a good all-around classic-style Louisiana sauce.” However, this sauce just didnt do anything particularly notable to stand out positively from similar sauces, but also didnt do anything to stand back. In the end, we decided that this one was tasty, decent, and also unremarkable.

How To Make Fermented Louisiana Hot Sauce

Ingredients Needed

  • ½-1 cup white wine vinegar to your preference

The Method

First, ferment the chili peppers. Chop the peppers then pack them into a jar, leaving at least 1 inch of head space. The peppers may rise a bit when fermenting.

Next, mix 1 quart unchlorinated water with 3 tablespoons sea salt. Pour just enough brine over the peppers to cover them, pressing them down a bit as you go. It is important to keep the peppers covered with brine to avoid spoilage. Check this daily.

Screw on the lid and set the jar away from direct sunlight to ferment for at least 1 week. Ideal temperatures are between 55-75 degrees F. The most active fermentation period is between 1-2 weeks, so be sure to monitor it during this time. Burp the jars often by unscrewing the lid a bit to let out some of the accumulating gases. After 1-2 weeks, the fermenting activity will diminish and the brine will turn cloudy and taste acidic.

Pour the fermented peppers, including brine, into a pot along with the vinegar. Bring to a quick boil. Reduce heat and simmer for 15 minutes. Alternatively, you can strain out the fermented peppers and discard the brine, then boil the peppers with 1 cup vinegar and 1/2-1 teaspoon salt. Some people prefer to use the brine.

I had NO idea!

Im a huge Tabasco addict, I even carried a bottle of it all the way around the Annapurna Circuit in Nepal, but I had no idea that the South is the home of hot sauce. Wandering down Bourbon St. we found a whole shop dedicated to every possible variety of hot sauce, you really wouldnt believe so many exist.

Alongside every variety of Tabasco known to man, there were hundreds of more imaginatively named fiery condiments. How about a bottle of Ass in the Tub or maybe a drop of Bayou Butt Burner, Ass in Space or Ass in Hell?

Tabasco has been exclusively produced in Louisiana from tabasco peppers since 1868 and is the earliest recognisable brand of hot sauce. I didnt know that.

The kids and I thought Harry Pooter would be a particularly fine choice for JK Rowling fans.

If you really think you can handle the heat, there was the special collection of killer sauces. Ghost chili extractions so insanely hot that we had to sign a disclaimer before we could taste even a tiny, measured drop. I signed my life away and gave it a go, they were pretty hot. What more can I say?

Hot Sauce New Orleans

It seems so long ago now!

On our first night in Lancaster county PA, in some nondescript but friendly motel, we were just settling down for the night when we hear a bellow from the next room:

Get yourself in that tub or Ill be opening a can of Whoop-Ass on yall!

We didnt think people really said that. But they do and now so do I, with full Southern accent.

The kids think its hysterical so I carry on, its one of those shared memories that makes family life so much fun.

But why am I writing a post about Whoop Ass?

Well, weeks later, after driving up to Niagara falls and heading south, down the east coast, we found ourselves in the charming town of Charleston, South Carolina.

Charleston is a very fine town indeed, with great food and a fascinating central market. You can go click on that post if youd like to know more.

The most fascinating thing we found in that market was this, a genuine can of finest quality Whoop-Ass. Cue hysterical laughter from all of World Travel Family.

The next time we saw a can of Whoop Ass was in gorgeous New Orleans. We were there so briefly, we really wish we could have stayed longer, but we caught the Mardi Gras parades, visited the Cities of the Dead to see the grave of Voodoo Queen Marie Levaux, ate some great southern food, really great, see this post about some of the things we ate, and made a discovery.
