How To Season Shrimp For Alfredo

When making shrimp alfredo pasta, the shrimp is the star of the dish in my opinion. Some people like to use small shrimp that is almost hidden in their pasta, but I decided to use jumbo shrimp, in its shell for the ultimate flavor. Cooking shrimp with its shell still on helps trap the flavors and keeps the shrimp from drying out.

Of course, you can choose to use tail off and peeled shrimp, if desired.

The sauce that is created to make this garlic shrimp alfredo is what is going to season the shrimp for alfredo. Were cooking the shrimp in a butter and olive oil base, adding in freshly minced garlic, fresh chopped parsley, and simple salt and pepper. Simplicity is overlooked, but for this shrimp pasta alfredo recipe, it is key!

If desired, you can add in homemade Italian seasoning, or switch things up with Cajun seasoning for a kick!

What Pasta To Use In Shrimp Alfredo

The best pasta to use with Alfredo sauce is a thicker, long pasta like fettuccine, linguine, tagliatelle, and even spaghetti. Whichever pasta you choose, will taste great with sauce and shrimp. Just make sure to salt the water that pasta is cooked in and dont overcook it. Pasta will not be a pleasant experience if cooked to mushy texture.

Alfredo Sauce Making Tips

  • The cheese is important! You will want to buy only fresh Parmesan cheese when you make your homemade sauce. The grated stuff in the can doesnt melt and can end up tasting grainy, and the pre-packaged shredded Parmesan wont melt as well either because of the coating they add to it to keep it from sticking together in the bag. Use freshly grated Parmesan for the very best results.
  • How to thicken a thin Alfredo sauce: Sauce not thick enough for you? Add a couple ounces of softened cream cheese to your sauce and it will give it a creamier texture and will help it thicken up a bit. You could also add a rou to the mixture. To do this, melt a couple of teaspoons of butter in a small saucepan, and add a couple teaspoons of flour. Cook until golden, then add to your simmering sauce and stir until its completely incorporated.
  • Let it simmer. Be sure to turn the heat down when you add the Parmesan cheese. You dont want to boil this sauce at all, just a simmer will do fine. Boiling can result in a broken sauce, and nobody likes that.

    How To Make Alfredo Sauce

I use my alfredo sauce recipe for this dish which contains five simple ingredients cream, cheese, butter, garlic, and nutmeg. I start with sauteing minced garlic in butter as the savory and spicy allium adds depth to the dairy-based sauce. Heavy whipping cream creates a rich, velvety texture. Use a variety containing a minimum of 36% fat, which adds body and does not curdle as quickly as lower fat products.

Stir continuously while scraping the bottom and sides of the pan to keep the sauce smooth. The cream will reduce by concentrating the fat into a thicker consistency. The sauce should be able to coat the back of a spoon when done.

When I worked at an Italian restaurant in college, the chef gave me a handy tip. A little bit of grated nutmeg added to cream sauces or fillings adds a hint of sweet baked aromas and flavors. Youll be delightfully surprised how much it transforms the smell and taste of the sauce. Stir it in at the very end of cooking so it retains as much fragrance as possible.

Why Did My Alfredo Sauce Break

Cheese sauces like this Alfredo sauce usually break because it was heated too much or too quickly. If you keep the sauce warm for an extended period of time, the sauce can break as well.

Changes in temperature, for example chilling the sauce in the refrigerator and then heating it up can result in a oily mess when the emulsion breaks. Microwaving Alfredo sauce is not a good idea. If you need to reheat the sauce, do it on the stove top, slowly over low heat.

Yes, this sauce can be frozen for up to 6 months if properly stored in an airtight container or freezer bag. To reheat, thaw in the fridge overnight, then place the sauce in a saucepan on the stove over medium-low heat. Stir constantly until heated through to avoid breaking the sauce . I recommend cooking the pasta from scratch though, it can get mushy if frozen in the sauce.

Freeze cook shrimp separately in a sealed freezer bag for up to 4 months. I definitely recommend cooking shrimp fresh it doesnt take much longer than reheating from frozen, and the taste is so much better.
