You Add The Pasta To The Water Before It’s Boiling
If you’re crunched for time, you may think you can get away with adding dry pasta to water that is just simmering – but you may regret it. “Make sure the water is at a rolling boil before adding the pasta. Brown Ground Beef : In a skillet pan, over medium-high heat, brown and crumble the ground beef with the onion, garlic, and salt. Once beef is no longer pink be sure and drain the excess grease.

If you want thicker sauce, simmer your tomatoes uncovered in a large saucepan, until thick enough for serving. This might a take 20 minutes to a couple hours. Stir frequently to avoid burning. The amount of sauce may be reduced by nearly one-half.
- An easy way to do this is to place sauce in a slow cooker and leave the lid off. Let it cook until thickened.
- Or bake uncovered in the oven at 350. You will still need to stir often.
TIP: Optionally, you can just process your sauce as it is now. Skip the cook down time and add your vegetables and other ingredients. Put it in jars and process in a pressure canner.
This will simply give you a thinner sauce. Add a can of tomato paste to thicken the sauce when you prepare your meal. I have done this when I did not want to spend the time to cook down. But it is much nicer if you cook it down now.

Do you need to simmer it all day? NO! This is another myth that needs to be dispelled. If you simmer sauce all day, youll end up with tomato paste.
Adjusting Ingredients While Canning Spaghetti Sauce
Dried seasonings can be adjusted to taste. We are not big oregano fans, but we love basil. Ive been known to just leave oregano out at times.
We like a bit of sweetness to our sauce, so I go with the 1/2 cup sugar.
You can also add up to 1 pound of fresh, sliced mushrooms. You can use either peppers or celery or a combination of both. Just keep it to 1 cup total, NOT 1 cup each.
Caution! Do not increase the portions of onions, peppers, or mushrooms.

Spaghetti Sauce With Meat
This is a ready to heat and eat home-canned pure bolognese-style spaghetti sauce, with ground meat in it.
This recipe requires a pressure canner. If you dont have one, make instead a pasta sauce for canning in a boiling water canner, and fry up ground meat to add at the time of serving.
There is a meatless version of this Spaghetti Sauce whose processing time is two-thirds less.
There ends up being very little meat in this sauce. Some people may decide that this version with a very small amount of meat in it may not be worth the extra time and bother. If this is your thinking, you may wish to consider instead just canning the meatless version, and canning pints of ground meat separately, then combine for serving. Or, cooking up ground beef and adding to the meatless version at time of use.
