How to Make Spaghetti w/ Marinara Sauce (Season 1 Ep. 3)

Can you please recommend a recipe for homemade spaghetti sauce without oregano? I love to grow tomatoes and I love homemade spaghetti sauce. My problem is my wife is very picky about spaghetti sauce. She will only eat Ragu from the store.

My wife absolutely despises oregano and really doesnt like basil. So therein lies my dilemma. If you could please give me a recipe that omits oregano and is low on the basil Id appreciate it because I havent found one in the past 5 years.

Okay, although I am personally not a fan of commercial sauces like Ragu compared to homemade pasta sauces, I do love a challenge! So I was happy to take a stab at developing a homemade pasta sauce that would appeal to folks who prefer that commercial sauce flavor.

I combed over her recipes meticulously several times hoping I was in there but with no luck. Well one day when my husband joined me in looking through her recipes for her lemon pound cake, guess what we found???

Her homemade spaghetti sauce recipe!!! My heart dropped! How in the world did I miss that?? I smiled and said thank you mama! because I couldnt help but feel like shed snuck that in there for me.

I made it for dinner the same day and my boys said, can we have this spaghetti sauce every time we have spaghetti? lol It seemed like just yesterday that I was sitting at my grandmas table doing homework and eating this spaghetti sauce and now here I am serving it to my own kids.

Time flies. Passed-down recipes are such a blessing.

Nothing beats the flavor of homemade slow-cooked tomato sauce, but unless you have some of that sauce stashed in your freezer, a jar of store-bought pasta sauce is the quickest alternative.

Add a bowl of spaghetti and you have a weeknight meal maybe not the best meal of all time, but perfectly respectable.

But what if you could have the convenience of jarred sauce and some of the extra deliciousness you get from a homemade sauce? You can!

Which Herbs Add The Most Flavor To Tomato Sauce

The question of herbs is always a divisive one. Fresh or dried? Parsley? Oregano? Basil?

I tried a number of iterations using fresh and dried versions of each in various combinations. I ended up settling on a mix of dried oregano and fresh basil leaves and stems.

As it turns out, some herbs are better dried than others. Basil and parsley both taste terrible in their dried formslike papery, bland shadows of themselves. Oregano, on the other hand, fares just fine. The flavor is a little different from fresh oregano, but it’s intense and herbal in its own way, and for my money, is an indispensable element of a good Italian-American red sauce.

Why the discrepancy between the herbs? The difference mainly comes down to how the particular herbs grow. Basil and parsley both have thin, delicate leaves and grow in environments where there is plentiful water and little chance of the leaves completely drying out. Heartier herbs from drier climateslike oregano, marjoram, or rosemaryon the other hand, are far more robust. As a consequence, the aromatic compounds within those herbs also tend to be less volatile so that the plants can retain them even as they lose moisture to the atmosphere.

The end result, as far as we cooks are concerned, is that those heartier herbs from drier places can hold onto their flavor far better when dried than tender leafy herbs.

How To Freeze Spaghetti Sauce

Let the sauce cool completely. Pour into a freezer safe container and seal. Sauce will keep for 3 to 4 months in the freezer.

To thaw, let the sauce thaw in a sink of cool water. Once thawed, pour sauce into a pot on the stovetop to reheat or in a large microwave safe bowl for the microwave. You can also reheat it from frozen by adding it to your slow cooker and letting it cook for 5 to 6 hours on low.

How To Make Instant Pot Spaghetti:

  • Brown the meat using the Instant pot sauté function. Drain grease and add onions and spices.
  • Add pasta, breaking in half and placing on top.
  • Make sauce by mixing crushed tomatoes and tomato paste together. Pour over noodles and add water.
  • Cook on Manual for 5 minutes. Allow 5 minute natural release, and then turn valve to quick release.
  • Toss and serve with fresh parmesan, crushed red pepper flakes , and fresh chopped parsley.

    How To Make Air Fryer Pizza:

    Roll Out Crust: Preheat air fryer to 400 degrees. Roll crust out really thin . Prick all over with a fork, . Spray bottom of air fryer basket. Lift up crust and carefully place in the basket.

    Pre-Bake Crusts: Cook in air fryer for 1 minute, then flip to the other side and cook an additional minute. Repeat with remaining crusts.

    Layer Toppings: Add toppings to pre-baked crusts. I suggest adding the cheese last, because the pepperoni and lighter toppings may blow off while cooking.

    Cook: Lower air fryer temp to 370 and cook pizzas for 1-3 minutes or until warmed through and cheese has melted. .
