  • HALF the sauce Add the noodles then just HALF the sauce. This allows the noodles to absorb the sauce faster so we can get nicer caramelisation on the noodles as they cook. If you add all the sauce at the same time, it takes almost double the time for the sauce to reduce.

  • Toss the noodles until the sauce is absorbed and you no longer see any traces of it in the pan.

  • Add remaining sauce then toss to disperse.

  • Toss for another 1 minute or until the leaves wilt.

    Instant Pot Teriyaki Noodles

    Combine all the ingredients listed under sauce in a bowl, mix until well combined and keep aside.

    Start the Instant Pot on saute mode and once hot, add the oil followed by onions, ginger, and garlic. Saute for 1 minute or until the raw garlic smell goes away.

    Add in the rest of the veggies along with salt and pepper. Mix so all is well combined and then add the noodles and sauce mix.

    • Bell pepper is my choice because it is a crunchy vegetable. In addition, it has a contrasting texture against the soft noodles and the meaty mushrooms and chicken.
    • Carrot is optional but adds color to the overall presentation.
    • Dried shiitake mushrooms are packed with flavor. I pick it over other mushrooms because of the taste and texture and the Japanese theme of the teriyaki noodles. First, you need to soak the dry mushrooms in water until soft, which takes about an hour. Then, squeeze out the water and cut them into halves.
    • Sesame seeds and scallion are common ingredients for Japanese food. The sesame seeds offer another layer of texture and mouthfeel, and chopped scallion is refreshing as it is added raw as the topping.
    • Other vegetables which in my mind but not included in todays teriyaki noodles are snap peas, broccoli florets, and edamame. You may want to use them in this recipe.

    If using Shirataki noodles, first, it’s essential to remove the fishy smell from the noodles. Don’t worry, though the fishy smell is plain water that has absorbed the odor of the konjac root, not fish. So, yes, they are vegan!

    After rinsing, boil the yam noodles for two to three minutes, making sure to drain away any water you cooked the noodles in. Also, this process gets rid of the fishy odor.

    Another noodle option, which I enjoy with this recipe is rice noodles. Also, plant-based and oil-free rice noodles come in various thicknesses and textures. Then, cook by following the package instructions.

    Instructions For Making One

    VEGAN TERIYAKI NOODLES RECIPE | EASY JAPANESE INSPIRED UDON DISH

    Heat your large pot over medium-high heat. Once the pot is hot add the oil, shredded cabbage, and carrots. Sauté about 5 minutes until the vegetables start to become tender.

    Now add the soy sauce, brown sugar, mustard, ginger, and garlic to the pot, mix in. Add the spaghetti to the pot, it is not necessary but you can break the spaghetti in half for ease! Add the 3 ½ cups of water.

    You will cook uncovered 15-18 minutes. Once the spaghetti noodles start to become maluable/bendable start stirring the pot every few minutes and more often at the end of cooking .

    Note that different brands of pasta require slightly different amount of water, so if you are getting towards the end of the cook time and your noodles arent cooked through but there isnt enough water left add an additional ½ cup of water to the pot and continue to cook until the noodles are tender and the sauce has thickened.

    Once the noodles are cooked through remove from the heat and toss the sesame seeds into the noodles. Serve immediately, garnish with more sesame seeds and if you like, green onions.

    Since soba is delicate and easy to break, I place the soba at the bottom of the bowl, pour the vegetables with gravy on it, and top with the chicken meat. You can mix it in the pan if you are using other noodles. You can also make a chicken teriyaki noodles stir-fry if you use udon or spaghetti, which will not break as easily as soba.

    Either way, sprinkle toasted sesame seeds generously on top and garnish it with chopped scallion.
