Recipes in the Red Boat fish sauce cookbook were gathered from family and friends. The ragu recipe belongs to Ann, who based it on a version that she learned from Cuong’s mom. Ann had a telecommunications career in the Bay Area but with dishes like this simple chicken ragout, she regularly provided her family with heritage flavors and the legacy cooking of Cuong’s mom.

“For me, ragu gà is sitting together around the dinner table, with my mom ladling chicken stew into our bowls. Id slurp pasta and end up getting splotches of the tomato based broth all over my clothes. Its one of those dishes that will always remind me of eating with my family when I was a kid, so it brings me a lot of comfort whenever I eat it,” Tiffany shared. “Ragu gà, along with so many of the dishes my mom made, was a way to show love and care.”

Vietnamese-language recipes for ragu gà abound, with many cooks using canned tomato to add umami. One recipe in a published cookbook calls for canned sardines in tomato. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more.

Dip chicken in 1/4 cup Sauce, then bread crumbs combined with Italian seasoning, garlic powder and paprika, coating well. Arrange chicken in 13 x 9-inch baking dish. Bake uncovered 20 minutes. Pour remaining 3/4 cup Sauce over chicken top with cheese, then tomato. Bake an additional 10 minutes or until chicken is thoroughly cooked.

This delicious chicken ragu sauce recipe uses onion, carrots, and garlic.

Slowly sautéing the onions and carrots together to start the recipe releases their sweetness. Many sauce recipes call for sugar to reduce the acidity in a tomato based sauce, but the natural sweet flavors in these vegetables will do that for you.

Plus, they are so healthy!

And after a while you’ll add in garlic for a subtly pungent bite of flavor that is pretty much required in all Italian inspired dishes.

Making Chicken Cacciatore With Ragu

As I said, I decided to add no seasonings to the RAGU Homestyle Sauce when making this dish. For this post, I made the meal on the stovetop. However, you could easily convert it to the crockpot

UPDATE in 2021: RAGU Homestyle Sauce is no longer available. RAGÚ Simply is the closest to what this one was.

Like many traditional Italian dishes, chicken cacciatore is comprised of simple ingredients.

Some call it a hunters stew served atop pasta.

While mushrooms can add a depth to the final product, my boys are not fans. So, I left that ingredient out.

I started by gathering what I would need:

Ingredients for Chicken Cacciatore ready to prep.

Chicken ON the bone is key. I used chicken breast halves, but you can use any pieces. I did remove most of the skin before cooking. Others like to leave the skin on for additional flavor.

Jars of RAGU Homestyle Thick and Hearty Traditional Sauce. I ended up using only one, but had the other ready in case it was needed.

Onion and green pepper, cut into strips, as well as diced garlic. These ingredients had my boys calling it the Italian fajitas. Not quite, but okay. I told them in the deep south this mixture is known as the holy trinity of cooking that you would never leave out.

Olive oil and butter for sauteeing the vegetables. I used both, but you could do one or the other.

Parmesan cheese for topping the finished dish.

How To Make The Chicken Ragu

Start by cutting up the chicken. We used drumsticks this time, so Grandma halved them to cook faster.

Peel and chop the vegetables. Keep in mind that they will be simmering for some time. Its best to keep them bigger rather otherwise theyll disintegrate in the sauce.

Chop the potatoes roughly into 3cm x 3cm pieces and the carrots 2cm thick. You can also halve the carrots length-wise to cook faster.

To add depth of flavour when cooking, finely chop the garlic and roughly cut up the onion.

Heat up your wok or pan, then pour in the oil. Throw the garlic and onion in and let the aromas take you to paradise.

After a minute, add the chicken and give it a quick stir.

This is the part where it gets exciting! All the beautiful colour and rich flavour you find in this dish comes from the pure tomato paste.

Pour the tomato paste in and stir it into the chicken. The idea is to have the puree lightly cover all the chicken pieces, which means that you might need to add more or use less.

Now that the chicken is being infused with the tanginess of tomato concentrate, you can throw in the potatoes and carrots.

I guarantee you they will retain their structure throughout the whole cooking process, but they will absorb all of the sauces essence. Its a two-way exchange because while theyre busy taking on new flavours, theyre also adding an natural sweetness to the ragu as well! Wonderful, right?

Cajun Shrimp And Sausage Alfredo

I played around with some different seafood and fettuccini recipes, and combined our favorites into this delicious Cajun shrimp and sausage Alfredo dish that my family cant seem to get enough of. It is filling and so quick and easy to make.

Provided by mammak

2 tablespoons Italian bread crumbs
¼ cup chopped fresh parsley

Steps:

  • Heat butter and olive oil in a large skillet pan over medium-high heat. Add sausage, frozen vegetables, and mushrooms. Saute until sausage is almost fully cooked, onions are tender, and any liquid from the frozen vegetables has almost fully evaporated, 10 to 12 minutes. Stir in Creole seasoning, garlic, and pepper cook for 2 minutes. Add shrimp, Alfredo sauce, and Parmesan cheese. Cook and stir until sauce has thickened and shrimp are bright pink on the outside and the meat is opaque, about 5 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, 8 to 10 minutes. Drain fettuccine, top with shrimp-sausage mixture, and sprinkle with bread crumbs and parsley.
