This is a total cheat meal but it was so good, I thought Id post it anyway. As is so often the case last night I found myself with an odd mix of ingredients & the challenge of making a combination of them into something edible. I had shrimp, pasta, arugula & two half jars of pasta sauce. I also had something unexpected in my refrigerator do you see it?

There was a grasshopper in my fridge! Alive and he had been there many hours because I hadnt opened the fridge all day. Grasshoppers have been showing up in my kitchen sorta frequently lately which is odd because 1) they never have before & 2) because I just shot a movie called Grasshopper! and since then several of us involved with it have been having strange grasshopper encounters. My boyfriend found one in his air-tight-to-preserve-the-air-conditioning ELEVENTH floor condo. How would a grasshopper get in there? Or in my fridge? One crashed a party I had in July. Crazy. Anyway we got him out & set him free. Now back to the pasta:

INGREDIENTS

Parmesan or fresh mozzarella if putting cheese with fish doesnt make you go mental.

DIRECTIONS

Heat the olive oil & saute the garlic cloves whole for about a minute. Add the shrimp with a tablespoon of crushed red pepper and S& P to taste. Saute until the shrimp are pink. Set aside.

Honestly, I cant imagine anything that would not taste better with a bit of vodka sauce. Weve served it over steaks and lamb, with gnocchi, and even with roasted asparagus.

Quite a while ago I did a post on Penne with Vodka Sauce. Its a tasty but time consuming recipe involving oven baking the sauce for quite a while. This vodka sauce is similar but with no oven time. Just reduce the sauce for a while on the stovetop. Much easier.

Vodka seems like an odd partner to tomato sauce, but the alcohol in the vodka becomes an emulsifier. It holds the acids and the oils together and the result is a creamy smooth taste.

The shrimp in this recipe pairs well with the richness of the sauce. And the shrimp is so easy to cook right in the sauce. You should use pretty big shrimp20 to 30 shrimp per pound size. The sweetness of the shrimp combined with the smooth tasting sauce is what makes this a super dinner.

I can count on my two hands the number of times I have bought jarred spaghetti sauce. To me it is just easier to use crushed tomatoes and spices and make my own. Plus having a child with many food sensitivities makes finding ready to use products difficult.

But, there was a sale last week on Bertolli Vodka Sauce at the grocery store. I LOVE vodka sauce and after reading the ingredients couldnt resist trying it. There was a little ravioli shop near where we used to live that on special occasions I would stop and pick up a quart to use for dinner. But, other than that I have rarely bought spaghetti sauce.

So I cooked the pasta according to package directions. I heated the jar of vodka sauce in a sauce pan with thawed, pre-cooked, deveined shrimp.

It was great. I served the sauce over the pasta with a bit of freshly grated Parmesan cheese. My children said it was almost as good as the little gourmet shop. I may have to change my mind about buying jarred sauce a bit more often.

Bertolli Vodka Sauce Recipe: Chicken & Peppers Penne Pasta

This Bertolli vodka sauce chicken & peppers penne pasta is a quick and delicious easy meal. A meal the whole family will like and comes together fast.

Im not usually one to eat pasta sauce from a jar, but recently my sister shared one of her easy jar recipes and swore it was delicious.

One lazy Sunday afternoon, I decided to try it. She was so right. It was an instant hit with me. And it was from a jar and didnt suck.
