First off, you can use any tomato, but truly, paste tomatoes are the best for making sauces.

Why, you ask?

Paste tomatoes have less water inside and are fleshier. This results in a thicker sauce without so much reduction time. And I’m all about saving time in the kitchen!

Some good paste tomato options are Roma tomatoes and, of course, the mother of all paste tomatoes is the heirloom San Marzano Lungo No. 2. I grow them every.single.year.

This also happens to be the variety that frequently ripens first, so it’s a double win in my book. We liked the flavor diced and tossed onto pizza, but it really shines in sauces and pastes.

Water Bath Canning Instructions

1. Place jars on a rack inside your water bath canner.

2. Make sure at least 1 inch of water is covering the tops of the jars.

Bottling tomatoes is a reasonably new thing to me. I’ve always bottled fruit, made jams and chutneys but it was only since I started making tomato salsa and canning diced tomatoes that I’ve really discovered the whole new world that comes with bottling tomatoes.

Last year I used my garden tomatoes to make pasta sauces that I froze. This was an awesome way to do it but I am terrible at remembering to take things out of the freezer before I need them. This is one of the things that I love the most about canning or bottling. The jar is sitting on your shelf and can be opened and used immediately!

Plus, I get so much satisfaction from seeing jars of homemade preserves lined up on the shelf.

Serving And Storing Tomato Sauce

Use for pasta, meatballs, lasagna, and more. One of my favorite ways to serve tomato sauce is over zucchini noodles along with sautéed onions and mushrooms and vegan parmesan cheese . Its fresh, light, and delicious!

Store unopened tomato sauce in a dark, cool area for up to 18 months. Once a jar is opened, it will keep in your refrigerator for 7 days.

Saute in 1/4 cup butter or olive oil until tender: onions, garlic, celery or green pepper, and mushrooms. Combine sauteed vegetables and tomatoes. Add salt, black pepper, oregano, parsley and sugar.

Why Add The Lemon Juice

Safe canning requires that the food has a guaranteed level of acidity, as the acid is what preserves the food and wards off bacteria . Some of today’s tomato varieties have low levels of acid, requiring an additional ingredient. In this recipe, the addition of bottled lemon juice lowers the pH level, creating the proper acidic environment for canning. Acidic ingredients, or foods with an added acid, are safe to can using a water bath, while all other foods need to be pressure canned.

Use 1 tablespoon of bottled lemon juice per pint jar, or 2 tablespoons per quart jar.

It will foam up a little but not change the taste, but it will cut the acidity. If there is still a touch of acidity, add a teaspoon of unsalted butter to help tie everything together.

How Do You Thicken Homemade Spaghetti Sauce For Canning

Low, slow cooking is my default option to thicken the sauce and concentrate the flavor of the tomatoes. Other options include:

  • Weigh and freeze the tomatoes, and then allow them to thaw in a colander to remove excess liquid before proceeding with the recipe.
  • Can the sauce when it is somewhat thin, and then add tomato powder or dehydrated tomato puree to thicken when you heat the sauce for serving. I use this option when I make sauce out of cherry tomatoes or other very juicy tomatoes instead of paste tomatoes.

Some people grind up the skins and seeds to thicken the sauce. For our tastes, this made the sauce so bitter that we couldn’t eat it.

I talk about canning tomato sauce a lot here at Grow a Good Life, especially this year as I faced the challenge of preserving a bumper crop. It seems I constantly had baskets of ripe tomatoes to work through for the last two months. Now that the final tomato harvest is simmering on the stove, I thought it was time to share the tomato sauce recipe and method I use to preserve the majority of my homegrown tomato harvest.

Growing up in an Italian household, the only tomato sauce we were aware of was the homemade kind made from canned or fresh tomatoes in season. There were no jars of purchased tomato sauce in our pantry. As an adult, I continued the tradition cooking up large batches of homemade tomato sauce and freezing it for future meals.

When I began growing a garden of my own, one of the first things I learned to can was tomato sauce from homegrown tomatoes. Eventually, I made it my yearly goal to grow enough tomatoes to provide a sufficient amount of canned tomato sauce to last us until the following season.

No store bought tomato sauce compares with the flavor of homemade. This is the seasoned tomato sauce recipe and method I use to home can the tomato harvest.

Draining Chopping And Measuring The Tomatoes

After the skins come off , place the tomatoes in a colander set over a bowl or the sink and let them drain for 30 minutes to an hour until most of the watery liquid has drained off.

You can speed up this process by using your hands to mash and squeeze the tomatoes or a spoon works too.

I throw the tomatoes in the food processor and give them a whirl until they are pretty well blended .

Measure the tomatoes afterthey have been drained and chopped.

Canning Pizza Or Spaghetti Sauce From Fresh Tomatoes

This can be used for either pizza sauce or spaghetti sauce. It can be canned or frozen. Store canned tomato sauce in a cool, dark area.
