I wondered this myself when trying to figure out what to call this recipe other than Sauce. In my house we just know what Sauce is because there is no other sauce we care about.
Both sauces are made with meat but the difference between the difference is really in the ratio of meat to tomatoes and sometimes the meat used itself. Ragu can also be made with more vegetables than what I have used in this recipe. Many people like to add finely chopped celery, carrots and or mushrooms. I do not. If you would like to do this cut back on the meat a tiny bit and sweat the added vegetables till soft along with the onions and garlic.

To Cook The Best Spaghetti We Have A Few Simple Tricks
Check the package directions of the spaghetti you plan to cook. On the box, there should be an approximate cook time for al-dente, which means the pasta will be tender, but not mushy. It will still have a bit of a bite, which is perfect.
When you know the suggested cook time, set a timer for a minute or so before it. So if the box suggests 10 minutes, set a timer for 8 minutes.
This way, at the 8-minute mark, you can check on the spaghetti to make sure it isnt done already. The box directions are a helpful guide, but its always a good idea to check the pasta early!
Cook the spaghetti in salted water. The water should taste salty. This seasons the pasta as it cooks and is necessary for the best-tasting pasta.

And now we get to the most crucial phase of the process: the long cook. Browning meat adds flavor, but can toughen it. How do we get great browned flavor without reducing the tender meat to dry rubble?
The whole reason I was extra excited for Bolognese season to start this year was because of a new red sauce technique I developed simmering it in the oven instead of the stovetop.
Not only does the oven deliver more even heat and better reduction with less mess, it also creates delicious caramelized bits of tomato on the surface of the sauce and around the edges of the pot, which you can stir back into the finished sauce for richer, deeper, more complex flavor.
What if I were to do the exact same thing to my Bolognese? How To Make Il Soffritto
Finely chop equal amounts of carrot, white onion and celery. To make Italian beef ragu, I use 1 carrot, 1 celery stick and 1 white onion.
Saute the chopped veggies in a large pan with a little olive oil. The key is to saute the veg slowly on a low/medium heat so they soften and release all the delicious flavours without browning or burning
Once the vegetables are soft add the ground beef and pork to the pan and brown then add the red wine and continue to cook until the wine has reduced by half.
Once the wine has reduced add the tomato passata/pureed tomatoes and half of the beef stock. Stir the sauce and let it simmer on a low heat for 2 and a half hours topping up the rest of the stock as it reduces.
Tip: Remeber to check on the ragu every now and then to stir it and add extra stock or water if needed.
