My favorite place in the South to eat ribs prepares their ribs with spice rub, only. In the past, Ive usually served mine with a barbecue sauce, but for this post, I wanted to try cooking my ribs simply: with a spice rub only.

I have a spice rub mixture that I mostly use on Boston Butt roasts . I call my Boston Butt spice rub, Slap Yo Mama Butt Rub, and it happens to be the most popular recipe on my blog. Anyway, when I heard that Smithfield Fresh Pork wanted me to share my tips on how I do ribs, I thought Id take my existing recipe for Butt Rub, and use it as a Rib Rub. “Slap Ya Mama” Hot Sauce Review

Being a hardened habbie-head, its natural to go for Cajun foods, or atleast the seasoning used in that cuisine. And I really dig it when a company puts out a product that not only is simple in its ingredients, but makes cooking that said food simple. Case in point: Slap Ya Mama white pepper blend seasoning. Is it a rub, is it a mix, is it a seasoning? It really doesnt matter because you can use it for anything.

Made in the heart of Cajun Louisiana, this seasoning packs a serious one-two punch: First you get hit by the red pepper , then a back-throat hit by the white pepper. When I first got it I was using it like I would use regular salt, shaking it on pasta, nachos, hot dogs, and even in salad dressings. So it can cover those bases, but I wanted to try it as a rub, so my wife went out and bought some pork steaks. I liberally rubbed this all over the pork, and grilled it.

The picture cant begin to do the justice this seasoning deserves for bringing such flavor from the pork. It was absolutely divine, and what was really cool was how the individual flavors came out. First you taste the salt, then the cayenne, then the white pepper, without a heavy after-taste. Very flavorful, very crisp. Once you get it youre going to find yourself using it on your dinner table.

  • 8-10 Scotch Bonnets or Habaneros, stemmed and seeded
  • 1 regular sized can tomato puree
  • 1/2 medium sized onion, chopped
  • 1 cup vinegar
  • 2 tsp. pure ground NM chile or ancho, mulatto, pasilla
  • 1/2 tsp. garlic powder
  • dash each of ginger, thyme, allspice, cumin
  • 1/2 tsp, salt
  • How to make it

    • Place first 3 ingredients in sauce pan and add vinegar.
    • Bring to a low boil and cover.
    • Add spice mixture and mustard seed.
    • Keep covered and simmer until peppers get soft.
    • Uncover and reduce stock slightly, then add tequila to bring back to original volume.
    • Simmer another 3-5 minutes or so to cook off alcohol. Remove from heat and let cool slightly.
    • Add to blender and puree until all one consistency.
    • Place back in sauce pan and bring back up to simmer and add
    • honey and stir well.
    • Then remove from heat and place in bottles.

    Slap Ya Mama Cajun Pepper Sauce Review

    1 or two racks of ribs cut apartEnough of a good quality barbecue sauce to cover

    Preheat oven to 350º F. Place ribs in baking pan and cover with tin foil. Cook for about 30 minutes and drain. Place back in oven and cook for another 30 minutes and drain again. Pour barbecue sauce over ribs. Make a tent over the ribs like this /\ and put back in oven about 20 minutes. Remove from oven and enjoy.

    Start Slap Yo Mama Ribs In The Oven And Finish Them On The Grill

    Wrap the spice-rubbed ribs in foil, and crimp the edges, to seal the packet. Cook them low and slow, at 300º on a rack. Place the rack on a cookie sheet, for two hours. Low heat + sealed in steam from the cooking ribs, causes the meats proteins to relax. Low, slow and steamy makes them tender and juicy.

    And since I cant resist a bit of smoky flavor, when we took our ribs out of the oven and unwrapped them, we finished them for the last 45 minutes on the grill, over indirect heat, with a stick of hickory wood placed on top of our Kingsford charcoal coals, to get some smoky flavor.

    The brown sugar in my rub sugar in any spice rub or barbecue sauce will brown and caramelize on the grill. Yum!!!! However, sugar burns quickly, so thats why we used an indirect heat while we grilled the ribs.

    The Peppers In Slap Ya Mama

    The peppers in Slap Ya Mama are listed on the label as aged pepper mash but there is no mention of the specific pepper type. Since this is a Louisiana style hot sauce, it is safe to assume that the pepper is either cayenne pepper or tabasco. Both are commonly used in this type of hot sauce. For example, Tabasco sauce uses tabasco peppers as you might expect Crystal Hot Sauce uses cayenne.     It is worth noting that unlike many other Louisiana hot sauces, Slap Ya Mama has pepper as the first thing on the ingredients list.

    The peppers in Slap Ya Mama Cajun Pepper Sauce have been aged, which means that they have been fermented. Fermentation gives the peppers a deeper flavor while also increasing their acidity.
