OK, my friends. It is time to reveal one of the hottest hot sauces I have ever made in my own kitchen. Yes, it is homemade and it is crazy hot. Crazy hot in a good sort of way, the way only a serious chilihead can enjoy. Or any true heat lover.

I grow a big variety of chili peppers every year. I love a range of heat and flavors, from flavorful sweet peppers all the way up to superhots with their incredible heat.

I use them in so many ways, and one of my favorites it making homemade hot sauce. I do enjoy milder sauces that focus on flavor over heat, but every now and then, I want some seriously heat in my hot sauce. Thats when this hot sauce comes in a hot sauce made from superhot chili peppers.

Were talking Carolina Reapers, Scorpions, 7-Pot Chili Pepper varieties. A big variety.

Lets talk about how to make superhot hot sauce, shall we?

Blair’s 16 Million Reserve

What is the world’s hottest hot sauce? Blair’s 16 Million Reserve ought to be hot enough to send you hot heads to the hospital or an early grave, that is if you even dare to try it. You see, Blair’s 16 Million Reserve isn’t actually a sauce, it’s a 1ml pharmaceutical grade vial filled with pure Capsaicin crystals. Pure Capsaicin is rated at around 16 million Scoville Units, the highest heat level possible.

A Scoville Unit is named after pharmacist Wilbur Scoville who in 1912 invented a way to measure the heat of peppers by the levels of Capsaicin present . Cmon Dont Be Like That

Fine. The majority of the heat in peppers comes from two parts of the pepper: the seeds and the ribs.

I know you know what seeds look like, but the ribs of a pepper are the white part that the seeds are attached to. If you cut those parts out of the pepper, youll reduce the heat immensely.

Another way to reduce the heat is to use bell peppers in place of some of the chili peppers.

With superhots, you can expect a wide range of heat, though the majority of them start at over 1 Million SHU. Some will approach or surpass 2 Million SHU, which is somewhat insane, but again, these are ranges so you can typically expect your pepper heat to fall in the middle somewhere.

The heat depends on many factors, such as soil and growing conditions of the particular peppers. Well, my peppers must have been grown under some ideal conditions, because they were HOT. Yeah! Nice and hot! Top of the range. I didnt not want them to go to waste, so I turned the majority of them into a hot sauce that I still have today.

This is a Louisiana style hot sauce with a few extras added in for flavor. A Louisiana style hot sauce consists of peppers and vinegar, and theyre extremely popular.

With good reason. This superhot version brings in the variety of superhots and adds in roasted garlic and basil. Thats it, with a bit of salt. You can expect variable results depending on the chili peppers you choose to work with.

To push for the top end of the scale, use only Reapers or 7-Pot Brain Strains if you can get them. Pure Scorpions would be crazy killer hot. Or vary it up like I did. You can also make this with roasted jalapenos, or pretty much any pepper you prefer.

Choose your peppers with love. That is always a good place to start.

How To Measure Hot Sauce Heat: Meet The Scoville Heat Scale

Look on the back of most hot sauces these days and youll likely see a ridiculously high number of Scoville units .

100,000? 35,000? What does it all mean?

The Scoville scale, named for pharmacist Wilbur Scoville, is a measurement of the spiciness of chili peppers based on the concentration of capsaicinoids. Capsaicinoids, the most commonly known is capsaicin, are compounds that activate our taste buds to alert our body that what were consuming is pungent, spicy, or hot. The Scoville scale then assigns a numerical value to the level of pungency of a pepper.

For reference, bell peppers are extremely low on the scale, maxing out at around 100. Jalapeños can range anywhere from 3,500 to about 8,000. Carolina Reaper commonly known as the spiciest pepper cultivar maxed out at 2,200,000. But the Scoville scale doesnt stop there. Below youll find that the hottest hot sauces can clock in much higher than that.

But, for the record, the Scoville scale only applies to the pepper in its dry form. As a sauce, the peppers pungency is diluted so the impact can vary. Still, if a hot sauce advertises a ridiculously high Scoville number, theres a good chance that hot sauce is hot.
